- Preheat oven to 450°. In a large bowl, whisk flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Add milk; stir just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Pat dough to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter., Place 1 in. apart on an ungreased baking sheet. Bake until golden brown, 10-15 minutes. Serve warm.

OLD-FASHIONED HERMIT COOKIES
These old-fashioned hermit cookies are made with brown sugar and your choice of chopped dates or raisins along with chopped pecans or walnuts.

Steps:
- Gather the ingredients.
- Preheat the oven to 375 F. Lightly grease a cookie sheet or line it with parchment paper. Set aside.
- In a medium bowl, mix the flour, baking soda, salt, nutmeg, cinnamon, and cloves, if using. Set aside.
- With the help of an electric mixer, or in the large bowl of a standing mixer, beat the vegetable shortening, butter, and brown sugar until light and fluffy.
- Once the fats are creamed with the sugar, add the egg and cold coffee. Beat on low speed until well blended.
- Little by little, add the flour mixture into the butter mixture and stir until well combined. Use low speed to fold all of the ingredients into a sticky dough. Stop the mixer once you have a nice creamy consistency.
- Fold in the dates or raisins and the walnuts.
- Drop the cookie dough by rounded teaspoon or small cookie scoop onto the prepared cookie sheet, leaving about 2 inches between cookies. They will spread out when cooking.
- Bake in the preheated oven for 8 to 10 minutes, or until light brown.
- Remove the cookies immediately and place them on top of a cooling rack. As they cool off, the texture will get chewier.

Steps:
- Let Herman reach room temperature, or remove from fridge about 1 hour before using. Stir in oil.
- Combine dry ingredients (flour, baking powder, soda, salt). Stir into Herman/oil mixture.
- Dump dough onto a floured board and knead until dough is pliable.
- Roll to 1 1/2 inch thickness; cut with biscuit cutter.
- Place biscuits on lightly greased baking sheet, cover lightly and let rise in warm place 1 hour.
- Bake at 350 degrees F until golden, 20 to 30 minutes.
- Note: instead of rolling, the dough may be pinched off in small pieces and shaped into rounds.

Steps:
- Bring Herman Starter to room temperature.
- Stir together flour, baking soda, baking powder and salt.
- Stir flour mixture and oil into Herman Starter. It will form a soft dough.
- On a lightly floured surface knead dough until smooth. Pinch off small pieces of dough and shape into balls OR roll dough out and cut with a biscuit cutter. Place biscuits onto a greased baking sheet, cover and let rise in a warm place for 1 hour.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in biscuits in the preheat oven for about 30 minutes or until golden. Serve warm.
