JULIA CHILD'S HERB BISCUITS

This is one of the first recipes I made by Julia Child and I still use it often. I like using these for a brunch or stuffed with ham & cheese for breakfast on the go.

3 cups all-purpose flour
2 teaspoons salt
4 teaspoons baking powder
1 teaspoon baking soda
8 tablespoons chilled shortening
4 tablespoons chives, minced
4 tablespoons parsley, minced
2 eggs, beaten
1 1/2 cups buttermilk

Steps:

  • Combine all dry ingredients in large bowl.
  • Cut in the shortening.
  • Add minced herbs.
  • Stir in the eggs& buttermilk.
  • Turn onto a floured surface& knead mixture briefly.
  • Pat or roll out to 1/2" thickness& cut into rounds.
  • Bake on an ungreased baking pan at 450 degrees for 10-15 minutes.

2 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
1 tablespoon baking powder
1/4 teaspoon black pepper
4 tablespoons cold unsalted butter, cut into small pieces
2 tablespoons finely chopped fresh parsley
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh sage
3/4 cup buttermilk, plus
2 tablespoons buttermilk
melted butter (for brushing)

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large bowl, combine the flour, salt, baking soda, baking powder, and pepper.
  • Using a pastry cutter or your fingertips, work in the pieces of butter into the flour until; the dough is crumbly and resembles small peas.
  • Add the herbs and the buttermilk (a bit at a time), stirring just to blend well.
  • Place the dough on a lightly floured surface, and press into and circle about 1/2-inch thick, with your fingers.
  • Cut biscuit shapes with a biscuit cutter or a floured glass, placing them on an ungreased baking sheet.
  • Gently reshape the dough, and repeat until no more dough is left.
  • Brush the tops of the biscuits with a small amount of melted butter and bake in a preheated oven for 18-20 minutes or until golden brown.
  • Serve warm, with pats of butter or cheese spread, if desired.
  • Note: Biscuits can be made in advance, and rewarmed easily; or left just a few minutes underbaked, frozen, then finished in the oven to thaw and cook nicely till done.

Easy to make using packaged dough, it tastes homemade when prepared with the herbed butter. Can be doubled for larger groups.

1 (12 ounce) package refrigerated buttermilk biscuit dough
1/2 cup melted butter
1 1/2 teaspoons dried parsley
1 1/2 teaspoons dried dill weed
1/4 teaspoon dried onion flakes

Steps:

  • In a medium bowl, blend melted butter with the dried parsley, dill weed, and onion flakes.
  • Cut buttermilk biscuits into quarters. Roll each biscuit quarter in herb butter. Place in 8 inch cake pan, with pieces touching. Pour remaining butter over biscuits.
  • Bake in a 425 degree F (220 degrees C) oven for 12 minutes. Serve warm.

These are made with refrigerated biscuits, all dressed up with some butter and seasoned with onion, garlic, basil/dillweed, poppy seeds and parmesan cheese. Not gourmet, but sometimes you need something quick and easy!

3 tablespoons butter, melted
2 garlic cloves, minced
1 tablespoon onion, instant minced
1 teaspoon dried dill or 1 teaspoon basil
1 teaspoon poppy seed
1/4 cup parmesan cheese, grated
1 (10 ounce) can refrigerated buttermilk biscuits

Steps:

  • Pour the melted butter into an 8-inch round cakepan. Sprinkle onion, garlic, basil or dillweed, and poppy seeds evenly over the butter. Set aside.
  • Place the Parmesan cheese in a large heavy duty, zip-lock plastic bag. Cut each biscuit into 4 pices; add the biscuit pieces to the bag and shake them to coat.
  • Arrange the coated biscuit pieces in the prepared pan; I like to turn mine over a bit so all sides have a little bit of the seasoning. Sprinkle with any remaining Parmesan cheese from the zip-lock bag.
  • Bake at 400 degrees for 14 to 16 minutes or until golden brown.

2 1/4 cups buttermilk baking mix
2/3 cup milk
1 tablespoon sugar
1 1/2 teaspoons Italian seasoning
1/4 teaspoon paprika
1/3 cup grated Parmesan

Steps:

  • Preheat oven to 450°F. Place butter in 9x13-inch baking dish. Heat in oven until butter melts. Stir baking mix, milk and sugar in large bowl until soft dough forms. Transfer dough to lightly floured surface. With floured fingertips, pat out dough to 9x13-inch rectangle.
  • Using sharp knife, cut dough into thirteen 1-inch-wide strips. Cut strips in half crosswise. Place strips evenly atop butter in pan. Sprinkle with Italian seasoning and paprika, then with grated Parmesan. Bake until golden brown, about 20 minutes. Recut strips and serve hot.
