Herb crusted chicken is coated with a lemony mustard mixture and then pressed with a Parmesan breading with fresh basil, parsley and thyme. Make ahead and freeze it for an easy and elegant dinner.

1/4 cup lemon juice
1/4 cup Dijon mustard
1/2 teaspoon pepper
1/2 cup Panko breadcrumbs (preferably whole wheat)
1/2 cup Parmesan cheese (grated)
2 Tablespoons olive oil
1 Tablespoon parsley (chopped)
1/4 cup basil leaves (cut in thin strips)
1 teaspoon fresh thyme
24 ounces chicken breasts (boneless, skinless)

Steps:

  • Preheat oven to 350 degrees F.
  • Combine lemon juice, Dijon mustard and pepper in a small bowl and set aside.
  • Combine breadcrumbs, Parmesan cheese, olive oil, parsley, basil, thyme and 2 Tablespoons of the mustard mixture in a separate bowl. Using a fork, combine the ingredients to form a crumbly mixture.
  • Place chicken in baking dish and brush remaining mustard mixture over the chicken.
  • Using fingertips, press the breading over each chicken breast until completely covered. The bottom is not breaded.
  • Bake uncovered for about 30 minutes or until chicken reaches a temperature of about 165 degrees F.

¾ cup butter
2 cloves garlic, minced
1 cup dry bread crumbs
⅓ cup grated Parmesan cheese
2 tablespoons chopped fresh thyme
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
¼ teaspoon pepper
½ teaspoon salt
6 (4 ounce) skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter with the garlic in a saucepan over medium heat. When the butter starts to bubble, remove from the heat and allow to cool slightly. Stir the breadcrumbs together with the Parmesan cheese, thyme, basil, oregano, pepper, and salt in a bowl. Dip the chicken breasts in the butter, then press into the seasoned bread crumbs. Place the chicken into a 9x13 inch baking dish.
  • Bake in the preheated oven until the chicken is golden brown and no longer pink in the center, 50 to 55 minutes.

YUM! I have a love affair going on with this herb crusted chicken recipe. Not only does the chicken look fabulous on a plate, but it is also super moist, full of flavor from a special herb mix and really tender.

4 chicken breast, boneless skinless
1 tbsp olive oil
1/2 tsp dried rosemary
1/2 tsp dried thyme
1/4-1/2 tsp red pepper flakes (the more you use, the spicier the flavor will be)
1/2 tsp oregano
1/2 tsp kosher salt
1/2 tsp garlic powder
To garnish: fresh rosemary and oregano and lemon wedges

Steps:

  • Preheat the oven to 350º F.
  • Combine the spices together and rub the mixture over both sides of the chicken breasts. Heat the olive oil in a pan over medium heat and cook the chicken for 2-3 minutes on each side until it is nicely browned.
  • Place the seared chicken in an oven proof baking dish and cook for 25 minutes. Check after 20 minutes. You want the internal temperature is 165 º F. Be careful not to over cook, or you will dry out the chicken.
  • Garnish with some fresh rosemary and oregano and drizzle over a little lemon juice, and serve immediately.

4- (6-ounce) boneless chicken breasts
1 tablespoon dried parsley
1 tablespoon dried basil
1 tablespoon dried oregano
1 tablespoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons extra virgin olive oil
1 lemon ((optional))

Steps:

  • Using a meat mallet, pound the chicken until it's flat and uniform in size. Add all of the herbs and spices to a bowl; mix well.
  • Dip each piece of chicken into the herb mixture, making sure to coat both sides of the chicken.
  • Heat the oil over medium high heat in a nonstick skillet; then add the chicken to the pan and fry 5-7 minutes per side depending on the thickness of your chicken. The juices should run clear.
  • Serve hot with or without some fresh squeezed lemon juice on top.

Kids will love these! So easy, yet so delicious. We used a deep fryer, and made our own Texas Pete pickle juice by combining some good ol' Pete with Mt. Olive Pickles.

4 chicken breast
1 tsp granulated garlic for marinade
1/2 c mt olive texas pete pickle juice
1 c flour
1 1/2 c bread crumbs
1 Tbsp dried parsley
1 tsp granulated garlic for bread crumbs
1 tsp black pepper
1/2 tsp salt
1 Tbsp dried dill
1 egg
6 Tbsp water
32 oz canola oil

Steps:

  • 1. Cut your chicken breast into one inch pieces. Marinate chicken pieces in 1/2 cup pickle juice and 1 tsp of granulated garlic for at least two hours.
  • 2. Set up your dredging station. Bowl #1 Flour (can season with salt and pepper) Bowl #2 One egg mixed with 6 Tbs of water Bowl #3 Breadcrumbs, salt, pepper, granulate garlic, parsley and dill
  • 3. Preheat Deep non stick pan to 375 degrees ( I use my electric skillet but any large skillet will do). Drain chicken in a colander. Dip in flour, then egg wash then breadcrumbs. Set aside and repeat with remaining chicken pieces
  • 4. When oil is heated fry chicken for about 3-4 minutes per side till golden brown. I did this in two batches. Place first batch on paper towel to drain excess oil. Let chicken sit for about 5 minutes before serving....this helps to set the crust.

6 tablespoons fresh lemon juice
2 tablespoons (1/4 stick) butter
2 tablespoons olive oil
1 1/2 cups plain dry breadcrumbs
6 tablespoons chopped fresh basil
3 tablespoons chopped fresh parsley
1 1/2 tablespoons chopped fresh rosemary
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
Lemon wedges

Steps:

  • Using meat mallet, pound chicken breasts between sheets of plastic wrap to 1/2- to 3/4-inch thickness. Arrange chicken in 15x10x2-inch glass baking dish. Pour lemon juice over. Cover and refrigerate 1 hour. Remove chicken from dish and pat dry with paper towels.
  • Preheat oven to 450°F. Melt butter with oil in small saucepan over medium heat; cool slightly. Mix breadcrumbs, basil, parsley, rosemary, salt, and pepper in pie dish. Brush chicken breasts on both sides with melted butter mixture. Coat chicken on both sides with breadcrumb mixture. Place chicken on baking sheet. Bake until chicken is cooked through and breadcrumbs are golden, about 20 minutes. Transfer to plates. Serve, passing lemon wedges alongside.

1 teaspoon dried herbs
2 cups fresh whole wheat breadcrumbs
salt and black pepper
flour, for dusting
2 eggs, lightly beaten
3 chicken breasts, trimmed and cut into 3cm cubes
lemon wedge, to serve

Steps:

  • Preheat oven to 210°C Place the mixed herbs, breadcrumbs, salt and pepper in a large bowl and mix until combined, then set aside. Place the flour in another bowl and the eggs in a third bowl. Toss the chicken cubes in the flour, dusting off any excess. Working in batches, dip the chicken pieces into the egg, then the breadcrumbs, pressing to coat well.
  • Once all the chicken is crumbed, heat a little oil in a large non-stick frying pan. Cook the chicken in batches until golden. Remove and transfer to a baking tray lined with baking paper. Place in oven for 4-5 minutes or until chicken is cooked through. Serve chicken with lemon wedges and a little whole egg mayonnaise for dipping, if desired.

¼ teaspoon ground black pepper
½ teaspoon dried fines herbes
¼ teaspoon dried rosemary
¼ teaspoon dried oregano
¼ teaspoon dried marjoram
4 each frozen skinless, boneless chicken breast halves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking pan with aluminum foil.
  • Melt butter in a saucepan over medium-low heat. Add oil, garlic salt, and pepper. Add fines herbes, rosemary, oregano, and marjoram, crushing each herb between your fingers to release maximum flavor; stir well.
  • Place frozen chicken into the prepared pan. Spoon 1/4 of the oil mixture over 1 breast, and quickly spread with a pastry brush to evenly cover the top. Repeat for each breast.
