GARLIC HERB BUTTER BEEF TENDERLOIN

- Prepare the tenderloin by trimming the fat. Cut it in half and tie the roast. Bend the tail in at the end of the roast so that it is tied in even thickness.
- Preheat a heavy bottom skillet to medium high heat and add the olive oil. Once the olive oil has reached the smoking point, add the roasts and sear each side for 3-4 minutes or until it is golden brown.
- To make the garlic butter spread: Combine the butter, garlic, thyme, oregano, rosemary, salt and pepper.
- Place the tenderloin in a roasting pan, heavy bottomed skillet, or baking dish. Spread half of the butter on the roast.
- Roast in the oven until the temperature reaches just under 140 degrees for medium doneness. Remove from the oven and slather the rest of the garlic butter on top and let stand 10 minutes before slicing.

- Beat all ingredients together with a fork until light and fluffy.
- Place on plastic wrap and roll into a log.
- Twist ends of plastic wrap to"seal" butter inches.
- Store in freezer, and cut off discs of butter as needed.
- You can store this in the fridge, but beware it will not last as long if you use fresh ingredients.
- Try adding chives, rosemary, or tarragon.

- Slice 1 head of garlic in half crosswise; set aside. Separate cloves from remaining head, peel, and crush lightly. Heat 2 Tbsp. oil in a large saucepan over medium. Add crushed garlic cloves and cook, tossing occasionally, until golden brown and softened, 8-10 minutes. Add 2 quarts water, increase heat to high, and bring mixture to a boil. Add herbs and reserved halved head of garlic. Reduce heat so broth is at an active simmer and cook until garlic is very tender and broth is reduced by nearly half, 30-40 minutes. Season generously with salt and pepper.
- Strain broth through a mesh sieve into a large bowl (or, pass a wide slotted spoon through it a few times to fish out garlic and herbs).
- Divide broth among bowls. Sip it as is, or you can add cooked noodles, drizzle in some whisked eggs to make stracciatella, or rub toast with raw garlic and drizzle with oil and float on top.

HERB AND GARLIC ROASTED RED POTATOES

- Preheat your oven to 400°. Get out a large rimmed baking sheet.
- In a large bowl place the potatoes, olive oil, garlic, dill, parsley, salt and pepper. Toss until the potatoes are coated in the spices and olive oil.
- Place the potatoes onto the baking sheet, ensuring that they are in one layer.
- Roast the potatoes in the oven for 20 minutes, then flip to brown the other side. Continue roasting, flipping every 15 minutes until the potatoes are crisp on the outside and cooked through.
- Remove from the oven and serve hot.

HERB AND GARLIC BROTH-AIGO BOUIDO
This is basically aigo bouido(which translates into garlic bouillon), kicked up a bit with a little tomato to make a hearty stock. This is a very old preparation once made by most housewifes in Provence. It's immensely fortifying, good for colds and hangovers, as well as a great foundation for potato dishes and winter stews. - Separate the garlic cloves by pressing down on the heads. Remove most of the papery skins, then smash the cloves with the flat side of a knife to open them up.
- Heat the oil in a soup pot, add the tomato paste, and fry over medium heat for about 1 mintue.
- Add the garlic, remaining ingredients, and 2 quarts water. Bring to a boil. Lower the heat and simmer, partially covered, until the garlic cloves are soft, about 45 minutes. Strain. Press the garlic throught the strainer with the back of a spoon into the broth or press it into a dish and use for another purpose. The broth can also be frozen in ice cube trays(or 1 cup containers) and added to vegetables or soups, etc. for extra flavor.
- To make this as a soup, place one to two slices of toasted bread in each bowl and ladle the broth over. Sprinkle with parsley and serve.

GARLIC AND HERB BEEF STEW
A great beef stew recipe from Mrs Dash's internet site. It has become our favorite. I am printing it as it comes from the site, but it is versatile as well. I have cooked it as is and also in the crockpot. I have used peas instead of green beans and like them both. I have also used Healthy Request Cream of Celery Soup instead of the beef broth. The one thing I wouldn't change is the Mrs Dash Garlic and Herb Seasoning, it really makes it flavorful.

- Preheat oven to 300 degrees F.
- Coat meat with flour. Brown meat in oil in a large heavy Dutch oven on all sides about 10 minutes.

- Heat the oil in an oven-proof skillet (cast iron works great) over medium-high heat. Prepare the pork and season lightly with salt and pepper. Add the pork to the pan and sear all sides of the pork in the hot oil, turning as needed, until golden. Add the garlic cloves to the pan and stir a bit to coat with some of the oil.
- Place skillet into the preheated oven and roast until the pork reaches 140F. internal temperature, about 20-25 minutes.
- Remove skillet from oven and place on the stove-top over medium-high heat. Add the wine to the pan and allow to boil for 1 minute or so, to cook off the alcohol. Add the herbs to the pan and then remove the pork to a cutting board to rest.
