Time 45m

Yield 8

Number Of Ingredients 11

4 ears corn on the cob, husks and silk removed
2 teaspoons olive oil
salt and ground black pepper to taste
1 red bell pepper
1 yellow bell pepper
1 ½ pints small heirloom tomatoes, halved
1 small red onion, halved and thinly sliced
1 bunch fresh basil, coarsely chopped
6 ounces mixed salad greens
2 tablespoons olive oil, or to taste
balsamic vinegar, or to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Rub ears of corn with 2 teaspoons olive oil and sprinkle with salt and black pepper; roast the ears on the preheated grill, turning occasionally, until the kernels are lightly browned, 10 to 15 minutes. Place red and yellow bell pepper on the grill and roast until the skins are blistered and lightly charred, turning often, about 15 minutes. Remove corn and bell peppers and let cool.
  • Cut the kernels from the cobs and place into a large bowl. Peel skins from bell peppers, seed, and cut the peppers into 1-inch pieces; mix peppers and corn together. Lightly toss with heirloom tomatoes, red onion, and basil. Cover and refrigerate until serving time.
  • Just before serving, mix in the salad greens and drizzle salad with 2 tablespoons olive oil and balsamic vinegar. Lightly toss to coat with dressing and season with salt and black pepper.

HEIRLOOM TOMATO SALAD

Heirloom Tomato Salad image

Multi-variety heirloom tomato salad with fresh thyme, goat cheese, and stone ground mustard vinaigrette.

Provided by JuliasKitchen

Categories     Salad Dressings

Time 10m

Yield 1 platter, 6 serving(s)

Number Of Ingredients 12

2 lbs heirloom tomatoes, of various colors and sizes
1/4 cup fresh goat cheese
6 sprigs fresh thyme
1 large shallot, minced
1 small garlic clove, minced
2 1/2 teaspoons Dijon mustard
1 1/4 teaspoons stone ground mustard
1/2 teaspoon honey
1/4 cup sherry wine vinegar (you can also use red wine vinegar as a substitute for sherry vinegar)
1/2 cup olive oil
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper

Steps:

  • Start with the vinaigrette to give the flavors time to blend. In a small bowl, whisk together the shallots, garlic, both mustards, honey, and vinegar.
  • Once the ingredients are fully combined, slowly pour in the olive oil while continuously mixing the vinaigrette to emulsify.
  • Set aside the vinaigrette. Tip: You can store the vinaigrette in the refrigerator for up to 1 week; you won't need to use all of it for the recipe.
  • Slice the larger heirloom tomatoes and quarter or chop the remaining tomatoes to create various sizes and textures on the plate. Arrange the tomatoes on a platter. Tip: Never keep tomatoes in the refrigerator. Doing so will take away flavor and aroma from the tomato, and leave you with an inferior product. Instead, store tomatoes at room temperature.
  • Hand crumble the goat cheese and dot the tomatoes.
  • Strip the thyme leaves from the stems and sprinkle liberally over the platter.
  • Spoon a small amount of the vinaigrette over the platter and serve.

HEIRLOOM TOMATO SALAD

Heirloom Tomato Salad image

Provided by Rusty Hamlin

Categories     side-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 26

1 medium jalapeno
Olive oil
Salt and pepper
1 small shallot, minced
3 tablespoons minced fresh mint
3 tablespoons champagne vinegar
3 tablespoons oil from sun-dried tomatoes
Juice from 1 large red tomato
1 teaspoon sugar
1 cup whole pecans
2 teaspoons vegetable oil
1/2 teaspoon chili powder
Pinch salt
3 heirloom tomatoes, stemmed
Kosher salt and freshly cracked black pepper
1 lemon, zested
1 lime, zested
2 tablespoons extra-virgin olive oil
2 peaches, quartered
1/4 cup ricotta cheese
1/2 cup chopped arugula
6 sun-dried tomato halves, small-diced
4 radishes, sliced
4 small golden beets, blanched and sliced
2 turnips, sliced
4 leaves basil, sliced

Steps:

  • For the tomato juice vinaigrette: Toss the jalapeno with oil to coat and some salt. Grill or dry roast in a small skillet, turning often, until toasted, 3 minutes. Halve, seed and dice small.
  • Combine the jalapenos, shallots and mint in a medium bowl and toss. Add the vinegar, oil, tomato juice, sugar and some salt and pepper and whisk to combine.
  • For the crunchy nuts: Toss the pecans with the oil, chili powder and salt and pour into a small skillet over medium heat. Cook, stirring often so the nuts don't burn, until toasted, 3 to 4 minutes. When done, chop slightly.
  • For the tomatoes: Carefully flame the tomatoes with a hand torch to remove the skins. Thinly slice and sprinkle with 2 teaspoons pepper, 1 1/2 teaspoons salt, the lemon zest, lime zest and olive oil.
  • Heat a grill pan to medium-high heat. Grill the peach quarters, flesh-side down, for 3 minutes.
  • For the arugula salad: Combine the arugula, sun-dried tomatoes, radishes, beets, turnips and basil in a bowl. Dress with the vinaigrette and toss.
  • To serve: Arrange the tomatoes on a plate, with the arugula salad alongside. Scatter the tomatoes with peaches and dollops of ricotta, and sprinkle with nuts.

HEIRLOOM TOMATO SALAD WITH ROASTED-GARLIC VINAIGRETTE AND CHèVRE-STUFFED PIQUILLO PEPPERS

Heirloom Tomato Salad with Roasted-Garlic Vinaigrette and Chèvre-Stuffed Piquillo Peppers image

The Workshop coincides with sweet pepper season, and many chefs are seduced by the varieties they find in our garden. Chef Donald Barickman, a 2000 Workshop participant, succumbed to the small, sweet 'Lipstick' peppers-so named for their crimson color-which he roasted and stuffed with creamy goat cheese and served with arugula and roasted-garlic vinaigrette. Bottled Spanish piquillo peppers make a good substitute. Brian adds heirloom tomatoes to make a more substantial composed salad for the end of summer. Serve it before or alongside grilled lamb, sausage, or burgers.

Yield serves 6

Number Of Ingredients 16

6 large cloves garlic, peeled
1/3 cup plus 1 teaspoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 tablespoons cider vinegar
1 small shallot, minced
1 teaspoon Dijon mustard
6 bottled Spanish piquillo peppers (see page 193)
4 ounces soft fresh goat cheese, at room temperature
2 tablespoons finely chopped toasted pecans
1 tablespoon sliced fresh chives
1 teaspoon chopped flat-leaf parsley
1 small clove garlic, mashed to a paste with a pinch of salt
2 pounds heirloom tomatoes
1/2 cup fresh basil leaves
4 ounces (about 4 handfuls) mixed lettuces
1/2 cup coarsely chopped toasted pecans

Steps:

  • For the vinaigrette: Preheat the oven to 400°F. Put the garlic cloves on a square of aluminum foil. Add the 1 teaspoon olive oil and season with salt and pepper; toss to coat. Seal the foil around the garlic to make a package and bake until the garlic is tender, about 40 minutes. On a cutting board, mash the garlic to a paste with the side of a chef's knife. In a small bowl, whisk together the vinegar, shallot, mustard, and garlic paste. Whisk in the 1/3 cup olive oil. Season with salt and pepper.
  • Without tearing the piquillo peppers, remove the seeds with your finger. In a small bowl, combine the goat cheese, finely chopped pecans, chives, parsley, and mashed garlic. Stuff the peppers with the seasoned goat cheese, dividing it evenly.
  • Core the tomatoes and cut them into large wedges or chunks. Put them in a large bowl and add the basil leaves, tearing them into smaller pieces. Add half of the dressing and toss well. Add the mixed lettuces and coarsely chopped pecans and toss again, adding more dressing as needed to coat the greens lightly. Taste for seasoning. Divide the tomato salad and the stuffed peppers among 6 large plates and serve immediately.
  • Enjoy with Cakebread Cellars Sauvignon Blanc or another young and crisp white wine.
