COUNTRY HERBED MEAT LOAF
I have three small children and I'm always trying new meat loaf recipes. This recipe is something I developed, and it's one of the first meat loaves that my kids really went for. See if your kids like it, too!

Steps:
- In a skillet, heat oil on high. Saute the mushrooms; onion and garlic. Add tomatoes, tomato paste, salt, pepper and sugar. Remove 1-1/2 cups. Add water, bay leaf and basil to skillet. Simmer, uncovered, for 45 minutes, stirring occasionally. , Meanwhile, combine all meat loaf ingredients with 1-1/2 cups reserved sauce. press into a 9x5-in. loaf pan lined with waxed paper. Unmold onto a roasting pan. Bake at 350° for 45 minutes or until no pink remains and a thermometer reads 160°. Remove from oven; drain. Spread 1/2 cup of herb sauce over top of meat loaf. Return to oven for 15 minutes. Discard bay leaf and serve remaining sauce over individual servings.

GARDEN HERB LOAF
This bread draws raves whenever I make it! It is a family favorite!

Steps:
- In large bowl, combine 1 1/2 cups flour, sugar, undissolved yeast, salt, and herbs.
- Heat milk, water, and 1/4 cup butter until very warm (120-130 degrees F); stir into dry ingredients. Stir in egg and enough remaining flour to make soft dough.
- Knead on lightly floured surface until smooth and elastic, about 4-6 minutes. Cover; let rest on floured surface 10 minutes.
- Divide dough into 3 equal pieces. Roll each piece to 30 inch rope. Braid ropes; pinch ends to seal. Tie knot in center of braid; wrap ends around knot, in opposite directions, and tuck under to make round loaf. Place on greased baking sheet. Cover; let rise in warm, draft-free place until doubles in size, about 20 to 40 minutes.
- Bake at 375 degrees F (190 degrees C) for about 30 to 35 minutes or until done, covering with foil during last 10 minutes of baking to prevent excess browning. Melt remaining butter; brush over loaf. Sprinkle with additional herbs, if desired. Remove from sheet; let cool on wire rack.

SAVORY HERB MEATLOAF
This is by far my favorite meatloaf recipe. It is moist and savory, and has always been a big hit anytime I've made it. If you want to lighten it up, you can substitute ground turkey, and it still turns out great!

- Combine ground beef, 1 tsp. mustard, sage, thyme, garlic powder and pepper; mix lightly. Add bread crumbs, onion and egg, mixing lightly, but thoroughly. Shape beef mixture into an 8 by 4 1/2- inch loaf; place on rack in an open roasting pan. Bake in a 350 degree oven for 50 minutes. Combine honey, tomato paste and remaining dry mustard; spoon over top loaf. Continue baking for 10 more minutes.

HERBED MEAT LOAF WITH MUSHROOM SAUCE

- Preheat the oven to 425 degrees. Heat the butter in a small skillet and add the onion and garlic. Cook until wilted, and cool briefly.
- Place the meat in a mixing bowl and add the bread crumbs, nutmeg, Tabasco, cumin, salt and pepper. Add the onion mixture, herbs of your choice and yogurt, then blend well. Pack the mixture into a loaf pan about 9 by 5 by 3 inches. Smooth the top with a spatula.
- Set the pan in a baking dish and pour 1 1/2 inches of boiling water around the pan. Bake for 45 minutes.
- Let rest in a warm place for about 15 minutes before serving. Serve with the mushroom sauce.

TURKEY HERB MEATLOAF
Recipe cut from newspaper many years ago. My family loves it. Adds a very interesting flavor with the tarragon and I think that is why this is the meatloaf they always want me to make.

- Heat oven to 375 degrees. Line a jellyroll pan with aluminum foil Spray with cooking spray.
- Combine all ingredients in a large bowl and transfer to pan and shape into large oval loaf.

HERBED MEATLOAF

- Preheat oven to 350 degrees Combine everything except bacon; using hand DO Not over blend the ingredients. Mold into a round mold in center of a cast iron skillet. Cover molded meatloaf with strips of bacon (completely) bake in over for 1 & 1/2 hrs. I always put large cubed new red potatoes around meatload and bake together and serve with steamed broccoli.

- In a large glass measuring cup, soak the porcini in the boiling water until softened, about 20 minutes. Drain the porcini, reserving the soaking liquid. Rinse them briefly, pat dry and finely chop. Let the porcini soaking liquid settle, then pour it into a medium bowl, leaving the grit behind.
- Preheat the oven to 350°. In a medium skillet, melt 2 tablespoons of the butter. Add the onion and cook over moderately high heat, stirring, until translucent, about 5 minutes. Add the garlic, chopped porcini and 2 tablespoons of the reserved porcini soaking liquid and cook over moderately low heat for about 5 minutes. Stir in the rosemary, thyme and sage and scrape the mixture into a large bowl; let cool.
- Soak the bread in the remaining porcini liquid until evenly moistened, then squeeze dry and tear into small pieces. Reserve the porcini liquid for the gravy. Add the soaked bread to the large bowl, along with the ground beef, veal and pork and the ham and eggs. Season with 1 tablespoon of kosher salt and 1 teaspoon of black pepper. Knead the mixture with your hands until combined. Transfer the meat to a large enameled cast-iron baking dish or a small flameproof roasting pan and pat it firmly into a 10-by-6-inch oval loaf.
- In a bowl, mix the mayonnaise with the mustard and cayenne and brush it over the meat loaf. Bake for 1 1/2 hours, or until browned and firm to the touch. Using 2 large spatulas, transfer to a cutting board, cover loosely with foil and keep warm. Set aside the baking dish.
