ROASTED CARROTS WITH HERBS



Roasted Carrots with Herbs image

What makes these carrots tasty is something to sing about: parsley, sage, rosemary and thyme.

2 pounds carrots with tops
1/4 cup olive oil
Kosher salt and freshly ground black pepper
2 sprigs fresh rosemary
2 sprigs fresh sage
2 sprigs fresh thyme
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel the carrots and trim off all but about 1/2 inch of the tops. Stack the carrots on a large piece of aluminum foil, drizzle with the oil and season with salt and pepper. Lay the rosemary, sage and thyme on top.
  • Bring the ends of the foil together, fold over and crimp to seal into a tight package. Put on a baking sheet and roast until tender, 35 to 40 minutes. Carefully open the package and transfer the carrots with any accumulated juices to a serving platter. Sprinkle with the parsley and a pinch of salt.

1 tbsp finely chopped tarragon
1½ tbsp finely chopped parsley
½ tbsp wholegrain mustard
1kg baby carrots

Steps:

  • Mash the butter in a bowl with the tarragon, parsley and mustard, as well as some seasoning. Cover and chill until needed. Can be made up to three days ahead.
  • Trim the long green tops off the carrots and wash under cold running water, scrubbing them with a clean scourer to get rid of any dirt. Halve the carrots lengthways so they're all the same size, and put in a large, microwave-proof bowl with 3 tbsp water. Cover the carrots with a microwaveable plate or lid and heat on full power for 8-10 mins until just tender. Drain, then toss with the herby butter and serve straightaway.

2 cups sliced fresh carrots
3 to 4 lettuce leaves

Steps:

My favourite ways of cooking carrots all serve 4 people - for each recipe you will need 500g of carrots, either left whole if they are baby ones, or sliced into small erratic pieces - nothing too perfect.

500 g carrots
salt
1 tablespoon sugar
1 knob butter, plus a little extra
1 small handful of fresh herbs
1 orange
a few whole cloves garlic
1 pinch cumin
salt
pepper

Steps:

  • Carrots boiled with orange, garlic and herbs: Boil the carrots in salted boiling water with a tablespoon of sugar, a knob of butter and a little handful of fragrant herbs, tied up. Parsley, rosemary, thyme, bay - use just one or a mixture. Cut an orange into eighths and add them to the water, along with a few whole garlic cloves in their skins. If you really want to be a little tiger, add a pinch of cumin as well (seeds or ground) - it subtly cuts through with the most wonderful flavour. As soon as the carrots are cooked, drain them, discard the herbs and all but one of the orange pieces, squeeze the garlic out of its skin, chop the remaining orange piece finely and toss with the carrots, some seasoning and a little more butter. The flavour will be incredible.
  • Another idea is to fry the chopped-up orange in a good tablespoon of sugar, so it almost jammifies, and serve this on top of the carrots. These two flavours together are one of the coolest things.
  • Or, roasted carrots with orange, garlic and thyme: just as easy - as soon as you drain the carrots you can throw them into a baking tray with the chopped-up orange and the garlic cloves and roast them at 200°C/400°F/gas 6 for 10 minutes - this will give you a slightly meatier flavour.
  • Or simply mash the carrots up with the orange and garlic, so you have some coarse and some smooth. Lovely.

2 tablespoons olive oil
1/2 cup chopped onions or shallots
Kosher salt and freshly ground black pepper, to taste
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh rosemary leaves
1 large orange, cut into 8 wedges

Steps:

  • Wash, peel, and trim the carrots and then cut them in half crosswise. Halve the carrots lengthwise if they are quite large.
  • Heat the olive oil in a large 12-inch skillet over medium-high heat. Arrange the carrots in the pan in a single layer. Sprinkle with chopped onion, kosher salt, and freshly ground pepper.
  • Reduce heat to medium-low. Cover and cook for 15 minutes. Turn the carrots and continue cooking for about 15 minutes longer, or until fork-tender. The liquid should have cooked off and the carrots should be showing some caramelization at the end of the cooking time.
  • Sprinkle the ​carrots with the fresh herbs. Squeeze 2 of the orange wedges over the carrots.
  • Toss to coat thoroughly and serve with remaining orange wedges.

1 teaspoon salt, or to taste
1 teaspoon pepper, or to taste
2 to 3 teaspoons fresh Italian flat-leaf parsley, finely chopped

This dish is inspired by a roasted carrot antipasto I recently sampled at Oliveto Cafe in Oakland, Calif. The roasted carrots were tossed with lots of parsley and thyme, and I loved the way those bitter herbs offset the sweetness of the carrots.

2 pounds carrots, peeled quartered or cut into sixths lengthwise depending on the size, then into 2-inch lengths
3 tablespoons extra virgin olive oil
Salt
freshly ground pepper
1 teaspoon fresh thyme leaves, chopped
1/2 teaspoon oregano
3 tablespoons finely chopped flat-leaf parsley

Steps:

  • Preheat the oven to 400 degrees. Oil a sheet pan or a baking dish large enough to fit all of the carrots in a single layer. Place the carrots in a large bowl, and toss with the olive oil, salt, pepper, thyme and oregano.
  • Spread in an even layer in the prepared pan or baking dish. Cover with foil, and place in the oven for 30 minutes. Uncover, and if the carrots are not yet tender, turn the heat down to 375 degrees and return to the oven for 10 to 15 more minutes until tender. Looking for new ways to enjoy my vegetables without adding a lot of calories, I came upon this lovely side. Lemon gives these a nice zip the basil a sweet herbal note. add a nice touch, they remain soft enough to pair this with lots of dishes. For a 0 point, I've also made this with Butter Buds.

1 cup zucchini, sliced 1/4 inch thick
1 tablespoon lemon juice
1/2 teaspoon dried basil

Steps:

  • Begin by bringing water in a large pot to boil; reduce to a bubbling simmer.
  • Place carrots in a steamer basket above the water, cover and steam for 3-5 minutes. You should be able to pierce the carrots with a fork but experience some resistance.
  • Place the zucchini over the carrots; recover and steam an additional 3-5 minutes until you reach the desired doneness.
  • Place the vegetables into a serving bowl and top with the butter, lemon juice, basil and garlic podwer. Toss until the flavors are well mixed.
  • Serve immediately.

Steps:

  • Heat butter & oil in large skillet over low heat. Add onion and garlic, cover and cook until onion is translucent, about 10 minutes, stirring occasionally. Add carrots, increase heat to medium-low and cook, uncovered, 5 minutes. Add wine and bay leaves. Cover and cook 10 minutes. Add remaining ingredients. Increase heat to medium high and cook, uncovered, until carrots are crisp tender and liquid has evaporated, 5-10 minutes. Adjust salt and pepper. Serve immediately. Carrots can be prepared ahead of time and reheated with a small amount of wine.

  • Remove the carrots from the oven. FOR SAVORY CARROTS: Toss with fresh herbs and serve immediately. FOR SWEET CARROTS: Whisk together honey, melted butter, and cinnamon in a small bowl until smooth. Drizzle over the carrots and toss. Serve immediately.
