PRIME RIB ROAST WITH RED WINE AU JUS



Prime Rib Roast with Red Wine Au Jus image

One 6- to 7-pound bone-in prime rib roast
Kosher salt
Coarsely ground black pepper
1 stick (8 tablespoons) unsalted butter
4 cups beef stock
2 cups red wine
1 sprig fresh rosemary, leaves removed from stem and chopped

Steps:

  • Preheat the oven to 450 degrees F.
  • Season the prime rib roast liberally with salt and pepper, then place it on a rack set inside a roasting pan and roast for 30 minutes. Turn down the oven temperature to 350 degrees F and roast until an instant-read thermometer inserted into the thickest part of the roast reads 130 degrees F for medium-rare, about 1 1/2 hours. Transfer the meat to a platter and tent with foil to keep warm.
  • Place the roasting pan on top of the stove. Turn 2 burners to high heat, add the butter to the pan and use a wooden spoon to stir and scrape the bottom of the pan. Add the beef stock and red wine and cook until the liquid is reduced by half, about 20 minutes. Whisk in the rosemary and season with salt and pepper.
  • Slice the meat between the bones into individual steaks and serve each with the red wine au jus.

1 bone-in beef rib roast (6 to 8 pounds)
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
3 cups water
2 small onions, halved
7 garlic cloves, crushed
5 fresh sage sprigs
5 fresh thyme sprigs
2 bay leaves
SAUCE:
2 tablespoons butter
2 shallots, thinly sliced
4 garlic cloves, thinly sliced
5 fresh sage sprigs
5 fresh thyme sprigs
2 bay leaves
1 tablespoon all-purpose flour
2 tablespoons cracked black pepper
1/4 teaspoon kosher salt
1-1/2 to 2-1/2 cups beef stock, divided
1/2 cup dry red wine or beef stock
1/2 teaspoon red wine vinegar
Fresh thyme sprigs, optional

Steps:

  • Preheat oven to 450°. Place roast in a shallow roasting pan, fat side up; rub with salt and pepper. Add 1 cup water, onions, garlic and herbs to roasting pan. Roast 15 minutes., Reduce oven setting to 325°. Roast 3 to 3-1/2 hours longer or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), adding 1 cup water every hour., For sauce, in a large saucepan, heat butter over medium-high heat. Add shallots; cook and stir 5-6 minutes or until tender. Add garlic and herbs; cook 1 minute longer. Stir in flour, pepper and salt until blended. Gradually stir in 1-1/2 cups stock. Remove from heat., Remove roast to a serving platter; tent with foil. Let stand 15 minutes before carving. Meanwhile, strain any pan juices through a sieve into a measuring cup; discard onions and herbs. Skim fat from pan juices. If necessary, add additional stock to pan juices to measure 1 cup. Add to shallot mixture., Place roasting pan over 2 burners; add wine. Bring to a boil; cook 2-3 minutes, stirring to loosen browned bits from pan. Add to sauce. Bring to a boil, stirring occasionally; cook until mixture is reduced to about 1-1/2 cups, 10-15 minutes., Stir in vinegar; strain, discarding shallots and herbs. Serve with roast and, if desired, garnish with thyme.

Add a touch of rustic elegance to your presentation of this prime rib for your holiday dinner. Instead of arranging a garland of herbs around the platter, garnish the sliced roast with a few loose "bouquets" of herbs, such as rosemary, lavender, or thyme, inspired by the herbes de Provence used in the aromatic blend. Rub you're roast the night before, which allows the spices, salt, pepper to absorb into the roast itself, seasoning it throughout. Always let your roast chill uncovered. This air-drying time primes up the exterior for getting very evenly browned and charred in the oven. Temperature is KEY. Starting your roast HIGH and finishing LOW is the way to successfully roast this quality cut of meat.

2 tablespoons extra-virgin olive oil
3 tablespoons herbes de Provence
4 1/2 teaspoons kosher salt, divided
2 1/4 teaspoons black pepper, divided
2 tablespoons butter
1/2 cup minced shallots (from 2 medium shallots)
1 cup (8 oz.) dry red wine
2 cups lower-sodium beef broth (such as Swanson)
2 tablespoons Dijon mustard
Fresh herb sprigs (such as rosemary, thyme, and lavender), for garnish

Steps:

  • Rub rib roast evenly with oil. Stir together herbes de Provence, 4 teaspoons of the salt, and 2 teaspoons of the pepper in a small bowl. Spread mixture evenly over roast. Chill, uncovered, at least 12 hours or up to 24 hours.
  • Let roast stand at room temperature 1 hour. Meanwhile, preheat oven to 450°F with rack in lowest position.
  • Lightly coat a wire rack with cooking spray; set inside a roasting pan. Place roast, bone side down, on prepared rack. Bake in preheated oven on lowest oven rack 45 minutes. Reduce oven temperature to 350°F (do not remove roast from oven). Continue baking until a thermometer inserted in thickest portion of roast registers 120°F to 130°F for medium-rare (about 1 hour, 30 minutes) or 130°F to 135°F for medium (about 1 hour, 45 minutes). Remove from oven; let rest 30 minutes. Transfer roast to a serving platter, and cover with aluminum foil to keep warm. Discard drippings from pan, reserving any browned bits in pan.
  • Place roasting pan on stove-top over 1 burner. Add butter to pan, and melt over medium-high, stirring occasionally and moving pan as needed to prevent hot spots. Add shallots. Cook, stirring occasionally, until tender, 2 to 3 minutes. Stir in wine. Cook, stirring occasionally, until liquid is mostly reduced, about 3 minutes. Stir in broth. Cook, stirring constantly, until thickened, 3 to 4 minutes. Stir in mustard. Cook, stirring constantly, until sauce thickens and reduces to 1 1/2 cups, about 5 minutes. Stir in remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Pour sauce into a serving bowl or gravy boat. Garnish roast with herb sprigs, and serve with sauce.

1 cup dry red wine
1/4 cup balsamic vinegar
2 bay leaves
1 tablespoon finely chopped fresh rosemary
fresh ground black pepper
4 tablespoons unsalted butter
kosher salt
1 (5 lb) boneless beef rib roast, trimmed of excess fat
extra virgin olive oil
2 tablespoons herbes de provence

Steps:

  • Make the sauce: in a large saucepan over high heat, warm the olive oil; add in carrots, celery, and onion; cook until the vegetables begin to brown, 6-8 minutes, stirring occasionally.
  • Add in garlic; cook for 2 more minutes, stirring occasionally.
  • Decrease heat to medium, add in tomato paste; cook about 2 more minutes, stirring occasionally.
  • Add in broth, wine, vinegar, bay leaves, rosemary, and ½ teaspoon pepper; mix well.
  • Bring to a boil over high heat, then decrease heat and let simmer 45 minutes.
