1 package (6 ounces) long grain and wild rice mix
6 boneless skinless chicken breast halves (5 ounces each)
1 tablespoon canola oil
1 teaspoon butter
1/2 pound sliced fresh mushrooms
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup water
3 bacon strips, cooked and crumbled
1 teaspoon dried parsley flakes
1/2 teaspoon dried thyme
1/4 teaspoon dried tarragon

Steps:

  • Place rice in a 5-qt. slow cooker; set aside seasoning packet. In a large skillet, brown chicken in oil and butter. Add to slow cooker. In the same skillet, saute mushrooms until tender; place over chicken., In a small bowl, combine the soup, water, bacon, herbs and contents of seasoning packet. Pour over top. Cover and cook on low for 4-5 hours or until chicken is tender.

Make weeknight dinners exciting again with this quick, easy, healthy, and incredibly flavorful side dish! You'll never make wild rice from a box again!

Number Of Ingredients 12

2 cups vegetable or chicken stock
1 1/4 cups quick-cook wild rice blend
Pinch of sea salt
2-3 bay leaves
3 Tablespoons butter (olive oil for vegan)
3/4 cup - 1 cup yellow onion (diced)
3/4 cup carrot (diced (~4 carrots))
2 garlic cloves (minced)
3/4 teaspoon dried parsley
1/4 teaspoon dried thyme
9 button mushrooms (sliced (approximately 2 cups sliced))
Salt and pepper to taste

Steps:

  • In a medium or large saucepan, combine stock, rice, salt, and bay leaves. Bring to a boil and simmer, uncovered, for 10-12 minutes until al dente (more depending on your wild rice blend). Rice will have absorbed most of the liquid, but should still be semi-liquidy.
  • While rice simmers, melt butter or heat olive oil into a large skillet, add onion and carrot, with a pinch of salt. Saute for approximately 3 minutes and add garlic. Add in dried herbs (rub between hands before adding to release flavors) and mushrooms. Saute for an additional 7 minutes, until mushrooms have cooked through, adding salt to taste.
  • Add rice (with extra liquid) to vegetable mixture and stir to combine. Continue simmering for approximately 3-5 minutes, until rice is cooked through and remains moist, but not wet.
  • Add salt and pepper to taste and remove bay leaves. Top with additional freshly chopped parsley if desired.

WILD RICE AND MUSHROOM PILAF

An easy and delicious make-ahead side dish. Loaded with a variety of mushrooms, this pilaf is filling with a nutty flavor from the wild rice blend.

1 tablespoons unsalted butter
1 large white onion (chopped)
salt
fresh ground black pepper
2 cups wild rice blend
4 cups vegetable broth
2 tablespoons olive oil
1 pound mixed mushrooms ((button, cremini, and shiitake, sliced))
⅓ cup dry white wine
2 tablespoons fresh chopped chives

Steps:

  • Heat 1 tablespoon butter in a large, heavy bottom saucepan over medium heat. Add the onion and ¾ teaspoon salt and cook, stirring often, until softened, about 5 minutes.
  • Add the wild rice blend and saute, stirring constantly, for about 30 seconds.
  • Add 4 cups of vegetable broth to the rice and onion mixture and bring to a boil.
  • Cover and turn heat to low and cook for 45 minutes or until the broth is absorbed.
  • While the rice is cooking, prepare the mushrooms.
  • Heat a large skillet and 2 tablespoons olive oil over medium-high heat. Add the mushrooms, ½ teaspoon salt and ½ teaspoon pepper. Cook, stirring occasionally until browned, about 8 minutes.
  • Add the wine and cook until evaporated, about 4-5 minutes.
  • When the rice is done, fluff with a fork and fold in the mushrooms and chives.
  • Serve, hot or room temperature. May be made up to 2 days in advance. Refrigerate leftovers.

1 green onion with top, cut into 1-inch pieces
1 tablespoon butter
1/8 teaspoon each dried tarragon, thyme, basil, parsley flakes, and pepper
1/2 cup chicken broth
Salt to taste, optional

Steps:

  • In a small saucepan, cook rice and onion in butter until onion is tender. Add the seasonings; cook for 1 minute. Add broth and salt if desired; bring to a boil. Cover and simmer for 15 minutes or until liquid is absorbed and rice is tender.

Wild Rice with Wild Mushrooms image

One surprise to Europeans who settled the plains was the abundance of wild mushrooms, including morels, chanterelles, and other varieties familiar from home. Free for the picking, the mushrooms were hung on strings and dried, providing a winter's worth of eating. Wild rice (actually a grass seed) is a New World native that combines well with the earthy mushrooms the French cèpes.

1 1/2 cups canned chicken broth
3/4 ounce dried porcini mushrooms, rinsed under cold water
1 1/4 cups wild rice, rinsed under cold water
1 teaspoon salt
1 1/2 bay leaves
3 tablespoons butter
3/4 cup finely chopped onion
1/2 cup finely chopped carrot
2 garlic cloves, minced
3/4 teaspoon dried marjoram
1/2 teaspoon dried thyme
9 medium crimini or button mushrooms, sliced

Steps:

  • Bring broth to boil in small saucepan. Remove from heat; add porcini mushrooms and let stand until soft, about 30 minutes. Drain, reserving soaking liquid. Finely chop porcini.
  • Bring medium saucepan of water to boil. Add rice, salt and bay leaves. Reduce heat to medium and simmer until rice is almost tender, about 45 minutes. Drain; discard bay leaves. (Porcini and rice can be prepared 1 day ahead. Cover porcini, soaking liquid and rice separately and refrigerate.)
  • Melt butter in large nonstick skillet over medium heat. Add onion, carrot, garlic, marjoram, thyme and porcini and sauté 5 minutes. Add crimini mushrooms; sauté until tender, about 7 minutes. Add rice and reserved porcini soaking liquid, discarding sediment in bottom. Simmer until almost all liquid absorbed but mixture is still moist, about 10 minutes. Season with salt and pepper.

a mugful of American long grain rice
250g pack chestnut mushrooms
2 tbsp olive oil
2 large garlic cloves , finely chopped
5 tbsp chopped parsley
3 tbsp snipped chives
finely grated zest 1 lemon

Steps:

  • Fill a roomy saucepan with water, bring to the boil and tip in a heaped teaspoon of salt - the water will bubble furiously. Pour in the rice, stir once and return to the boil, then turn the heat down a little so that the water is boiling steadily, but not vigorously.
  • Boil uncovered, without stirring (this makes for sticky rice) for 10 minutes. Lift some out with a slotted spoon and nibble a grain or two. If they're too crunchy, cook for another minute and taste again. They should be tender but with a little bite. Drain the rice into a large sieve and rinse by pouring over a kettle of very hot water.
  • Meanwhile, chop the chestnut mushrooms into smallish chunks and fry in olive oil in a large frying pan over a high heat for 4 minutes until golden. Stir in garlic and fry for 1 minute.
  • Drain and rinse the rice and toss it into the mushrooms with the parsley, chives and lemon zest. Try a little and add salt if necessary. The zingy, fresh flavours go really well with grilled fish.

2 cups vegetable broth
1 cup medium grain rice
1/4 teaspoon salt
1 tablespoon olive oil
1 cup chopped onion
1 tablespoon olive oil
1 tablespoon butter
1 cup finely sliced celery
1 cup sliced fresh mushrooms
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons chopped fresh herbs (choice of basil, oregano, parsley, thyme, verbena, lemon thyme, or a mixture)
1 teaspoon finely chopped fresh rosemary

Steps:

  • Bring vegetable broth to a boil in a saucepan with 1/4 tsp salt and tbsp of olive oil; add rice.
  • Bring mixture to a boil, then reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed.
  • Remove pan from heat and allow to sit undisturbed for 10 minutes.
  • While waiting on rice, saute onion and celery in butter and rest of oil until tender.
  • Add mushrooms, remaining salt and pepper, and cook 1 minute more, or until mushrooms are soft.
  • Remove lid from rice, and stir in vegetables, chopped herbs and rosemary.
