Skillet Fried Italian Herbed Potatoes image

An easy and delicious side of potatoes quickly fired in a skillet and seasoned with Italian seasonings.

2 cups potatoes (thinly sliced (white or red))
1/2 cup onion (sliced (small onion))
2 Tablespoons butter
1 Tablespoon olive oil
1 garlic clove (minced)
1 teaspoon rosemary (fresh, chopped)
1 teaspoon sage (fresh, chopped fine)
1 teaspoon thyme (fresh, chopped)
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (freshly ground (or to taste))

Steps:

  • In a large non-stick skillet over medium heat, melt butter and olive oil together.
  • Add the remaining ingredients to the skillet. Stir until potatoes are evenly coated with spice mixture and onion slices are evenly distributed.
  • Cook covered on medium heat for 15 minutes, tossing and turning the potatoes every few minutes.
  • Potatoes will be done when slightly browned and fork-tender.

Baked in the oven, these crispy potatoes are golden perfection with some garlic and chunks of onion, and cleanup is a breeze.

2 tablespoons olive oil
2 tablespoons butter
3 pounds baking potatoes (russet or Idaho )
1 large onion
3 large cloves garlic
1/2 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
2 tablespoons fresh parsley, minced

Steps:

  • Gather the ingredients. Position the rack in the lower part of the oven. Preheat the oven to 450 F.
  • Combine the oil and butter in a large, rimmed baking pan . Place the pan in the oven until the butter has melted.
  • Peel the potatoes and cut them into 1-inch cubes or small wedges.
  • Peel the onion and cut it in half. Cut each half into 4 chunks.
  • Mince the garlic.
  • Arrange the potatoes, onion chunks, and garlic in the pan, and stir lightly to coat with the butter and oil.
  • Roast the potatoes in the preheated oven for about 1 hour, or until golden brown and crispy. Stir occasionally.
  • Sprinkle with salt and pepper as desired.
  • Toss the potatoes with the minced parsley just before serving. Serve as a side with your choice of protein and enjoy.

5 pounds potatoes, cut into wedges
6 cloves garlic, minced
¾ cup olive oil
1 cup water
¼ cup fresh lemon juice
sea salt to taste
ground black pepper to taste
1 ½ tablespoons dried oregano
1 teaspoon chopped fresh mint
1 (8 ounce) package crumbled feta cheese

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Lightly oil a large baking dish.
  • Stir the potatoes, garlic, olive oil, water, lemon juice, salt, and pepper together in a bowl until the potatoes are evenly coated; pour into the prepared baking dish.
  • Roast in the preheated oven until the potatoes begin to brown, about 40 minutes. Season the potatoes with the oregano and mint. If the dish appears dry, pour another 1/2 cup water into the dish. Return to the oven and bake about 40 minutes more. Top with the crumbled feta cheese to serve.

4 red potatoes
1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, seeded and chopped
2 tablespoons olive oil
1 teaspoon salt
¾ teaspoon paprika
¼ teaspoon ground black pepper
¼ cup chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool cut into 1/2 inch cubes.
  • In a large skillet, heat 1 tablespoon olive oil over medium high heat. Add onion and green pepper. Cook, stirring often, until soft; about 5 minutes. Transfer to a plate and set aside.
  • Pour remaining 2 tablespoons of oil into the skillet and turn heat to medium-high. Add potato cubes, salt, paprika and black pepper. Cook, stirring occasionally, until potatoes are browned; about 10 minutes. Stir in the onions, green peppers and parsley and cook for another minute. Serve hot.

I was looking for a little added flavor in my home fries this morning and created this luscious recipe. They were AWESOME! I splurged and had them with fried eggs and toast for a DELICIOUS weekend breakfast. GREAT flavor and just a little spiciness from the seasoning. They are REALLY good! I cooked these on med-high, and from the starting of peeling the onion to putting them on my plate was 45 mins., so if you cook them on high it is going to take less time, and if you cook them on med. it's going to take longer. Med-high worked perfect for me, as it browned the home fries nicely and didn't scorch the onions! See my picture. If you have a lg. cast iron frying pan, I would suggest using it, as they make the "BEST" home fries :)

4 -5 tablespoons olive oil
2 large potatoes, about 1 lb
1 large onion, cut in half and sliced
4 teaspoons garlic, chopped (I use the stuff in the jar)
tony chachere's creole seasoning (in the green can)
salt and pepper, to taste

Steps:

  • In a lg. cast iron frying pan add olive oil.
  • Fry sliced onions on med-high, for about 5 minutes and often so they don't stick.
  • Push onions to one side of the frying pan, and add raw chopped potatoes.
  • Cook potatoes and onions turning often to brown evenly. When potatoes are a golden brown, mix onions in with potatoes.
  • Add garlic, and mix in with potatoes and onions.
  • Add Tony Chachere's Creole Seasoning. Mix in with potatoes.
  • Salt and pepper, to taste.
  • Serve.

  • In a kettle combine the potatoes with enough cold water to cover them by 1 inch and simmer them for 15 to 20 minutes, or until they are just tender. Drain the potatoes and let them cool. The potatoes may be prepared up to this point 1 day in advance and kept covered and chilled. Cut the potatoes into 1-inch pieces and in a large bowl toss them with the onion, 2 tablespoons of the oil, the rosemary, and salt and pepper to taste. In a large non-stick skillet heat 3 tablespoons of the remaining oil over moderately high heat until it is hot but not smoking and in it sauté half the potato mixture, stirring, for 10 to 15 minutes, or until the potatoes are golden.
