Club soda gives these crisp waffles a fluffy texture. With only four ingredients, homemade waffles don't get much easier than this!-Taste of Home Test Kitchen, Greendale, Wisconsin

Yield 12 waffles.

Number Of Ingredients 4

2 cups biscuit/baking mix
2 large eggs, lightly beaten
1/2 cup canola oil
1 cup club soda

Steps:

  • In a large bowl, combine the biscuit mix, eggs and oil. Add club soda and stir until smooth. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in freezer containers. To use, reheat waffles in a toaster on medium setting. Or, microwave each waffle on high for 30-60 seconds or until heated through.

2 cups Bisquick baking mix
1 egg, lightly beaten
3 tablespoons oil
1 1/3 cup club soda

Steps:

  • Preheat and grease waffle iron. Combine the bisquick, egg, and oil in a bowl until mixed. Slowly stir in the club soda until smooth. Add the batter to the waffle iron and cook as directed by manufacturer. Serve waffles immediately or let cool and then freeze, well-wrapped, for up to a month.

Super light pancakes and easy to make. I got this recipe from Houston Chronicle newspaper. I like the pancakes because they are thin, not heavy. Note that because of the carbonated club soda the batter cannot be stored but if you make all of the pancakes (or waffles, though I haven't tried this)you can freeze them for later.
