CREAM CHEESE & HERB STUFFED CHICKEN BREASTS
This is a versatile recipe using your favorite herb with cream cheese, sandwiched in a chicken breast half, then breaded and baked for 30 minutes. Presto, quick and delicious dinner! I like oregano; sage or basil are other possibilities. Try 'em all!

- Preheat oven to 350 degres F.
- Flatten open chicken breasts; spread 1 tablespoon of cream cheese on one half of each breast (resist the temptation to use more-- a little cream cheese goes a looooooong way!).
- Evenly distribute the fresh herbs on top of that and season with salt and pepper.
- "Fold"the chicken breasts back up and press tightly, tucking in cream cheese a bit.
- In a shallow dish, combine the 1/2 teaspoons salt and pepper, paprika and flour.
- In another dish, pour the beaten egg mixture.
- In a third dish, combine bread crumbs, garlic powder and Parmesan cheese.
- First dip chicken breasts in flour mixture, then beaten egg mixture, then bread crumb mixture.
- Place chicken on a lightly greased baking sheet, drizzle about a tablespoon of melted butter on each breast and bake, uncovered, for 30 minutes or until cooked through and tender.

- Heat gas or charcoal grill. In medium bowl, stir together cheese, olives, onions and oregano. Place chicken breasts flat on cutting surface. Cut a lengthwise slit in each chicken breast forming a pocket, keeping other 3 sides intact. Stuff each chicken with cheese mixture; secure with toothpicks. Brush chicken with oil; sprinkle with salt and pepper.

GRILLED CHICKEN BREASTS STUFFED WITH HERB BUTTER

- Prepare charcoal or gas grill; heat should be medium-high and rack about 6 inches from fire; keep part of grill cool for indirect cooking. In a small bowl, use a spoon or fork to combine butter and herbs, or use a mini food processor.
- With sharp-bladed knife, cut a 2- to 3-inch slit in deepest part of chicken. Fill with as much herb butter as possible; rub some under skin as well. Sprinkle chicken with salt and pepper and brush with oil.
- When grill is ready, put chicken skin-side up on cool side of grill. After some fat has been rendered, turn chicken; if it flares up, move to an even cooler part of fire or turn so skin side is up again. When skin has lost its raw look and most of the fat has been rendered, after 20 minutes or so, move chicken directly over fire. Cook, turning now and then, until both sides are browned and flesh is firm and cooked through, 5 to 10 minutes longer. Serve hot, warm or at room temperature, with lemon wedges.

- In a blender combine the parsley, rosemary, thyme, sage, garlic, oil, vinegar and salt and pepper to taste. Blend together. Place chicken in a nonporous glass dish or bowl and pour blended marinade over the chicken. Cover dish and refrigerate to marinate for at least 2 hours or up to 48 hours.
- Preheat grill to medium high heat OR set oven to broil.

LEMON AND HERB MARINATED GRILLED CHICKEN THIGHS

- In a small bowl combine the lemon juice and zest, chopped herbs, garlic, crushed red pepper, and 1/2 cup of olive oil. Whisk to combine.
- Place the chicken thighs in a wide flat dish so they are in a single layer. Add the herb mixture. Massage the thighs to coat with the herb mixture. Cover and refrigerate overnight. Note: If doing a quick marinade, leave the chicken out of the fridge for up to 1 hour.
- Preheat grill. Brush and oil the grill to clean.
- Remove the chicken from the marinade and brush off any excess herbs and oil. Season the chicken generously with salt and drizzle with a little bit of fresh olive oil.
- Cut the 2 whole lemons in half and cut the tips off the ends; this will allow the lemons to stand up without rolling around. Place the chicken, skin side down, on the preheated grill. Place the lemons, flesh side down, on the preheated grill. Grill the chicken for 3 to 4 minutes and then rotate the chicken 90 degrees to create the lovely crosshatch pattern. Grill the chicken for another 3 to 4 minutes. Turn the chicken over and grill for another 4 to 5 minutes. Check for doneness (the chicken should be well cooked). Check the lemon halves to see if they are beautifully caramelized. Turn over to grill on the bottom for 2 to 3 minutes.

- Move one rack to the upper third section of the oven (ensure you have enough room for your whole chicken and pan) and then preheat the oven to 400° F. If using a grill, heat to 400° F.
- Grate the potatoes into hash brown size. Wrap in cheesecloth and squeeze to wring out the water in the potatoes. Transfer to a paper towel.
- Heat olive oil over medium-high heat in a large cast iron skillet. Add onions and cook until softened. Add the butter to skillet with the onions over medium heat. Drop in the hash brown potatoes and season with kosher salt, black pepper, chopped rosemary, parsley, and thyme. Stir and cook for about 2 minutes. Add minced garlic and stir in for about 30 seconds to 1 minute. Remove the potatoes and onions quickly and transfer to a plate to cool.
- Place the whole chicken on a clean work surface. Starting near the tail end of the bird, breast side up, gently loosen the skin from the meat with your fingers. Be careful not to puncture the skin (but it's ok if you do). Continue to move your fingers under the skin of the breast to release it. Rotate the bird so that the neck is facing you and do the same thing under the neck to the breasts.
- Using your fingers, carefully stuff the potato mixture under the skin starting at the neck to the breasts and then from the tail to the breasts. Gently press down on top the the skin to flatten out the potatoes a bit. RECIPE NOTE: You may be tempted to fill the inside of the chicken with any leftover potatoes you have that don't fit under the skin but just leave it empty. This will allow the heat to fill within the cavity of the chicken for an even and slow cook that only takes about an hour for the entire bird.
- Brush or rub (with your clean hands) olive oil over the chicken; season with kosher salt and black pepper to your preferred liking.
- Heat the cast-iron skillet over medium heat and carefully place the whole chicken in the pan breast-side down. Allow it to brown for about 3 to 4 minutes. Gently turn the chicken over so the browned chicken breasts are facing up.
- Transfer the cast-iron skillet to the preheated oven (or grill) and cook for an hour (or longer) or until the internal temperature reaches 160° to 165°. Test the internal temperature of the chicken using a meat thermometer inserted into the thickest part of the thigh without touching a bone. The time to reach this temperature will depend on the size of the bird. Cool for about 10 minutes prior to cutting and serving.
