Roast Turkey with Herb Butter image

Getting a great-tasting turkey on the Thanksgiving table is easier than you might think. Here, the bird is rubbed with a flavorful mixture of butter and fresh rosemary, sage, and thyme before going into the oven. Use the roasted vegetables and turkey neck to make Rich Gravy.

5 tablespoons unsalted butter, room temperature
1 tablespoon each chopped fresh rosemary, sage, and thyme
Kosher salt and freshly ground pepper
1 whole turkey (about 12 pounds), thawed if frozen, rinsed and patted dry, neck reserved (set aside giblets for stuffing, if desired)
Cornbread And Sausage Stuffing
4 to 6 large carrots, halved crosswise
2 large onions, cut into 8 wedges
2 stalks celery, halved crosswise

Steps:

  • Preheat oven to 350 degrees with rack in the lowest position. Make herb butter: In a small bowl, mix together 4 tablespoons butter with chopped herbs; season generously with salt and pepper.
  • Prepare and stuff the turkey. Loosen skin: Working from the neck end, slide fingers under skin until you reach the end of the breast, being careful not to tear the skin; rub herb butter under the skin. Fill neck cavity: Place turkey breast side down. Fill neck cavity with stuffing; avoid packing. Close up by folding skin over and fastening with skewers or trussing needles. Tuck wings: Turn turkey over; bend wing tips underneath bird so they stay in place (you may have to break the bones). Loosely fill large cavity with stuffing. Tie legs: Using cotton kitchen twine, tie legs together securely (they will overlap) so bird retains its shape and moisture during cooking.
  • Cut neck into pieces; mix with carrots, onions, celery, and 2 cups water in a large roasting pan. Set roasting rack over vegetables in pan.
  • Lift turkey onto rack; rub with remaining tablespoon butter. Season generously with salt and pepper. Tent turkey loosely with foil. Roast 1 hour, then baste every 30 minutes with pan liquids, until an instant-read thermometer inserted into the thickest part of thigh (avoiding bone) registers 125 degrees, about 3 hours.
  • Remove foil; raise oven heat to 400 degrees. Continue roasting, basting occasionally, until thigh reaches 180 degrees, 45 to 60 minutes more. Tent with foil if bird browns too quickly; add more water if pan becomes dry. Transfer turkey to a serving platter; cover loosely with foil, and let it rest at least 30 minutes before carving.

1 (17-pound) whole fresh turkey, rinsed well and patted dry
1 1/4 stick unsalted butter, slightly softened
2 tablespoons finely chopped fresh sage
2 tablespoons finely chopped fresh rosemary
2 tablespoons finely chopped fresh thyme leaves
3 tablespoons finely chopped fresh flat leaf parsley
Salt and freshly ground black pepper
3 large carrots, cut into 1-inch pieces
3 large stalks celery, cut into 1-inch pieces
2 large onions, quartered
8 cups homemade chicken stock, divided, plus more if needed for gravy
Turkey neck
1/4 cup fresh sage leaves
3 tablespoons unsalted butter
3 tablespoons flour
1 cup white wine
4 cups sage-infused stock
Salt and freshly ground black pepper
1 tablespoon finely chopped fresh sage

Steps:

  • For the turkey: Remove the turkey from the refrigerator 1 hour before roasting.
  • Combine the butter, sage, rosemary, thyme, and parsley in a food processor and process until smooth. Season with salt and pepper.
  • Preheat the oven to 450 degrees F.
  • Season the cavity of the turkey with salt and pepper and fill the cavity with half of the carrots, celery, and onion. Rub the entire turkey with herb butter and season liberally with salt and pepper.
  • Put 4 cups of the chicken stock in a medium saucepan and keep warm over low heat.
  • Place the remaining vegetables on the bottom of a large roasting pan. Put the turkey on top of the vegetables, put in the oven, and roast in the oven until lightly golden brown, 45 minutes. Reduce the heat to 350 degrees F and continue roasting, basting with the warm chicken stock every 15 minutes, until an instant-read thermometer inserted in the thigh registers 160 degrees F, about 2 to 2 1/4 hours longer. Remove the turkey from the oven, transfer to baking sheet and tent loosely with foil, and let rest 20 minutes before slicing.
  • For the sage gravy:
  • Strain the cooking liquid from the roasting pan into a medium saucepan (should be about 4 cups, if not, add more stock to make 4 cups). Add the neck, bring to a boil, add the sage leaves, remove from the heat, and let steep for 15 minutes. Remove the sage leaves.
  • Melt the butter in a medium saucepan over medium-high heat. Add the flour and cook for 1 minute. Add the wine and cook until reduced. Whisk in the stock and cook until thickened and smooth, about 5 minutes. Season with the salt and pepper and chopped sage.

1 bone-in, skin-on turkey breast ((about 2 - 2 1/2 lbs))
8 garlic cloves ((minced))
1 stick unsalted butter
1 Tbsp rosemary ((fresh, finely chopped))
1/2 tsp dry thyme ((finely ground))
1/2 tsp black pepper ((finely ground))
2 tsp kosher salt

Steps:

  • Preheat the oven to 325F.
  • In a microwave-safe bowl, combine the butter, 1 teaspoon of kosher salt, garlic, rosemary, pepper and thyme.
  • Microwave the ingredients on high for 1 minute, or until the butter has fully melted. Remove the bowl from the microwave oven. Mix all ingredients really well and set aside for 5 minutes so the butter gets infused with the garlic and herbs.
  • Return the bowl back to the microwave oven and cook the mixture on high for another 30 seconds to ensure that the butter is fully liquefied.
  • Strain the butter mixture through a fine sieve. Save the garlic and the herbs.
  • Place the turkey breast in a baking dish, skin side up. Cover with a piece of plastic wrap to prevent the butter from accidentally squirting all over the kitchen. Fill the kitchen injector with the strained butter and inject the breast all over, in a diamond pattern, releasing about 1/4 - 1/3 of an ounce at a time.
  • Add the garlic and herbs that you saved earlier. Rub the garlic and herb mixture and the butter from the bottom of the baking dish all over the turkey breast.
  • Evenly sprinkle 1 teaspoon of kosher salt all over the breast and pat it down to make sure the salt sticks.
  • If using a BBQ thermometer (highly recommended), insert the probe into the thickest part of the turkey breast and connect to the thermometer.
  • Bake at 325F for about 1 hour or so, until the internal temperature in the thickest part of the breast reaches 155F. Brush the top of the breast with pan juices about 1 hour into roasting.
  • Remove from the oven and let the roasted turkey breast rest for 5 minutes before slicing and serving.

2 tablespoons (1/4 stick) unsalted butter
2 pounds turkey necks and/or wings
2 cups diced onions
1 cup diced peeled carrots
1 cup diced celery
6 cups (or more) low-salt chicken broth
Turkey
1 cup (2 sticks) butter, room temperature, divided
2 teaspoons minced fresh thyme plus 15 fresh thyme sprigs
2 teaspoons minced fresh tarragon plus 5 large fresh tarragon sprigs
2 teaspoons minced fresh rosemary plus 5 fresh rosemary sprigs
2 teaspoons minced fresh sage plus 5 fresh sage sprigs
1 14- to 16-pound turkey
4 cups low-salt chicken broth, divided
1/4 cup all purpose flour

Steps:

  • For gravy base:
  • Melt butter in heavy large deep skillet over high heat. Add turkey necks and/or wings and sauté until deep brown, about 15 minutes. Add onions, carrots, and celery and sauté until vegetables are deep brown, about 15 minutes. Add 6 cups chicken broth and bring to boil. Reduce heat to medium-low and simmer uncovered 45 minutes, stirring occasionally.
  • Pour gravy base through strainer set over 4-cup measuring cup, pressing on solids to extract liquid. If necessary, add enough chicken broth to gravy base to measure 4 cups. (Gravy base can be prepared 2 days ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep chilled. Rewarm before using.)
  • For turkey:
  • Mix 1/2 cup butter and all minced herbs in small bowl; season herb butter with salt and pepper. Transfer 2 generous tablespoons to another small bowl and reserve for gravy; let stand at room temperature.
  • Set rack at lowest position in oven and preheat to 425°F. Rinse turkey inside and out; pat dry. Starting at neck end, slide hand between skin and breast meat to loosen skin. Rub 4 tablespoons herb butter over breast meat under skin. Place turkey on rack set in large roasting pan. Sprinkle main cavity generously with salt and pepper. Place 4 tablespoons plain butter and all fresh herb sprigs in main cavity. Tuck wing tips under. Tie legs together loosely. Rub remaining herb butter over outside of turkey. Sprinkle turkey generously with salt and pepper.
  • Place turkey in oven and roast 20 minutes. Reduce oven temperature to 350°F. Roast turkey 30 minutes; pour 1 cup broth over and add 1 tablespoon plain butter to roasting pan. Roast turkey 30 minutes; baste with pan juices, then pour 1 cup broth over and add 1 tablespoon butter to pan. Cover turkey loosely with foil. Roast turkey until thermometer inserted into thickest part of thigh registers 175°F, basting with pan juices and adding 1 cup broth and 1 tablespoon butter to pan every 45 minutes, about 1 hour 45 minutes longer. Transfer turkey to platter; let stand 30 minutes (internal temperature will rise 5 to 10 degrees).
  • Strain pan juices into bowl; whisk in gravy base. Melt reserved 2 tablespoons herb butter in heavy large saucepan over medium heat; add flour and whisk constantly until roux is golden brown, about 6 minutes. Gradually add pan juice-gravy base mixture; increase heat and whisk constantly until gravy thickens, boils, and is smooth. Reduce heat to medium; boil gently until gravy is reduced to 4 1/2 cups, whisking often, about 10 minutes. Season gravy with salt and pepper.

1 turkey (I used a 20 pounder)
FOR CAVITY:
1 sprig(s) rosemary
1 medium carrot
1/2 medium onion
2 clove garlic
1 stalk(s) celery
1 large Granny Smith apple
FOR INJECTION
1 c chicken broth
1 c apple cider
1/2 tsp poultry seasoning
1/4 tsp each, fresh ground pepper, granulated garlic
1 sprig(s) rosemary
FOR UNDER SKIN:
1/4 stick butter, room temperature - sliced thin
1 large clove garlic, sliced thin
ADDITIONAL SEASONINGS:
1 slice butter
salt, fresh ground pepper, and poultry seasoning

Steps:

  • 1. Thaw turkey in fridge until you can remove the packet gravy mix, livers - etc, thermometer, and that plastic piece that ALWAYS gives me fits trying to take off.
  • 2. For Injection: Place all ingredient in a microwave-safe bowl EXCEPT cider. Microwave for 2 minutes.
  • 3. Let rosemary steep in the hot liquid about 10 minutes.
  • 4. Add the cider, then place in the refrigerator. This is an important step - you don't want to inject a cold turkey with hot liquid.
  • 5. Prep your veggies. Core apple and quarter. Remove peel from onion and cut in half. Cut carrot and celery into approx 3-inch pieces. Cut rosemary into 2 smaller sprigs. Smash garlic. At this time I go ahead and slice the other clove of garlic into thin slices. It will basically melt away with the butter under the skin.
  • 6. Place veggies, fruit, rosemary sprigs, and smashed garlic in cavity.
  • 7. Separate the skin from the breast as best you can. For me it makes the job easier to use a long rubber spatula handle to reach further.
  • 8. Place the thin butter slices, and garlic slices evenly under both sides of the breast skin. The spatula handle comes in handy for this as well.
  • 9. Use last tab of butter to spread all over exposed turkey. Sprinkle with salt, pepper, and poultry seasoning. Don't overdo it. You will have a lot of flavor going into the turkey with the injection.
  • 10. With your injector, at even intervals, inject your turkey with the cider, herb, and spice mixture. Be sure to not only inject the breasts but the legs and thighs as well. You probably will not use the entire amount. I had a large turkey and had a little over 1/4 cup left.
  • 11. I chose to use a cooking bag, but if you prefer to baste you can add the remaining liquid to your roasting pan. More juices will accumulate as you go, so you will have plenty of basting liquid to work with.
  • 12. Spray non-stick cooking spray inside the roasting bag and dust with a little flour. Place the turkey in the roasting bag, rinse the roasting pot, and then place back into the roasting pan.
  • 13. Cut six 1/2 inch slits on top of the bag.
  • 14. Bake as recommended. For my turkey size, it is 3 to 3 1/2 hours in the bag. There are many sites where you can find the cooking times for your turkey.
  • 15. After 3 hours, check the temperature. I check on the inside of the leg where the breast meets the thigh, in the upper thigh area. When the temp reaches 165, set aside and allow to rest for at least 30 minutes.
  • 16. This will give you time to bake off your sides, and rolls, before slicing turkey.

2 tablespoons coarse salt
1 teaspoon black pepper
1 orange, halved
1 lemon, halved
1 small yellow onion, peeled and quartered
1 head garlic, halved
6 sprigs thyme
2 sprigs sage
1 tablespoon olive oil
3 cups chicken stock, warm
1/2 cup milk
2 tablespoons flour

Steps:

  • Preheat oven to 425 with rack in lower third position.
  • Season cavity of turkey with 1 tablespoon salt and 1/2 teaspoon pepper. Stuff cavity with orange, lemon, onion, garlic, and herbs. Tie legs with twine and transfer turkey to a rack set inside a roasting pan.
  • Rub skin with olive oil and season with remaining salt and pepper.
  • Pour 2 cups chicken stock into roasting pan and transfer to oven. Roast turkey for 2 1/2 hours or until meat thermometer inserted into thickest part of breast registers 165 degrees. After first hour of roasting, baste turkey every 30 minutes, and tent with foil if skin becomes deep golden brown before turkey is cooked.
  • Remove turkey from oven and transfer to a carving board. Let stand at least 15 minutes.
  • Place roasting pan on stovetop over medium-high heat and bring pan drippings and remaining 1 cup chicken stock to a simmer. Combine milk and flour in a mason jar and shake vigorously to combine. Whisk milk mixture into gravy and simmer, whisking constantly, until gravy thickens slightly, about 2 minutes.
  • Carve turkey and serve with gravy.

  • Remove turkey from refrigerator 1 hour before cooking. Preheat oven to 475 degrees when ready to cook. Rinse the turkey well and then pat the cavities and skin with paper towels to dry. Place the oil, herbs, salt and pepper into a blender and process for 30 seconds. Lift the skin adjacent to the wings and the legs in the front and the back. While pushing gently on the meat, develop cavities in the spaces between the breasts and the legs and wings, then move upward, lifting the skin away from the breast meat. Loose connective tissue is easily divided, and by pressing down on the meat there is less chance of tearing the skin. Free as much of the skin as possible, then add the infused oil, a small amount at a time to the spaces, working it into the cavities between the legs and wings and spreading it evenly over the breast meat. Add some of the oil to the large cavity and distribute the remaining oil over the breasts. Place turkey in roasting pan and cover, baking for 20 minutes. Reduce oven temperature to 250 degrees. Continue cooking the turkey for 20 minutes per pound of meat. Internal temperature should be 170 degrees for breast meat and 180 degrees for thigh meat.
