2 pounds gold potatoes
1 cup beef broth
4 tbsp cream cheese
4 tbsp unsalted butter
4 tbsp roasted garlic
4 tbsp fresh herbs (minced (basil, chives, rosemary, oregano, etc))
2 tsp salt
freshly ground pepper

Steps:

  • Clean potatoes and cut into 1-inch sized pieces. Cook in covered pot over medium heat in broth until very tender, about 30-40 minutes. Alternatively, cook on high pressure in electric pressure cooker for 12 minutes.
  • Add cream cheese, butter, roasted garlic, herbs, salt and pepper to cooked potatoes and mash together until well blended. Add additional salt and pepper, if needed.

5 pounds Yukon gold potatoes, peeled and cubed
4 cloves garlic, peeled and smashed
kosher salt
1 cup whole milk or heavy cream
1 1/2 sticks (12 tablespoons) salted butter, at room temperature
8 leaves fresh sage, 6 whole leaves + 1 Tbsp chopped)
3 sprigs fresh thyme
3/4 cup crème fraîche
fresh black pepper
chopped fresh chives, for serving

Steps:

  • 1. In a large pot of cold water, bring the potatoes and garlic to a boil. Salt the water and cook until the potatoes are tender, about 20 to 30 minutes.2. Meanwhile, heat the cream, 4 tablespoons butter, 1 tablespoon chopped sage, and the thyme sprigs over medium heat until the butter has melted. Remove from the heat and let the herbs sit in the warm cream until the potatoes are done. Remove the thyme sprigs before adding to the potatoes. 3. Drain the potatoes, return the potatoes to the pot and mash over low heat, or mash in the bowl of stand mixer fitted with the paddle attachment. Add the herbed cream and crème fraîche. 4. In a skillet, melt 6 tablespoons butter and the sage leaves over medium heat until just browned. The butter will melt, foam and froth, then begin to brown along the bottom. Whisk browned bits off of the bottom of the pan. Remove the sage leaves. Pour the browned butter into the warm mashed potatoes. Taste and season with salt and pepper.5. Serve the potatoes warm, topped with the remaining 2 tablespoons butter, sage and fresh chopped chives.

6 large Yukon gold potatoes
1 cup carnation milk (evaporated milk) (warmed whole or 2%; plus 2 or more tablespoons)
1/2 tbsp kosher salt (to taste)
1/4 cup butter
3-4 cloves garlic (kept whole)
2 sprigs rosemary (fresh)
2 sprigs thyme (fresh)

Steps:

  • Using a paring or steak knife, peel the skin from each potato. Chop the potatoes into cubes about 1-1/2 inch thick and place in a large pot of cold water. Make sure the water level is at least a few inches above the potatoes. Add salt and boil until potatoes become fork-tender about 25 to 30 minutes. Pierce a few potatoes with a fork and if the fork cuts through the potato smoothly they're done. If not, continue to cook. You do not want under-cooked potatoes.
  • Use a colander to drain the potatoes from the boiling water. Allow the potatoes to sit in the colander until they're completely drained. This may take a few minutes.
  • Meanwhile, make the butter herb mixture. Melt butter in saute pan. Add fresh herbs and garlic until fragrant. Then, remove garlic and fresh herbs from the melted butter and discard. In a separate pot, heat the canned carnation milk.
  • Place the drained potatoes in a large bowl and begin mashing them with either a sturdy wire whisk or potato masher. Add the heated carnation milk and melted butter mixture. Continue mashing until smooth and season with kosher salt.
  • Garnish with extra melted butter and fresh herbs (optoinal) and serve.

  • Meanwhile, in a large pot, cover the potatoes with water and bring to a boil. Add a generous pinch of salt and simmer over moderate heat until tender, about 20 minutes. Drain well, then pass the potatoes through a ricer into the pot. Fold in the cream mixture and season generously with salt and pepper.
  • Light the broiler and position the rack 8 inches from the heat. Scrape the potatoes into a 12-inch round flameproof pan or baking dish (2 inches deep) and, using a spoon, decoratively swirl the top. Gently brush with melted butter. Broil for about 8 minutes, until the top is browned in spots. Serve hot.
