HERB-CRUSTED MEDITERRANEAN SEA BASS
This whole fish smothered with herbs and buttery breadcrumbs is simple enough to let the flavor of the Mediterranean seafood shine through. If cleaning and prepping the fish for this sea bass recipe isn't your thing, most fish counters at larger markets will do it for you.

- Preheat oven to 350 degrees F.
- Sprinkle the inside of the fish cavity with tarragon and 1/4 teaspoon salt.
- Heat 2 tablespoons oil in a roasting pan over medium-low heat. Add the fish and pour in wine. Bake until the fish is opaque in the center, 40 to 50 minutes.
- Meanwhile, heat the remaining 1 tablespoon oil, butter and garlic in a large skillet over medium heat. Add breadcrumbs, basil, marjoram (or oregano), parsley and the remaining 1/2 teaspoon salt. Cook, stirring often, until the breadcrumbs are toasted, 3 to 4 minutes.
- Score the skin of the fish near the gills and carefully pull it off toward the tail. (Discard the skin.) Spread the breadcrumb mixture over the fish, pressing gently. Return the fish to the oven and bake for 5 minutes.

PAN-FRIED SEA BASS WITH WHITE WINE SAUCE
Coat this sea bass with flour and fry it in butter and olive oil, then use the same liquid to prepare a delicious and simple sauce that will enrich the fish. Add garlic, white wine, and lemon juice. Mix them with fresh parsley and even more butter, this time coated with flour.

Steps:
- Add the flour to a small tray, season with salt and pepper and mix. Coat the sea bass on both sides with flour mixture.
- Melt 1 1/2 tablespoon butter in a skillet over low heat, also adding the olive oil in the process. Fry the sea bass on both sides until golden brown. Set aside on a paper towel to absorb some of the oil.
- Use the same olive oil and melted butter for preparing the sauce. Add the garlic and stir for 1 minute or so. Add the white wine, lemon juice, and fresh parsley, season with salt and pepper, and cook and stir for 1 minute more. Coat the remaining butter with flour and add it to the skillet. Cook and stir until it melts or for 1 minute.
- Serve the fish drizzled with sauce and garnished with thyme sprigs and lemon wedges.

- Preheat oven to 400 degrees Fahrenheit.
- Season fish liberally with salt and pepper. Brush with olive oil.
- Place crushed pistachios on a plate. Coat each fillet in the pistachio crumbs. Place fillets in a baking pan. Bake seven to eight minutes until golden brown.
- Meanwhile, heat olive oil in a small saucepan. Add lemon and white wine. Bring to a simmer and cook for 10 minutes, to thicken slightly.

- Preheat the oven to 230C/gas 8/fan210C. Pat the fish dry with kitchen paper, inside and out. Rub the skin with oil and season with salt and pepper. Lay three-quarters of the lemon slices on a heavy baking sheet and place the fish on top (see tip). Stuff the belly with the remaining lemon, the garlic and plenty of herbs, then season.
- Bake the fish for 30 minutes or until the flesh is opaque at its thickest part - slide a knife into the backbone area to heck.
- To serve, first gently peel the skin back, then lift off a chunk of the back fillet and a chunk of the belly to make one serving: each side should yield 2 portions. Use any lemon slices that are nicely brown, rather than jet-black, as a garnish.FOR THE TARATOR SAUCE
- Put the nuts in a food processor and whizz to a fine powder.Wet the bread, then squeeze out all the moisture. Crumble it into the nuts, add the garlic and whizz to combine thoroughly.
- Add the lemon juice, a pinch of salt and a good grinding of pepper. Start pouring the olive oil in through the feeder tube, in a steady, fine trickle. Once the oil is incorporated, the sauce will be very smooth but rather solid, so add enough water (or stock) to let the sauce down to a thick, creamy consistency.
- Finally, taste the sauce, adjust the seasoning and add a little more lemon juice if necessary.

This recipe comes from a little book called ABC Jiffy Cookery. I've had it for over 50 years. I haven't tried any of the recipes yet. I'm putting them here so I can find them easier.

- Preheat the oven to 375*. Butter an oven dish. Dry the fish and season it well inside and out with salt and pepper. Place it in the buttered dish and spread with onion, parsley, garlic and mushrooms. Dot well with the remaining butter except for the 1 Tblsp. and pour the wine over all.
- Bake 40-45 minutes, basting frequently. Remove the fish to a heated platter. Add the 1 Tblsp. of cold butter to the sauce in the baking dish. Do not heat. Pour sauce over fish without straining.
- Decorate, if desired, with lemon and additional chopped parsley.

HERB ENCRUSTED SEA BASS WITH SUNDRIED TOMATO CHARDONNAY SAUCE
Steps:
- In a flat plate, mix the basil, thyme, peppercorns, and garlic.
- Heat the oil in a large saute pan. Encrust the fish with the fresh spice mix. Saute the fish delicately, about 3 minutes per side.
- Without removing the fillets from the pan, drain off most of the oil. Deglaze the pan with the Cognac. Tilt pan to flambe, allowing the flame to crisp the crust on the fish. Add the stock to extinguish the flambe, and to deglaze further.
- Season with salt and pepper.
- Divide asparagus between two serving plates, arranging the stalks decoratively. Carefully place sauteed fish on top of the asparagus. Drizzle the Sundried Tomato-Chardonnay sauce over and around the fish. Sprinkle the tomato concasse all over the plate. Place a basil bud on top of the fish.
- Heat olive oil in a saucepan, then add peppercorns and shallots. Saute until translucent. Add the wine, bay leaf, lemon juice, and sun-dried tomato, and reduce by 80 percent. With a whisk, 3 to 4 cubes at a time, incorporate butter, making a beurre blanc sauce. Strain through chinois. Keep warm.
SEA URCHIN SAUCE
Steps:
- In a 9-inch saute pan over medium-high heat sweat shallots, garlic, hot pepper and oregano in the olive oil. About 2 minutes, until limp. Add vermouth and chicken stock, reduce this by half. Add sea urchin, cooking for 30 seconds. Whisk in butter, chunk at a time, breaking up urchins as you mix. Add parsley. Season with salt and pepper. Add lobster at the last minute. Toss in sauce, and the pour over spaghetti. Toss with spaghetti. Pasta: Use same dough as for tortelli-cut as spaghetti.
