BAKED MACARONI AND CHEESE



Baked Macaroni and Cheese image

Unsalted butter, for the dish
2 teaspoons kosher salt
1 pound elbow macaroni with ridges
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons all-purpose flour
1 teaspoon kosher salt
2 cups milk
2 cups grated sharp Cheddar
1/2 cup breadcrumbs
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
  • For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
  • For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
  • Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.

  • Cook macaroni according to package directions; drain. Place in a 1-1/2-qt. casserole and set aside. , Meanwhile, in a large saucepan, melt butter over medium heat. Stir in flour and seasonings; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove pan from heat; add the sour cream, 1/2 cup cheddar cheese and Havarti cheese. 3/4 to 1 teaspoon dried marjoram
1/2 teaspoon dried thyme
1/8 teaspoon ground nutmeg
1/8 teaspoon paprika
1 tablespoon Dijon mustard
1/2 cup grated Parmesan cheese, divided
1 package (7 ounces) elbow macaroni, cooked and drained
1 cup 1% cottage cheese

Steps:

  • In a large saucepan, melt butter. Stir in flour until smooth. Gradually add milk, stirring constantly. Bring to a boil over medium heat; boil for 2 minutes or until thickened. ½ (8 ounce) box elbow macaroni
1 teaspoon chopped fresh tarragon
½ teaspoon salt
¼ teaspoon ground white pepper
¼ teaspoon dried rosemary
¼ teaspoon chopped fresh chives
¼ teaspoon dried sage
⅛ teaspoon dried thyme
¼ cup cottage cheese
¼ cup Greek yogurt
¼ cup shredded Gruyere cheese
1 shallot, minced
⅓ cup bread crumbs
1 tablespoon melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and place in an 8-inch casserole dish.
  • Combine tarragon, salt, white pepper, rosemary, chives, sage, and thyme in a small bowl. Mix well. Combine cottage cheese, Greek yogurt, and Gruyere cheese in another bowl; add the herb mixture and stir. Pour over the macaroni and stir to coat evenly.
  • Combine shallot, bread crumbs, and butter in another dish; sprinkle mixture over the macaroni.
  • Bake in the preheated oven until top is lightly golden brown, 25 to 30 minutes.

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1/2 teaspoon italian seasoning
1/4 teaspoon onion powder

1 cup milk
1/4 cup sour cream
1/2 cup havarti cheese or 1/2 cup muenster cheese, cubed
3/4 cup cheddar cheese, shredded and divided
2 tablespoons parmesan cheese, grated
2 tablespoons Italian seasoned breadcrumbs

Steps:

  • Cook macaroni according to package directions.
  • Preheat oven to 350 degrees.
  • Meanwhile, in a saucepan, melt butter over medium heat.
  • Stir in the flour and seasonings; gradually add milk.
  • Cook and stir until thickened.
  • Remove from heat; add sour cream, Havarti cheese and 1/2 cup cheddar cheese.
  • Stir until melted.
  • Drain macaroni; place in an ungreased 1-1/2 quart baking dish.
