SOFT HERB SALAD

In addition to how nice it looks, the beauty of this herb salad is that it can be as sweet or as pungent as you like, served in a big heap as a fresh first course, or a small pile as a refreshing side dish, or as a palate cleanser with a cheese course. It is especially energizing when served alongside heavy winter feasts:The leaf-green herbs, pink peppercorns and buttery golden almonds perk up the browns of roasts and braises. Picking the herbs and cleaning them is a finicky task, but can be done a day or two before.

Number Of Ingredients 12

2 cups cilantro leaves
1 cup flat-leaf parsley leaves
1 cup small dill sprigs
1 cup basil or mint leaves
1 cup arugula leaves
2 cups purslane, mâche or hearts of Boston lettuce leaves
4 tablespoons unsalted butter
1 cup sliced almonds
Salt and coarsely ground black pepper
¼ teaspoon red chile flakes or 1/2 teaspoon crushed pink peppercorns (optional)
3 tablespoons lemon juice, more to taste
2 tablespoons olive oil, more to taste

Steps:

  • Up to a day before serving, wash the herbs and greens: Fill a large bowl or clean sink with plenty of cold water. Immerse the leaves, swish around to loosen any dirt, then gently lift out. Dry in a salad spinner or by spreading them on clean kitchen towels. (If working ahead, refrigerate the dry leaves in sealed plastic bags or containers. Add a paper towel to each bag to absorb excess water.)
  • Melt butter in a frying pan until it sizzles. Add almonds. Sauté over low heat, until the almonds are golden and the butter is browned. Lift out almonds and drain on paper towels, reserving butter. (Butter can be kept for 1 day. Melt and cool again before assembling salad.)
  • When ready to serve, place greens in a large bowl. Add salt, pepper, chile flakes, almonds, cooking butter, lemon juice and olive oil. Toss gently and season to taste, then serve immediately.

Herbed Grain Salad With Mushrooms, Hazelnuts and Pears image

Instead of the usual Mediterranean flavors, this grain salad has a whiff of Eastern Europe, with dill, hazelnuts and mushrooms. Ripe pear adds juicy and sweet notes. It's great for fall and winter parties, and can be prepared well ahead of time, but wait till the last minute to stir everything together.

Kosher salt
1 1/2 cups pearl barley or whole grains, like farro
1 big handful (1 cup packed) fresh sorrel or baby spinach, tough stems removed
3/4 cup chopped fresh dill, tough stems removed, plus more for garnish
1 garlic clove, peeled
1/2 cup toasted hazelnuts or walnuts, plus 1/2 cup chopped toasted hazelnuts or walnuts
3/4 cup plus 2 tablespoons olive oil, and more as needed
2 tablespoons white wine vinegar, plus more to taste
Freshly ground black pepper
2 cups (about 6 ounces) diced shiitake, maitake or king oyster mushrooms
1 pear, peeled (if desired), cored and diced

Steps:

  • Bring a large pot of salted water to a boil. Stir in barley and return to a boil. Reduce the heat and cook at a gentle boil until tender but not mushy, 30 to 40 minutes. (Different grains will cook at different rates.)
  • Make the dressing: In a food processor, combine the greens, dill and garlic and process until finely chopped, scraping down the bowl as needed. Add the whole nuts and pulse a few times to coarsely chop. While the motor is running, add the 3/4 cup oil gradually in a slow stream and process until smooth. Add the vinegar, 2 teaspoons salt, 1/2 teaspoon pepper (12 to 16 grinds), and mix. Taste and adjust the seasonings with vinegar, oil, salt and pepper. It should taste bright and rich.
  • Cook the mushrooms: In a wide, medium-size pot, combine the mushrooms and 1/2 cup water. Bring to a boil and cook until the liquid evaporates, about 10 minutes. Stir in the 2 tablespoons oil and cook, stirring occasionally, until mushrooms are completely cooked through and well browned, 5 to 10 minutes more. (The mushrooms will shrink quite a bit.) Remove from the heat and sprinkle with salt.
  • When the barley is cooked, drain it well and return to the pot. Let cool until warm, stirring occasionally. (If the dressing is added when the grains are too hot, it will turn brown and taste "cooked.") Stir in a little oil if needed to prevent sticking. Stir in dressing and set aside, stirring occasionally, to let the grains absorb the dressing, at least 10 minutes.
  • When ready to serve, taste the barley and season again. Gently mix in mushrooms, pear and chopped nuts. Transfer to a serving bowl, garnish with lots of dill, and serve warm or at room temperature.

A mix of herbs brightens savory, woodsy, and earthy roasted mushrooms in this light but satisfying dish. If you can't find maitake mushrooms, use shiitake or, even better, chanterelles. Serve the salad with some good crusty bread on the side.

1 lb. cremini mushrooms, quartered
12 oz. oyster mushrooms, torn into bite-size pieces
7 oz. maitake (hen-of-the-woods) mushrooms, torn into bite-size pieces
1 cup olive oil
Kosher salt and freshly ground black pepper
1/4 cup white-wine vinegar
2 tsp. Dijon mustard
1 bunch fresh curly-leaf parsley, coarsely chopped (about 1-1/2 cups)
1 small bunch fresh basil, leaves coarsely chopped (about 1 cup)
1 small bunch fresh dill, coarsely chopped (about 1/4 cup)
1-1/2 oz. baby arugula (about 1 cup)

Steps:

  • Position a rack in the center of the oven, and heat the oven to 425°F. In a medium bowl, toss the mushrooms with 1/2 cup of the oil. Season well with salt and pepper. Reserving the bowl, transfer the mushrooms to a large rimmed baking sheet, spread in an even layer, and roast for 20 minutes, tossing once, until the mushrooms are fragrant and beginning to brown.
  • In the reserved bowl, combine the vinegar and mustard. Whisk well, and then slowly whisk in the remaining 1/2 cup oil.
  • Let the mushrooms cool slightly on the baking sheet. Then, using a slotted spoon, transfer them to the bowl. Add the parsley, basil, dill, and arugula. Gently toss to combine, and serve warm or at room temperature.
