Herbal Tea | Herbal Chai image

Indian Herbal Tea is made from herbs, ginger, cardamom and lemongrass. This Herbal Chai can definitely become your cup of goodness to begin a day with.

Number Of Ingredients 9

4 cups water
3 to 4 teaspoons black tea powder ((tea dust) or 3 to 4 black tea bags, optional - for using tea leaves, check notes no 2)
1 inch ginger (for a milder taste and 2 inch ginger for a stronger flavor. it should be peeled, washed and either crushed or grated.)
2 to 3 green cardamoms (- crushed or powdered in a mortar-pestle (optional))
1 lemongrass stalk
3 to 4 mint leaves
3 to 4 holy basil leaves ((tulsi) - optional)
½ to ¾ cup milk (or soy milk, cashew milk or almond milk - add more or less as per your taste, optional)
8 teaspoons raw sugar (or regular sugar or any sweetener of choice, add more for more sweetness)

Steps:

  • In a kettle pan or saucepan, add the water. Peel the ginger and then crush the ginger and cardamom in the mortar-pestle. This is important otherwise you won't get the flavor of ginger and cardamom in the tea.
  • Add the crushed ginger and cardamoms to the water.
  • Add the lemongrass in the water. I usually cut it into many pieces. So chop them and add to the water.
  • Also, add the mint leaves and holy basil leaves to the tea.
  • Boil this water and herb mixture for 7 to 8 minutes or till the color of the water changes to a mild yellowish hue. This change of color of the water will be due to the ginger releasing its juices and flavors in the water.
  • Add sugar or your preferred sweetener and simmer for 1 to 2 minutes more. You can choose to omit the sugar if you prefer.
  • Now, add the tea powder or tea bags and simmer for 2 to 3 minutes or till the water gets a deep hue of red. Tea powder or tea bags can be omitted to make a herbal tisane.
  • Add milk. Simmer the tea for 2 to 3 minutes if you are using regular milk or soy milk. Skip the milk if you prefer.
  • If you are using almond milk or cashew milk, then just stir the milk with tea and remove from the kettle. Heating further would cause the cashew or almond milk to become slimy and split.
  • Strain the Herbal Tea through a strainer right into the cups.
  • Serve the Herbal Chai hot as is or pair with snacks.

Authentic Homemade Indian Chai image

An actually-authentic Indian Chai tea recipe, as made for me by my lovely Indian mother-in-law. Tea the Indian way is rich and milky, deeply coloured, steaming hot, flavourful and sweet.

8 oz water
4 oz whole milk
granulated sugar (to taste (about 2 heaped teaspoons per serving, traditionally))
1 heaping tablespoon of black tea (empty out tea bags to make a tablespoon if you don't buy loose leaves)
4 cardamom pods (smashed with side of a knife)
small piece of cinnamon stick
1/4 " coin of fresh ginger
pinch of fennel seeds (about 10 seeds)

Steps:

  • Bring water and milk to a simmer with desired spices in a medium saucepan. Reduce heat to lowest setting and add tea. Steep until tea takes on a deep, pinky-tan colour, about 3 minutes, stirring occasionally. Strain into a cup and stir in sugar to taste.

A healthy drink, without caffeine, it is known to relieve cramps, coughs, and poor digestion. Combine any or all of the following herbs, as desired. To save time, grind larger quantities of different herbs and spices for use as needed.

3 1/2 cups cold water
2 teaspoons fennel seeds
2 green cardamom pods
1/2 inch cinnamon stick
2 peppercorns
2 cloves
1/2 inch ginger
1 tablespoon fresh mint leaves (or 1 teaspoon dried leaves)
6 -8 leaves sacred basil (Tulsi)
honey or sugar
milk (to taste)

Steps:

  • Crush all the herbs and spices coarsely.
  • Boil the water with the herbs.
  • (Put ¾ teaspoon herbs for 1 cup water.) Simmer for 15 to 20 minutes, covered.
  • Strain; serve hot with milk and honey (or sugar) to taste.
  • Variation: Let the tea cool down.
  • Add honey (or sugar) to taste and serve cold on ice, garnished with thin lemon slices.

  • Crack the cardamom pods, cloves, and peppercorns (if you are using them) and put them in a saucepan or teapot. Add thinly sliced ginger, cinnamon sticks, and black tea. Add star anise and fennel seeds if you want to use them. Add the water.
  • Bring to a low boil and cover. Steep on low heat for at least 10 minutes. If you want a stronget infusion, keep the chai on very low heat for an hour or two.
  • Add milk and sugar. Stir it while heating until it’s simmering hot again. Simmer for a few minutes to allow the milk to bring out the oil from the spices.

  • To make mix, add all spices to a small jar and shake or stir thoroughly to combine. Will keep at room temperature up to 3 months. Or you can store it in the refrigerator if you prefer. Double the recipe if you intend to use it daily (it goes fast!).
