CHERRY TOMATO SALAD

Cherry Tomato Salad image

Recipe video above. This fresh, juicy tomato salad brings together two of the greatest flavour combinations known to mankind - tomato and basil! Make this with cherry tomatoes or grape tomatoes, or even normal tomatoes cut into chunks. The vinaigrette is slightly thickened with mustard so it clings to the tomato better, and a touch of red onion provides some much needed freshness.

Provided by Nagi

Categories     Sides     Vegetables

Number Of Ingredients 7

750g/ 1.5lb cherry tomatoes or grape tomatoes ((or large tomatoes))
1/2 red onion (, finely sliced)

MARINATED MOZZARELLA TOMATO SALAD

Marinated Mozzarella Tomato Salad image

The most delicious summer salad! This marinated mozzarella tomato salad is quite possibly the best summer salad I've ever eaten! Loaded with garlic and herb marinated mozzarella, ripe summer tomatoes, fresh basil, and a healthy drizzle of balsamic glaze!

Provided by Marzia

Categories     Dinner

Time 2h10m

Number Of Ingredients 9

⅓ cup basil, chopped or torn
½ cup extra virgin olive oil
2 teaspoons lemon juice
2 small cloves garlic (or 1 large), grated
¾ teaspoon Maldon salt
¼ - ½ teaspoon red pepper flakes
2 (8-ounce) pearl mozzarella (small ball sized)
1 ½ pounds cherry tomatoes (or quartered plum tomatoes)
Prepared balsamic glaze (store-bought or homemade, see notes)

Steps:

  • MARINATE: Combine the olive oil, lemon juice, grated garlic, salt, red pepper flakes in a bowl and stir until mixed. Add 1 -2 torn basil leaves to the mix along with the mozzarella. Cover and allow to sit at room temperature for at least 1 hour and if possible, cover and refrigerate for 24-36 hours.
  • TOMATOES: An hour before serving, add the tomatoes to a medium bowl. Remove the mozzarella from the marinade and add to the tomatoes (don't toss out the oil!) Add the torn basil leaves, along with another big pinch of Malden salt and drizzle roughly 2 tablespoons of the oil on top and toss to combine. Allow the salad to marinate for 1 hour before serving. Taste and adjust with additional marinade oil or salt if the salad needs it before serving. Drizzle with homemade balsamic glaze and serve!

Marinated tomatoes are effortless side dish that pairs with almost everything! We love it with anything that comes out of the BBQ grill. Tomato packs a punch of flavors by marinating it in olive oil, vinegar and herbs!

Provided by Jyothi Rajesh

Categories     Appetizer     Side Dish     side salad     Sides

Number Of Ingredients 10

1 pound ripe tomato
½ red onion
1 garlic clove
¼ cup olive oil
2 tablespoon red wine vinegar (balsamic vinegar will also work)
½ lemon juice
1 teaspoon fresh basil
1 teaspoon fresh parsley
Sea salt to taste
Freshly ground Pepper

Steps:

  • Recipe starts with the freshest juiciest tomatoes. Tomatoes from the farmer's market or your garden is best. You can use any ripe tomato cherry tomato, beefsteak tomato, heirloom tomato or the most common roma tomatoes.
  • Cherry tomatoes can be cut into halves or quarters. Heirloom or beefsteak tomatoes can be sliced into 1/3 inch thick slices. I use Italian tomatoes in the recipe.
  • Arrange sliced tomatoes on a large plate.
  • To make the marinade mix together olive oil, red wine vinegar, lemon juice, fine diced onion, minced garlic, finely chopped basil and parsley, sea salt and freshly cracked pepper to taste in a bowl. Whisk it thoroughly.
  • Pour the marinade over sliced tomatoes.
  • Spread the marinade evenly.
  • Cover and marinate tomatoes at least for 2 hours before serving, toss (flip tomatoes) it occasionally. Tomatoes can be marinated for up to 2 days refrigerated. Longer tomato rest in the refrigerator, softer it will get. Best to consume this salad within 8 hours.
  • Serve with your favorite meal.
  • All the marinade leftover from the tomatoes can be re-used in soups or stews or can also be drizzled over salad as dressing.
