Herbed Chicken Burgers are a healthy and delicious option for your backyard barbecue. Grill them up, and serve with a zesty lemon chive mayo!

For the lemon mayo
1/2 cup mayonnaise
1 teaspoon lemon zest
1 tablespoon lemon juice
1/8 teaspoon salt
2 tablespoons fresh chives, finely chopped (optional)
For the chicken burger
1 pound ground chicken
1 large egg
1 cup breadcrumbs, divided
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon dried parsley
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
To serve
4 brioche buns
1 ripe avocado, thinly sliced
1/2 red onion, sliced
1 medium tomato, sliced

Steps:

  • Make the lemon mayo: In a small bowl, combine the mayonnaise, lemon zest, lemon juice, salt, and chives. Wrap the bowl in plastic wrap and set aside until you are ready to assemble your burgers.
  • Preheat the grill and add oil: Preheat the grill for direct heat grilling, by turning gas burners to medium-high or spreading charcoal coals so there is direct heat under the grilling grates. The temperature should be 450-500˚F. To make sure the burgers do not stick, dip a clean kitchen towel or some paper towels in oil and use tongs to quickly rub down grill grates. Alternatively, you can spray the grates with spray oil, but be careful of flare-ups.
  • Grill the buns: Grill the plain buns for 20 seconds and remove from the grill.
  • How to store and reheat leftovers: Leftover chicken burgers keep well in the fridge for 3-4 days. They reheat really well in the microwave on high for 1 minute.

1 egg, lightly beaten
1 medium onion, chopped
2 teaspoons ketchup
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon Worcestershire sauce
1/2 teaspoon pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried parsley flakes
1/4 teaspoon rubbed sage
1/8 to 1/4 teaspoon hot pepper sauce
2 pounds ground beef
8 hamburger buns, split
Mayonnaise, lettuce leaves and sliced tomatoes and red onion

Steps:

  • In a bowl, combine the first 11 ingredients. Crumble beef over mixture and mix well. Shape into eight patties. , Grill, uncovered, over medium heat for 5-6 minutes on each side or until meat is no longer pink. Serve on buns with mayonnaise, lettuce, tomatoes and onion.

3/4 cup dried herb-seasoned stuffing cubes (about 2 3/4 ounces)
1/2 pound ground chicken
1/4 cup finely chopped celery
1/4 cup finely chopped onion
1 egg yolk
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/4 cup bottled chili sauce
1/4 cup canned whole berry cranberry sauce
Vegetable oil
2 large sesame seed hamburger buns

Steps:

  • Grind stuffing in processor until fine crumbs form. Transfer 1/2 cup crumbs to large bowl. Mix in chicken, celery, onion, egg yolk, salt and pepper. Form mixture into two 3/4-inch-thick patties. Place remaining crumbs in shallow bowl. Dip patties into crumbs, coating completely. Mix chili sauce and cranberry sauce in small bowl to blend.
  • Prepare barbecue (medium-high heat) or preheat broiler. Brush barbecue rack with oil. Grill chicken burgers until golden brown outside and cooked through and white inside, about 7 minutes per side. Spread half of chili-cranberry sauce over bottom half of each bun. Top with burgers and bun tops.

LEMON & HERB CHICKEN CLUB BURGER

4 skinless, boneless chicken breasts
8 rashers smoked bacon
4 burger buns, split
4 slices of your favourite cheese (optional)
2 avocados, halved, stoned, peeled and sliced
2 tomatoes, sliced
4 handfuls of lettuce leaves
1 garlic clove
2 tsp chopped thyme leaves, or 1 tsp dried thyme
½ lemon, juiced
3 tbsp olive oil
3 tbsp mayonnaise
1 tbsp lemon juice
1 tsp mustard
small splash of chilli sauce (optional)

Steps:

  • First, make the marinade. Crush the garlic with the thyme and a pinch of salt using a pestle and mortar. Add the lemon juice, olive oil and plenty of cracked black pepper and mash together to combine. Lay the chicken breasts out on a board and flatten slightly using a rolling pin until they are an even thickness. Transfer to a container with the marinade, then seal, shake and chill until needed, or for up to 1 hr. Light the barbecue and wait until the coals are ashen, or heat a gas barbecue to medium. Mix the sauce ingredients together in a small bowl and keep chilled.
  • Cook the bacon on the barbecue for 3-4 min until crisp. Remove to a plate and set aside. Toast the cut side of the buns where you grilled the bacon to soak up the fat, then remove and set aside. Barbecue the marinated chicken breasts for 4-5 mins on each side until lightly charred. Top each with a slice of cheese, if using, and cook for a few minutes more until the cheese has melted and the chicken is cooked through (a probe thermometer should read at least 65C).
  • Spread the base of each bun with the sauce, then top with the avocado slices, tomatoes, chicken, bacon and lettuce. Sandwich with the bun tops, press down lightly and serve.

1 (10 ounce) box frozen chopped spinach, defrosted
2 lbs ground chicken
1 shallot, finely chopped
2 tablespoons Dijon mustard
10 basil leaves, shredded (or torn)
3 tablespoons chopped fresh flat-leaf parsley
salt
fresh ground black pepper
2 tablespoons extra virgin olive oil
20 white button mushrooms, thinly sliced
2 garlic cloves, minced
1/2 cup dry white wine
4 slices swiss cheese
4 kaiser rolls or 4 sandwich-size sourdough english muffins, split and toasted
4 leaves red leaf lettuce
1 vine-ripe tomatoes, thinly sliced

Steps:

  • Preheat a large nonstick skillet over med-high heat.
  • Arrange the defrosted chopped spinach in the center of a kitchen towel; wrap the towel around the spinach and squeeze out the excess liquid.
  • Put the spinach in a bowl and combine with chicken, shallots, 2 tablespoons dijon mustard, basil, parsley, salt, and pepper.
  • Divide meat into 4 equal portions; make 4 large patties, ¾ to 1-inch thick.
  • Drizzle patties with oil and place them in the hot skillet.
  • Cook 6-7 minutes on each side until chicken is cooked through.
  • Preheat a second medium-size skillet over med-high heat with 2 tablespoons olive oil.
  • Add in the sliced mushrooms and garlic; cook, stirring occasionally, for 4-5 minutes, or until the mushrooms are nice and brown.
  • Season with salt and pepper; add in the wine and cook until the pan is almost dry, about 2 minutes.
  • Top the burgers with the mushroom topping and the swiss cheese (fold each slice of cheese in half to fit the burger, if needed).
  • Cover loosely with foil; turn off the pan and let the cheese melt about 2 minutes.
  • Slather the tops of the buns with mustard; place the burgers on the bun bottoms and top with lettuce and tomato.
  • Put the bun tops in place; serve.

1 pound pasture-raised, skinless, boneless chicken breast, cut into large chunks (or you can use ground pasture-raised chicken or turkey)
1 medium onion, diced
1 garlic clove, minced
1/4 cup chopped fresh parsley
2 teaspoons chopped fresh thyme
Zest and juice of 1 lemon
Sea salt to taste
2 tablespoons coconut oil
4 gluten-free buns, such as Sami's Bakery buns
1 handful mâche lettuce, baby spinach, or arugula
For the Thousand Island Dressing:
1 1/2 cups (about 4) quartered plum tomatoes
1/2 cup raw macadamia nuts or cashews
2 garlic cloves
1/8 cup lemon juice
1/8 cup extra-virgin olive oil
1 teaspoon sea salt
2 dill pickles, minced
For the Garnish:
2 tablespoons coconut oil
1 large red onion, sliced into thin rounds

Steps:

  • First, make the dressing. In a blender, purée the tomatoes, nuts, garlic, lemon juice, olive oil, and salt for 45 seconds, until the mixture is thick and creamy. Transfer the contents to a small bowl and stir in the minced pickles. Set it aside. (Any extra dressing can be stored in the fridge for up to three days.)
  • To prepare to garnish, heat the coconut oil in a skillet set over medium-high heat. Sauté the onions until they are slightly caramelized, then set them aside.
  • For the burgers, in a food processor purée the chicken, onion, and garlic until everything is well combined. Transfer it to a large bowl and add the parsley, thyme, lemon zest, lemon juice, and salt. Blend the mixture well with your hands, then form it into four equal-size burgers.
  • In a large skillet set over medium-high heat, melt the coconut oil, then add the burgers. Allow them to brown on one side for several minutes before flipping them and browning the other side. If you are not serving these right away, you can transfer them to a heated oven at this point to keep them warm.
  • When the burgers are ready, serve them on buns topped with the fresh greens and sautéed red onion, and with a side of Thousand Island Dressing.

Try this burger recipe for a great change of pace! Notes: Find Japanese panko bread crumbs on the Asian food aisle in a well-stocked supermarket or in Asian markets. For a different flavor, add curry powder or ginger and soy sauce. Please remember that if you use less chicken to cut back on the garlic, we are garlic lovers, I once used less chicken and didn't, and while the overall taste was great, the garlic was a little overwhelming, even for us. These mini burgers hold together no problem, remained juicy and cook though very evenly, a 'must' for me when making burgers. Since this has some specifically asian ingredients I have decided to put this into ZWT: Asia.

1/2 cup panko breadcrumbs (see Notes)
2 lbs ground chicken
3 garlic cloves, minced
1/2 cup minced parsley

1 -2 tablespoon extra virgin olive oil

Steps:

  • Place bread crumbs in a small, shallow dish.

  • In large skillet, heat 1 tablespoon oil over medium heat. Add as many patties as will fit in a single layer and cook, turning once, until each side is brown and patties firm up, about 10 minutes.
  • Repeat with remaining patties, adding more oil if necessary.
  • Serve hot.

1/2 cup chopped onion
3 tablespoons vegetable oil, divided
1-1/2 pounds cooked chicken, ground or finely chopped
1-1/2 cups dry bread crumbs
1/2 cup grated Parmesan cheese
3 eggs
2 tablespoons dried parsley flakes
1 teaspoon each poultry seasoning, dried thyme, ground mustard and salt
1/2 teaspoon rubbed sage
1/2 teaspoon pepper
3/4 to 1 cup milk
8 hamburger rolls, split
Lettuce leaves
Sliced tomatoes

Steps:

  • In a large skillet, saute onion in 1 tablespoon oil until tender. Place in a large bowl. Add chicken, crumbs, Parmesan, eggs, herbs and seasonings; mix well. Stir in enough milk to be able to shape mixture into patties. Shape into eight patties. In the same skillet, cook patties in remaining oil for 5 minutes or until browned on each side and heated through. Serve on rolls with lettuce and tomatoes.
