HERBED FISH TARTLETS
This is a nice starter for 8 or a main course for 4, then serve a salad with it. You can make most of the recipe in advance, up to the point to flaking the fish. This is also very nice with smoked cod or haddock. Can be made as one large tart, use a 9 inch round tin, you might have to give it a longer baking time. You will need 8 tartlet tins of approx 5-inch each.

Steps:
- Grease the baking tins.
- Sift the flour into a mixing bowl; add the butter and using your fingers make it into crumbly dough.
- Add the herbs and the cheese, and then almost all of the water, knead until you have firm dough, if necessary add more water.
- Knead the dough on a floured surface until smooth.
- Wrap in plastic, put in the fridge for 15-20 minutes and let it rest.
- Preheat oven to 410 degrees F.
- Divide the dough in 8 pieces, roll the dough out to fit the baking tins, trim the dough around the rim Put some baking parchment, cut in circles, on the dough, fill with ceramic baking beans or normal dried beans or rice, and bake them for 10 minutes Take them out of the oven, remove the beans and the paper then put them back in the oven and bake for another 10 minutes.
- Take them out and let them cool.
- Poach the fish in some water, 3 to 5 minutes (but longer if the fish fillets are thick) remove from the pan and cool.
- Flake or mash the fish, divide over the tins, sprinkle with the onion, parsley and cheese.
- Mix the eggs with the cream, and pour over the fish.
- Bake for 15 to 20 minutes until the tartlets have firmed up and are golden brown.
- Serve with some halved cherry tomatoes and herb sprigs.
BAKED COD WITH BOURSIN HERB CHEESE
Use Boursin or Allouette Cheese and canned tomatoes seasoned with onion, peppers and garlic to make this dish with fresh cod. It's an outstanding fish recipe for a quick and easy-to-prepare dinner. Add a tossed salad, a green vegetable side dish, and your dinner is complete. Olive oil may be substituted for the butter.

- Preheat oven to 400 degrees F (200 degrees C).
- Pour 1 tablespoon melted butter into baking dish to coat bottom. Arrange the cod fillets in the dish. Pat fillets dry using a paper towel. Spread the Boursin cheese evenly over the fillets. Pour the tomatoes over the tops. Season with salt and pepper to taste. Sprinkle with Parmesan cheese. Drizzle with remaining 1 tablespoon butter.
- Bake, uncovered, in preheated oven for 25 minutes.

HERB-CRUSTED FISH
Fresh herbs with a touch of lemon zest and you have a gorgeous meal. Serve with your favourite rice pilaf and a green salad. Use your favourite fish fillet.

- Preheat oven to 400 degrees F.
- Place the bread crumbs in a shallow dish.
- On a cutting board place the herbs, garlic, lemon zest, and a little salt.
- Finely chop all together.
- Add the herb mixture to the bread crumbs.
- Brush the top of each fillet with olive oil and dip in to the bread crumb herb mixture.
- Brush baking pan with oil.
- Place the fillets, crumb side up.
- Bake in oven for 12-15 minutes or until fish is done and flaky.

- For the pastry, whizz the nuts in a food processor until finely chopped. Sift the flour and salt into a large bowl, stir in the nuts, add the butter and rub together with your fingers until the mixture resembles fine crumbs. (Alternatively you can use the food processor.) Pour over 3 tbsp iced water. Mix with a knife until it starts to come together, adding a splash more water if necessary. Knead briefly to form a soft dough. Shape into a disc, wrap in cling film and chill for 30 minutes.
- Preheat the oven to 220°C/fan200°C/gas 7. Roll out the pastry on a lightly floured surface to the thickness of a pound coin. Cut
- 4 x 15cm discs and use them to line 4 x 11cm loose-bottomed fluted tart tins, pressing them into the sides. Trim any excess (see tip on p98). Prick with a fork, then line with baking paper and baking beans or rice. Blind- bake for 12-15 minutes until crisp.
- Mix the lightly beaten egg and yolks in a jug with the cream, chopped herbs and cheese. Season with salt, pepper and a grating of nutmeg. Take the cases out of the oven, remove the beans/rice and paper, then carefully lift them from their tins on to a baking tray. Turn the oven to 180°C/fan160°C/gas 4.
