Herbed Chevre, Craisin and Walnut Pinwheels image

These festive pinwheel appetizers are perfect for the holidays, or anytime! Very popular with my family and guests---everyone really loves the great flavor combo of tangy chèvre cheese (or feta), sweet-tart cranberries, green onions, walnuts (or pistachios), and herbs. Easily made in advance, and I have frozen the logs (before slicing) with great results. Note: If you can't find chevre cheese, crumbled feta is equally good. A slight modification of recipe 146700-- thanks Wildflour!

Number Of Ingredients 6

2 (8 ounce) packages cream cheese, very well softened
1 (5 1/2 ounce) package chevre herbed goat cheese (equally good with crumbled feta or plain chevre, with a pinch of Herbes de Provence or to taste)
1/2 cup finely chopped green onion
6 ounces dried sweetened cranberries (Craisins)
3/4 cup chopped walnuts or 3/4 cup unsalted pistachios
4 large flour tortillas

Steps:

  • In medium bowl, combine softened cream cheese, chèvre cheese (or feta), a pinch of Herbes de Provence (if using), green onions, dried cranberries and chopped walnuts (or unsalted pistachios).
  • Evenly spread 1/4 of the mixture onto each tortilla, all the way to the edges.
  • Roll up tightly, being careful not to tear.
  • Wrap each in plastic wrap; refrigerate for several hours or overnight.
  • Slice to serve. Makes about 32 appetizers.

I had these at a girlfriends bridal shower and I just had to get the recipe from her sister, these are the tastiest little things. I could have eaten half the tray myself! Great little party snack or appetizer!

Number Of Ingredients 9

1 cup finely chopped cooked chicken
1/2 cup chopped lettuce
1/2 cup shredded reduced-fat sharp cheddar cheese
1/3 cup chopped green onion
1/3 cup minced red bell pepper
4 ounces light cream cheese, softened
2 tablespoons low-fat sour cream
1 tablespoon hot red pepper jelly
3 (9 inch) flour tortillas

Steps:

  • In medium bowl, combine chicken, lettuce, cheddar cheese, green onions and red pepper.
  • Set aside.
  • In small bowl, beat together cream cheese, sour cream, and red pepper jelly on low speed of electric mixer.
  • Spread 1/3 cream cheese mixture over one side of tortilla.
  • Sprinkle with 1/3 chicken mixture, leaving 1/2 inch border at top just covered with cream cheese mixture (so you can seal it closed.) Roll up tightly, jelly roll style.
  • Wrap tortilla roll in plastic wrap.
  • Repeat with remaining tortillas and filling.
  • Refrigerate for 2 hours.
  • Trim off the ends and cut each roll into 8 slices, serve cold.

These are wonderful!!! I made these for Thanksgiving and I added walnuts for a bit of crunch needed. Hope you try them!!

Number Of Ingredients 7

1 (12 ounce) carton whipped cream cheese, softened
8 ounces feta cheese, crumbled
1/4 cup thinly sliced green onion, just the green part
1 (6 ounce) package dried cranberries, craisins
1/3 cup chopped walnuts, chopped small
3 (10 inch) regular tortillas or 3 (10 inch) whole wheat tortillas
sliced green onion (to garnish)

Steps:

  • In small bowl, combine cream cheese, feta, walnuts and green onion.
  • Stir in craisins.
  • Evenly spread 1/3 of mixture onto each tortilla.
  • Roll up tightly and evenly, do not tear, though.
  • Make sure some of the spread is right to the end edge to seal.
  • Wrap each tightly in plastic wrap, refrigerate.
  • To serve, slice ends off, then slice into about 24 slices. More if sliced thinner. (About 8 slices per tortilla is what I got.).
  • Place on plate and sprinkle with more sliced green onion for garnish if desired.

2 boneless skinless chicken breasts, halved
12 -14 leaves fresh spinach
1 (6 1/2 ounce) package alouette spreadable cheese with garlic and herbs
5 ounces roasted red peppers, sliced (or 5 ounces pimiento slices)
3/4 cup finely chopped walnuts

Steps:

  • Preheat oven to 400°F.
  • Pound chicken to about 1/4-inch thickness with flat side of meat mallet or chef's knife.
  • Cover each chicken piece with spinach leaves.
  • Spread each with Alouette.
  • Top with pepper slices and walnuts.
  • Carefully roll up each breast and secure with wooden toothpicks.
  • Bake 20 to 25 minutes until cooked through.
  • Chill, remove toothpicks, then slice into 1/2-inch rounds and serve cold.

Easy and so yummy! Looks like more work than it really is. This is a favorite of our family for the holidays and looks so nice on a tray with other Christmas cookies. The number of servings will depend on how thick you slice them. Enjoy!

Number Of Ingredients 7

1 sheet frozen puff pastry (1/2 of a 17oz package)
1/3 cup granulated sugar
1 tablespoon cinnamon
1/4 cup butter (no sub)
1/2 cup raisins
1/2 cup chopped walnuts
1 egg yolk, beaten

Steps:

  • Thaw dough according to package directions.
  • Preheat oven to 350 degrees.
  • On a lightly floured surface, use a floured rolling pin to roll pastry out to an 8x12 inch rectangle.
  • In a small bowl combine sugar and cinnamon; set aside.
  • In a small saucepan melt butter; add raisins and walnuts, stirring until well coated.
  • Spread raisin mixture evenly over pastry.
  • Sprinkle cinnamon-sugar mixture evenly over raisin mixture.
  • Beginning at one long edge, roll up pastry.
  • Brush egg yolk on long edge to seal.
  • Bake on a greased baking sheet or parchment paper for 20 to 25 minutes or until golden brown.
  • Cool completely.
  • Cut into 1 inch thick slices.

Found this recipe in a Taste of Home Holiday collection. My family loves to have munchies during get togethers and this is a favorite. Cooking time listed is actually refridgeration time needed.

1 (8 ounce) package cream cheese, softened
1/2 cup sour cream
1/4 cup salsa
2 tablespoons taco seasoning
1/4 teaspoon garlic powder
1 (4 1/2 ounce) can black olives, chop & drain
1 (4 ounce) can green chilies, chopped
1 cup cheddar cheese, finely shredded
1/2 cup green onion, thinly sliced
8 flour tortillas (10 inch size)

Steps:

  • In a small mixing bowl beat cream cheese until smooth.
  • Stir in sour cream, salsa, taco seasoning and garlic powder until well blended.
  • Add in the olives, chiles, cheese and onions.
  • Spread 1/2 cup cheese mixture on each tortilla. Roll up jelly roll style.
  • Refridgerate 2 hours or overnight.
  • Slice into 1 inch pieces. Serve with salsa.
  • Pinwheels may be prepared ahead of time and frozen. Thaw in the refridgerator.
