Herbed Rice image

A few years ago, I put together a special cookbook for folks who cook for themselves. This is one of my favorite recipes in the book.-John Davis, Mobile, Alabama

1/4 cup uncooked long grain rice
1 green onion with top, cut into 1-inch pieces
1 tablespoon butter
1/8 teaspoon each dried tarragon, thyme, basil, parsley flakes, and pepper
1/2 cup chicken broth
Salt to taste, optional

Steps:

  • In a small saucepan, cook rice and onion in butter until onion is tender. Add the seasonings; cook for 1 minute. Add broth and salt if desired; bring to a boil. Cover and simmer for 15 minutes or until liquid is absorbed and rice is tender.

1 cup onion, chopped
1 (12 ounce) package long grain brown rice
2 garlic cloves, minced
3 cups chicken broth
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon dried chives
3/4 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees. Heat oil in a 3-quart, ovenproof, saucepan over medium heat. Add onion & saute, stirring frequently, for 5 minutes. Add the rice; cook, stirring for 2 minutes. Stir in remaining ingredients.
  • Cover & transfer to the oven. Bake 40 minutes or until rice is tender.

Flavorful rice that makes a perfect side for any dish. Easy to make and loved by all ages.

Number Of Ingredients 10

2 Tbsp butter
1 tsp dried onion or ¼ C finely chopped onion
1 tsp salt
black pepper (a few shakes)
1 tsp garlic (minced)
¼ cup fresh lemon juice
3 cup chicken broth
1½ cup basmati rice
1/2 tsp rosemary, basil, thyme, dill (use less dill), oregano, or parsley
fresh parsley (for garnish)

Steps:

  • In a pan over medium heat melt butter and add in onion as well as salt and pepper.
  • Stir until onion is soft.
  • Add in garlic and cook for one minute more.
  • Add in chicken broth and lemon juice and herb combination along with the rice. I used 1 tsp basil, 1/2 tsp thyme and 1 tsp parsley.
  • Stir until mixed together.
  • Bring to a boil and cover and reduce heat.
  • Cook covered for about 20 minutes or until rice is tender.
  • Garnish with some fresh herbs if desired

3 tablespoons extra-virgin olive oil
1 1/2 cups minced onion (from 1 onion)
3 cups long-grain white rice
Coarse salt
4 1/2 cups water
3 cups diced zucchini (from 2 zucchini)
1/2 cup finely chopped mixed fresh herbs, such as flat-leaf parsley, dill, and chervil

Steps:

  • Heat oil in a medium saucepan over medium-high heat. Add onion, and cook, stirring, until translucent, about 5 minutes. Stir in rice and 2 teaspoons salt. Stir rice until coated with oil, then cook 1 minute. Add water, and bring to a boil. Reduce heat, cover, and simmer until water is absorbed, about 16 minutes. Turn off heat. Let rice stand, covered, 10 minutes.
  • Meanwhile, bring a medium pot of water to a boil. Add zucchini, and cook until tender, about 2 minutes. Drain.
  • Add zucchini and herbs to rice, and fluff with a fork.

Herbed Brown Rice Recipe is a quick side dish that you can cook for your continental meals. The garlic and onions are caramelised well and pressure cooked with some dried herbs. like oregano, thyme and red chilli flakes. The brown rice is unpolished and hence has all the nutrition of the bran and germ intact. Whole rice has a mild nutty flavor and this rice is particularly rich in thiamine, a B vitamin and iron. Brown rice needs double the cooking time than compared to white rice. 1-1/2 cups Brown Rice
2 Onions , finely chopped
4 cloves Garlic , finely chopped
3 teaspoon Dried oregano
3 teaspoon Rosemary
4 teaspoon Red Chilli flakes
Salt , to taste

Water , for cooking

Steps:

  • To begin making the Herbed Brown Rice Recipe, soak the brown rice for 1/2 an hour in 2-1/2 cups of water.
  • keep the pressure cooker on medium heat, drizzle 2 tablespoon of oil, Add chopped garlic and saute till they soften.
  • Add in chopped onion and saute till they turn golden brown.
  • Add your washed brown rice into the cooker along with the soaked water, sprinkle all the seasoning like red chilli flakes, oregano, thyme and enough salt.
  • Pressure cook the herbed brown rice for 3 whistles on high heat and turn the heat to low. Simmer the herbed brown rice for another 5 minutes and turn off the heat.
  • Once done, allow the pressure to release naturally and give the herbed brown rice a mix and serve it over bowl. Sprinkle some more herbs and serve.
  • Serve the Herbed Brown Rice Recipe along with Chicken Curry With Sweet Potatoes and Red Cabbage Carrot, Sprout And Onion Salad for your sunday meals.

HERBED BASMATI RICE

1 cup uncooked long-grain (white) basmati rice (recommended: Texmati)
1 3/4 cups water
3/4 teaspoon kosher salt
1 tablespoon unsalted butter
2 tablespoons minced fresh curly parsley leaves
1 tablespoon minced fresh dill leaves
1 tablespoon minced fresh scallions, white and green parts
Pinch freshly ground black pepper

Steps:

  • Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

Steps:

  • Place a steamer insert into a pot and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until fork-tender, 10 to 15 minutes.
  • Remove cauliflower and steamer from the pot. Drain all water and return cauliflower to the empty pot. Add chives, parsley, garlic powder, and onion powder.
  • Set pot over medium-low heat. Mash cauliflower with a potato masher to the consistency of rice grains. Stir until excess moisture evaporates and the 'rice' appears fluffy, 5 to 7 minutes. Season with salt and pepper.

GARLIC HERB CAULIFLOWER RICE



Garlic Herb Cauliflower Rice image

Cauliflower rice is a versatile and healthy side dish. For the best tasting riced cauliflower, it needs help from other flavors. In this herby version, we kick up the flavor with butter, lots of fresh herbs, fresh lemon juice, and garlic. For some extra crunch and texture, I love stirring in some roasted sliced almonds. You can leave these out or substitute other nuts.

1 medium head cauliflower or 16 ounces store-bought cauliflower rice
1/2 cup sliced almonds
2 tablespoons butter or substitute extra virgin olive oil
2 cloves garlic, minced
1/4 teaspoon fine sea salt
Freshly ground black pepper, to taste
3/4 cup chopped fresh herbs like parsley, dill, cilantro, and basil
1 tablespoon lemon juice or more to taste

Steps:

  • To turn a head of cauliflower into rice, there are two options. Use a food processor or use a box grater.
  • If using a food processor, cut the head of cauliflower into medium chunks and remove the core. Working in batches, add the cauliflower to the bowl of a food processor and pulse until the cauliflower is broken down into very small bits that resemble rice (see photo above).
  • If using a box grater, cut the head of cauliflower into quarters and remove the core. Use the medium-sized holes to grate each quarter into small bits resembling rice.
  • Optional step, for the best cauliflower rice, before cooking, transfer the riced cauliflower to a clean dish towel and press to remove excess moisture.
  • Add the almonds to a large skillet over medium heat. Stir the almonds around the pan until they are fragrant and lightly toasted, about 3 minutes. Keep a close eye on the nuts since they do toast quickly. Transfer the toasted almonds to a bowl and save for later.
  • Return the skillet to the heat and add the butter. When the butter is melted and bubbling, stir in the garlic. Cook the garlic, stirring it around the pan, until fragrant, about 30 seconds.
  • Add the cauliflower rice, salt, and a few grinds of black pepper. Cook, stirring every once and a while, until the cauliflower rice is crisp-tender and starts to turn light brown in places, 7 to 10 minutes.
  • Take the skillet off of the heat, and then stir in the fresh herbs, lemon juice, and toasted almonds. Taste then adjust with additional salt, pepper or lemon juice.

  • In a large bowl, cover the rice with cold water. Using your hand, agitate the rice to release the starch, then carefully pour off the water. Rinse the rice 5 to 7 more times, until the water runs clear. Cover the rice with water, add 2 teaspoons of salt and let soak for 30 minutes, then drain.
  • Fill a 5-quart nonstick Dutch oven half full with water, bring to a boil and add 2 tablespoons of salt. Add the rice and boil over high heat until it is al dente and just starts to soften; this can take from 3 to 8 minutes, depending on your rice (do not overcook it). Let stand for 2 minutes, then drain well. Wipe out the pot.
  • In a medium bowl, mix the cilantro, parsley, chives and dill with the garlic. Put the oil in the bottom of the Dutch oven. In a small bowl, whisk the yogurt with the egg yolk and 2 tablespoons of the brewed saffron and drizzle over the oil in the pot. Gently scatter one-quarter of the rice into the pot (you want it to stay fluffy) and season with salt. Sprinkle with one-third of the herb mixture. Repeat the layering with the remaining rice and herb mixture, ending with a layer of rice.
  • Cover the pot and set it over moderately high heat until it starts to steam, about 5 minutes. Uncover the rice and drizzle with the remaining 2 tablespoons of brewed saffron and 1/4 cup of boiling water. Scatter the butter slices on top. Cover the pot with parchment paper, then cover tightly with the lid. Cook on a heat diffuser (if you have one) over moderately low heat until the rice is tender and very fragrant, about 45 minutes.
