HERB BUTTER

- In a large bowl mix the butter and the other ingredients with a rubber spatula until evenly combined.
- Lay about a foot long section of plastic wrap on a work surface. Put the herb butter on the bottom center of the plastic wrap, and form into a mound about 8 inches long. Fold the bottom edge of the plastic wrap over the butter and roll the enclosed butter forward until completely wrapped, to form a tube of butter about 1 1/2 inches in diameter. Twist the ends together like a party favor. Refrigerate until firm or freeze for up to 1 month. Sliced as needed for corn on the cob, grilled steaks, or Chicken Kiev.

- In a small bowl, combine turkey, red onion, green onions, egg, hamburger seasoning, Worcestershire sauce and cumin, mixing lightly but thoroughly. Shape into twelve 1/2-in.-thick patties. Grill burgers, covered, over medium heat or broil 4 in. from heat 3-4 minutes on each side or until a thermometer reads 165°., Top with cheese; grill, covered, 30-60 seconds longer or until cheese is melted. Mix mayonnaise and mustard; spread on roll tops. Layer roll bottoms with burger, lettuce and onion. Replace tops.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 9-inch square baking pan with aluminum foil and spray with cooking spray.
- Slice attached rolls in half widthwise with a serrated knife, keeping rolls connected, into a bottom and top 'slab.' Place bottom slab in the prepared pan.
- Layer about half the ham evenly over the bottom slab of rolls. Layer Swiss cheese evenly on top, and arrange remaining ham over the cheese. Cover with the top slab.
- Place butter in a microwave-safe bowl. Heat in the microwave until melted, about 1 minute. Add mustard, poppy seeds, Worcestershire sauce, onion, salt, and pepper. Whisk to combine.
- Pour butter mixture evenly and slowly over the rolls. Spread over the tops using a spatula; some of the mixture will pool at the base of the rolls. Cover with aluminum foil and let stand at room temperature for 5 to 10 minutes.
- Bake in the preheated oven until cheese has melted, about 20 minutes. Uncover and continue baking until browned as desired, 3 to 5 minutes more. Slice into individual sliders.

- In a large bowl, combine the first 7 ingredients. Place salmon in a food processor; pulse until coarsely chopped, and add to bread crumb mixture. Mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., On a lightly greased grill rack, grill burgers, covered, over medium heat or broil 4 in. from heat until a thermometer reads 160°, 3-4 minutes on each side. Steps:
- Preheat the broiler.
- In a bowl, combine beef, dill, parsley, shallot, salt and pepper; form into 12 patties.
- In a large skillet, heat 2 tbsp evoo over med-hi heat; add 6 patties and cook for 2 minutes, then flip and cook for 1-2 minutes more. Repeat to complete all 12 patties.
- Spread some mustard on the roll bottoms and arrange on a broiler pan; place a patty on each and top with the cheese. Melt the cheese under the broiler, about 30 seconds. Cover with tomato slices and roll tops.
