RICE STUFFING WITH APPLES, HERBS, AND BACON



Rice Stuffing with Apples, Herbs, and Bacon image

This is by far the best stuffing recipe I have ever had. I have made it for the last 3 Thanksgivings and everyone has raved about it. It is very unique and the flavors are so delicious!!! Serve this up for Thanksgiving and your guests will be asking for the recipe!!!

3 ½ cups water, divided
1 ½ cups low fat, low sodium chicken broth
1 cup uncooked wild rice
⅓ pound bacon
3 cups diced onions
3 cups diced celery
1 tablespoon water
1 cup uncooked long-grain white rice
1 ¾ cups currants
¾ cup dried cherries
¾ cup dried cranberries
½ ounce dried apricots
1 cup diced, unpeeled apples
½ cup chopped Italian flat leaf parsley
6 tablespoons dried mixed herbs

Steps:

  • In a medium saucepan over medium heat, bring 1 1/2 cups water and the chicken broth to a boil. Stir in wild rice. Cover, reduce heat, and simmer 45 minutes.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Reserving drippings, drain bacon, crumble, and set aside.
  • In the skillet with the reserved bacon drippings, saute onions and celery with 1 tablespoon water. Cook until very soft, about 20 minutes.
  • Stir remaining water, white rice, currants, cherries, cranberries, apricots, and apples into the wild rice. Continue cooking 20 minutes, or until wild rice and white rice are tender.
  • In a large bowl, mix the bacon and the onion mixture into the rice mixture. Season with the Italian parsley and dried mixed herbs.

1 (32 ounce) can chicken broth
2 cups long grain and wild rice blend
3 tablespoons butter, divided
2 teaspoons all purpose seasoning
1 teaspoon sage
1 teaspoon thyme
1/2 teaspoon poultry seasoning
1 large onion, peeled and chopped
2 large carrots, peeled and chopped
3 stalks celery, chopped
1 cup dried cranberries
3/4 cup walnuts, coarsely chopped
salt and pepper

Steps:

  • Bring broth, rice, 1 tablespoons butter and seasonings to a boil in a large saucepan. Reduce heat and simmer, covered, for 50 minutes. Remove from heat; let stand for 5 minutes, then fluff with a fork.
  • Meanwhile, preheat oven to 375°F Melt remaining 2 tablespoons butter in a large skillet. Add onion; saute' over medium heat for 10 minutes, stirring frequently. Add carrots and cook for 5 minutes more. Remove from heat; stir in celery and cranberries. Season to taste with salt and pepper.
  • Spray a 2 quart casserole dish with olive oil spray. Stir together rice and vegetables. Place in prepared dish and sprinkle with walnuts. Tent loosely with foil and bake for 20 minutes. Remove foil and bake for 10 minutes more.

¼ cup unsalted butter
2 ½ cups diced yellow onion

2 large eggs, lightly beaten

Steps:

  • Arrange bread, uncovered, on a baking sheet; let dry 8 hours or overnight, stirring once or twice.
  • Heat oven to 375 degrees F. Butter a 9x13-inch baking dish; set aside. Melt butter in a large skillet over medium-high heat. Add onions, celery, sage, thyme and pepper and cook 10 to 12 minutes, stirring occasionally, until vegetables start to brown around the edges. Plus, the addition of protein-rich quinoa gives this hearty stuffing main-dish cred - perfect for those that prefer to skip the turkey.

2 tablespoons olive oil + more for greasing the baking dish + more for drizzling over the top
1 large yellow onion (finely chopped)
2 stalks celery (chopped (about 1/2 cup))
2 medium Granny Smith apples (peeled and diced)
2 medium cloves garlic (peeled and finely minced)
2 tablespoons fresh thyme leaves (minced)
1 teaspoon kosher salt + more to taste
1/2 cup dry-ish white wine (I like Sauv Blanc for both cooking and drinking; Chardonnay would work well too)
4 cups low-sodium vegetable broth
2 cups uncooked wild rice blend (I prefer a blend of 50% wild rice and 50% brown rice)
1 cup uncooked quinoa (rinsed well)
1 1/2 cups dried cranberries
1 cup raw pecans (chopped)
1/2 cup chopped fresh Italian parsley + 1/4 cup more for topping after baking
1/4 cup fresh sage leaves (minced)

Steps:

  • Place a large pot over medium heat. Add the oil. When hot, add the onions and celery and cook, stirring occasionally, until soft, about 5 minutes. Add the apples, garlic, thyme, and salt. Cook, stirring frequently, for one more minute. Stir in wine, then add broth. Bring to a boil. Stir in the wild rice blend and reduce the heat to medium-low. Simmer, covered, until the rice is tender, about 35 minutes. Stir in the quinoa and cover again. Cook until the quinoa is tender, about 15 more minutes. Stir in the cranberries, pecans, 1/2 cup parsley, and sage. Taste and add additional salt if desired. Remove from heat.
  • Preheat oven to 350 degrees Fahrenheit. Rub a large (9-inch x 13-inch is best) casserole dish with a little olive oil. Lightly scoop the rice mixture into the casserole dish, lightly mounding it instead of mashing it down.
  • Bake until golden brown, 25-30 minutes. Drizzle with a little more olive oil and sprinkle with remaining chopped parsley. Serve.

7 ounces herb stuffing mix
1/4 cup I Can't Believe It's Not Butter® Spread

Steps:

  • In a medium saucepan, combine wild rice and 1c water. Bring to a boil, stir once, then reduce heat, cover and simmer for 15 min or until soft. Set aside.
  • In a large saucepan or soup pot, heat vegetable oil. Saute onion, celery and vegetarian sausage until onion is translucent.
  • Add I Can't Believe It's Not Butter and stir until melted.
  • Stir in parsley until well blended.
  • Add 3 c water, bring to a boil.
  • Remove from heat and stir in Stuffing Mix and wild rice.
