CHICKEN IN A POTATO NEST
This is a family favorite that is so simple to make, and a great way to use up left over chicken or turkey. I use up my left over gravy when I have it. I have also used instant mashed potatoes when in a hurry, but I prefer the taste of real potato. I found this in a recipe book years ago and modified it to make it quick and easy.

Steps:
- Line the inside edges of a 9 inch deep dish pie plate with mashed potatoes, leaving the middle of the pie plate, about a 4-5 inch in diameter, empty.
- Mix together chicken or turkey, gravy, and mushrooms. Pour in the middle of the pie plate, (in the hole). Sprinkle parmesan cheese over entire dish.
- Bake at 350 uncovered, about 30 minutes or until bubbly and hot.

SUPER EASY SUPER MOIST OVEN ROASTED HEN
You can't go wrong with this easy super moist oven roasted hen! Perfect for a small holiday gathering. Change the seasonings to your liking. Hope you enjoy! My photo's.

Steps:
- 1. Preheat oven to 375 degrees.
- 2. Rinse hen with cold tap water; drain and pat dry with paper towels.
- 3. Generously sprinkle seasonings inside of hen. Place 3 to 4 Tablespoons cubed butter inside cavity of hen. Stuff celery, onion, and apple inside cavity as well. Generously rub outside of hen with soft butter; cover with strips of bacon. Secure bacon with toothpicks. Generously salt and pepper outside and dust lightly with poultry seasoning.
- 4. Bake 25 minutes per pound or until internal meat reaches 180 degrees F internal heat (using meat thermometer). NOTE: if you purchase hen with a thermometer, don't remove from oven until it pops out. Once the hen is baked, remove from oven and cover with a tent of aluminum foil; allow it to rest 30 minutes before slicing and serving.
HENS BREAKFEST NEST
These little muffin nests are delish. The family loves them for a quick breakfest or to pack into the lunch bag for work to eat with the coffee. Co-workers are always curious and want one. I have baked these little Hens nests every other day since Christmas Eve.

Steps:
- 1. Combine the hash browns, butter, salt and peppercorns. Stir well. "Pam" the Muffin tin. Press this mixture onto and on the sides of the muffin tins. (I also use muffin papper cups as well.)
- 2. Bake the nest at 400 degrees for 12 minutes or until brown little edges.
- 3. While the nest is browning, dice up the half red pepper(Julianne style, and cut the green onion into small slices also.
- 4. Cut the sausage link into 1/4 inch slices> I then stack three and quarter. Do all the sausage slices into quarters. Brown the sausage in frying pan. I also put a smig of olive oil if needed into my non stick pan.
- 5. Time to take the nests out of the oven. Evenly distribute the sausage pieces into the bottoms of the nests.
- 6. Combine and whip the eggs with a wisk.
- 7. Add the cheese, dices red bell pepper and green onion to the whipped egg mixture.
- 8. Use a large spoon to dip into the egg mixture and spoon over the sausage and into the nests. Make sure to not over load the nest. You have to use the spoon to get to the peppers and onion and cheese but also egg. Bake for 25 minutes.
- 9. A few dashes of hot sauce if desired on top or use chives or onion to top.
LOVE BIRDS - CHICKEN IN PASTRY

- Preheat oven to 400 degrees F.
- Season the chicken with salt, pepper and rosemary. Cut each piece of chicken in half across the breast giving you 8 equal portions. Heat the oil in a nonstick skillet over medium-high heat. Lightly brown the chicken on both sides, 5 minutes total. Remove from heat.
- Line a baking sheet with parchment paper. Cut pastry into 8 pieces. Place a piece of cheese on each pastry square and top with spoonfuls of fig preserves and the chicken pieces. Pinch and seal the dough up and over the meat and cheese, seal with egg wash, flip the pastry packets over and brush the tops with remaining egg wash. Bake 12 to15 minutes, until golden.
- For entree portions, simply leave chicken breast whole and cut the pastry into quarters. Trim off excess dough and use it to decorate the pastry with small cut outs such as heart shapes.

- Preheat the oven to 400 degrees F., and lightly spray a 12-cup muffin tin with non-stick cooking spray. Mix the first eight ingredients together in a large bowl. Spoon potato mixture into each prepared muffin cup until about 1/3 full. Gently press the potato mixture down in the middle and up the sides of each cup. Bake until golden brown, about 25-30 minutes. If the nests have puffed up too much in the center, scoop out a little with a teaspoon. Spoon a few tablespoons of scramble eggs into each nest

TIPS: Line the baking sheet pan with foil under the wire rack for an easy clean-up. The veggies and herbs stuffed in the cavities of the hens will impart flavor to the meat as it cooks. Be sure not to crowd the hens on the baking sheets or else the skin won't crisp up properly and they will take much longer to cook.

- Preheat oven to 375 degrees F.
- In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning.
- Rub olive oil all over the hens and season each with the salt mixture.
- Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans.
- Loosely stuff the cavities of each hen with some green bell pepper, celery and onion.
- Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear.
- Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

CHICKEN CASSEROLE NESTS - EASY AND DELISH

- Prepare the sauce: In a medium stainless steel saucepan, mix together all ingredients until combined and bring to a boil over medium-high heat, stirring occasionally. Pour into a large Pyrex or casserole dish, and set aside.
- For the pasta nests: Arrange uncooked pasta nests on top of the hot tomato sauce, keeping each a bit of a distance from the others. Using a spoon, ladle some of the hot tomato sauce over each nest to moisten. In a medium bowl, mix together the cheeses and peas, and set aside.
- Pat dry the chicken with paper towels and cut into small pieces. Season chicken pieces with salt and pepper. In a medium non-stick skillet, heat the olive oil over medium-high heat and brown the chicken (about 2-3 minutes). Mix into the cheese-pea mixture. Spoon cheese-chicken mixture into the raw pasta nests. Cover baking dish tightly with aluminum foil (If necessary, grease the interior of the sheet with non-stick cooking spray in order to avoid the cheeses sticking to the foil). Bake for about 40-45 minutes. Remove foil and sprinkle grated Parmesan cheese on top of the pasta nests if desired. Serve chicken casserole nests hot (2 nests per person). A fresh salad or steamed vegetables, if desired, can accompany chicken casserole nests. Enjoy our chicken casserole nests!!!
