2 tablespoons olive oil
3 cloves garlic, or more to taste
2 sprigs fresh thyme, leaves stripped, or more to taste
1 sprig fresh rosemary, leaves stripped, or more to taste
¾ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 475 degrees F (245 degrees C).
  • Toss potatoes, oil, garlic, thyme, rosemary, salt, and pepper together in a bowl; place on a rimmed baking sheet.
  • Roast in the preheated oven until tender, 30 to 35 minutes.

These Herb Roasted Potatoes are the perfect side dish for just about any meal. They are crispy on the outside, chewy on the inside and perfectly seasoned with fresh garlic, thyme and lemons.

3 lbs Small Red or White Potatoes (cut into 1" pieces)
1/4 Cup Avocado Oil
1/2 tsp Salt
1/8 tsp Pepper
3 Cloves Garlic (minced)
1/2 tsp Salt
2 tsp Fresh Thyme (chopped)
1 Lemon (juiced)
1 tsp Lemon Zest

Steps:

  • Preheat oven to 425 degrees.
  • In a large bowl, add the potatoes and drizzle with the avocado oil. Toss the potatoes until evenly coated, then sprinkle with salt and pepper, toss again and spread onto a sheet tray in a single layer.
  • Bake for about 20 minutes, or until the edges of the potatoes begin to brown. Using a spatula, turn the potatoes and cook for another 20 minutes, or until the other side has begun to brown.
  • While the potatoes are baking, place the minced garlic into a small bowl and add 1/2 teaspoon of salt. Take a sharp knife and scrape the blade over the garlic and salt mixture until it makes a paste.
  • Once the potatoes have almost finished roasting, remove from the oven and sprinkle them evenly with the garlic and salt mixture, fresh thyme, lemon juice and lemon zest. Return to the oven and roast for another 8-10 minutes.
  • Remove from the oven, and transfer to a serving bowl. Season with salt and pepper to taste and serve. Enjoy!

1 3/4 teaspoons garlic salt

1/8 teaspoon crushed dried rosemary
2 tablespoons virgin olive oil

Steps:

  • PREHEAT oven to 400°F; LINE a baking sheet with heavy aluminum foil; SPRAY lined pan with non-stick cooking spray.
  • SCRUB and wash 4 medium russet potatoes or 6-8 medium red potatoes.
  • CUT potatoes into uniformly-sized 1 1/4" cubes.
  • INTO a large resealable container, add 1 1/2 tablespoons flour, 1 3/4 teaspoons garlic salt, 1/2 teaspoon lemon pepper, 1 teaspoon dried chives, 1/4 teaspoon dried thyme, and 1/8 teaspoon crushed dried rosemary; SEAL the container; SHAKE to mix seasonings well.
  • ADD potatoes to container; SEAL; SHAKE well for 15 seconds to coat.
  • DRIZZLE 2 tablespoons virgin olive oil over potatoes; SEAL and shake again.
  • ARRANGE potatoes on prepared baking pan in a single-layer.
  • BAKE for 20 minutes; TURN potatoes with a metal spatula.

1.5 pounds Yukon Gold potatoes or Baby Dutch Yellow potatoes quartered
1 teaspoon baking soda
4 tablespoons olive oil (plus more for drizzling on baking pan)
2 tablespoons melted unsalted butter
5 minced garlic cloves
2 teaspoons Italian seasoning
2 tablespoons finely chopped fresh chives
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh basil
sea salt and freshly ground pepper to taste

Steps:

  • Preheat oven to 400°F. Line a rimmed baking pan with either parchment paper or aluminum foil. Drizzle olive oil on top to prevent sticking.
  • Boil water in a large pot. Once the water is boiling, add a tablespoon of sea salt and the baking soda. Dump the quartered potatoes into the pot and cook for 5-6 minutes. The potatoes should be submerged in the water. Stir occasionally to prevent sticking. While the water is boiling, you can use this time to wash and quarter the potatoes if you haven't done so already.
  • Remove the potatoes from the pot and drain. Ensure the potatoes are dry before placing in a large mixing bowl. The potatoes will be slightly translucent but still firm enough to toss. Add the olive oil, melted butter, Italian seasoning, sea salt and pepper to taste depending on preference. Toss the potatoes in the bowl until evenly coated. Don't discard the bowl yet as you will need it in the last step.
  • Place the potatoes on the lined baking pan and spread out. Bake for 28-30 minutes until the desired browned color is achieved. Mix the potatoes around at the halfway point to ensure the potatoes are browned evenly.
  • Once the potatoes are done baking, return the potatoes to the large mixing bowl and toss with the fresh chives, parsley, and basil. Enjoy immediately!
