HERBED SALMON FILLETS WITH SUN-DRIED TOMATO TOPPING



Herbed Salmon Fillets With Sun-Dried Tomato Topping image

Attractive and full of flavor, not to mention easy to prepare (oops, just did). You may certainly use PANKO breadcrumbs, but be sure to crumble them finely first with your fingers. This pairs nicely with parmesaned orzo and grilled zucchini.

2 salmon fillets
1/2 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1 tablespoon fresh basil, minced (or 1 tsp dried)
1 tablespoon fresh thyme, minced (or 1 tsp dried)
2 teaspoons fresh rosemary, minced (or 1/2 tsp dried)
1/2 cup dry breadcrumbs
4 teaspoons extra virgin olive oil
2 tablespoons shallots, minced
1 tablespoon fresh lemon juice
1/2 cup dry white wine
6 sun-dried tomatoes, finely minced (NOT oil-packed)
extra salt and pepper

Steps:

  • Pre-heat oven to 400°F and adjust oven rack to center of oven.
  • Lightly grease a small oven-proof baking dish (large enough to fit the fillets in one layer).
  • In a small flat bowl (large enough to accomodate one salmon fillet, or use a piece of wax paper instead), combine the sea salt, pepper, basil, thyme, rosemary and bread crumbs.
  • Press the TOP of each fillet (not the skin side) into the crumb mix, then place each in the baking dish (skin side down).
  • Sprinkle the remaining crumb mix over the salmon, dividing equally, and pressing lightly into the samon.
  • Drizzle with 2 tsp olive oil.
  • Bake in oven just until fish flakes when tested in the center, about 8-12 minutes, depending on the thickness of your fish.
  • As the fish is baking, heat the remaining 2 tsp oil in a 10-inch non-stick skillet over medium heat; add shallots and saute, stirring constantly, until lightly golden, about 1 minute.
  • Add lemon juice, wine, and sun-dried tomatoes, and cook until "sauce" is reduced to about 1/2 cup, about 2 minutes-watch this carefully, it goes quickly!
  • Spoon tomatoes and "sauce" over the salmon and serve immediately.

If you don't care about salmon, you can use sole, flounder or haddock instead. I'll double the sauce the next time I make it as it is delicious over steamed rice.

1/2 cup sour cream
2 tablespoons butter, melted
2 teaspoons minced onions
1 1/2 teaspoons dried dill or 2 tablespoons chopped fresh dill
1/4 teaspoon dried thyme
1/4 teaspoon salt
ground black pepper, to taste
1 1/2 lbs salmon fillets

Steps:

  • In a small bowl, combine sour cream, butter, onion, dillweed, thyme, salt and pepper to taste and mix well.
  • Season fillets lightly with salt and pepper and place in single layer in lightly buttered shallow baking dish; spread sour cream mixture over fillets.
  • Bake in 425 F oven for about 12 minutes or until sauce is bubbly and fish is opaque.

1 1/2 lbs salmon fillets, cut into 6 fillets (4 oz each)
1/2 teaspoon kosher salt
2 teaspoons sugar
1/4 cup lemon juice
1/8 cup lime juice
1 sprig fresh rosemary
1 1/2 teaspoons fresh thyme leaves
1/2 teaspoon dill weed
3 garlic cloves, minced
1 -2 tablespoon butter, melted (optional)

Steps:

  • Lightly spray a 13" x 9" baking dish with nonstick cooking spray. Arrange salmon fillets in a single layer skin side down.
  • Evenly sprinkle salmon fillets with salt, then sugar.
  • Combine lemon and lime juices together and pour evenly over salmon.
  • Evenly sprinkle with herbs and minced garlic.
  • Cover and chill about 4 hours.
  • Before baking, drizzle with the melted butter; if desired.
  • Bake at 425 for about 20 minutes or until opaque in middles.

4 garlic cloves, minced
1/2 cup chopped fresh parsley
6 tablespoons grated Parmesan cheese

6 tablespoons butter, melted, divided
1 salmon fillet (3 to 4 pounds)

Steps:

  • In a shallow bowl, combine bread crumbs, garlic, parsley, Parmesan cheese, thyme, lemon zest and salt; mix well. Add 4 tablespoons butter and toss lightly to coat; set aside. , Pat salmon dry. This is so delicious that my young children gobble it up! Great fall recipe with the leftover cider from the cider mill visit... I serve this salmon with roasted potatoes or boiled redskins, green beans almandine and a crisp green salad with Paul Newman's Lowfat Sesame Ginger dressing - Yum!

1 cup apple cider
1/4 cup soy sauce
1/4 cup butter
2 garlic cloves, minced
1 bay leaf
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon pepper
1 small red onions or 1 small shallot, sliced thinly
1 lb salmon fillet

Steps:

  • Mix marinade ingredients in 9 x13 glass pyrex pan and place salmon filet skin side up to coat meat. Marinate in refrigerator for 30 minutes.
  • Flip filet so that skin is on bottom and bake uncovered in marinade for 20 minutes at 375 or until cooked thoroughly.
  • Hint: You can throw a few small redskins, sliced sweet potato, green beans, asparagus, or other veggies in pan along with fish to soak up some of the delish marinade and cook together. Baking time may increase 5-10 minutes.
  • Fish may be grilled, but increase marinade time to 1 hour since marinade will be discarded.
