MOM'S GLORIFIED RICE
Make a glorified rice that will make guests ask for the recipe. Mom's Glorified Rice features fruit cocktail, crushed pineapple and mini marshmallows.

Steps:
- In a heavy bottomed saucepan, heat 3 cups of water to boiling.
- Add the rice and butter to the boiling water. Cook and stir for 1 minute.
- Reduce the stove heat to low, cover the saucepan with a tight fitting lid and let it cook undisturbed for 20-25 minutes.
- Once the rice is done cooking, remove it from the heat, transfer it to a large bowl. Fluff the rice with a fork and allow it to cool to room temperature.
- When the rice has cooled, add the pineapple, strawberries, marshmallows and sugar. Mix well. Allow this mixture to rest for 10 minutes.
- In a medium bowl (or the bowl of a stand mixer), beat the heavy whipping cream on high speed until stiff peaks form.
- Add the whipped cream to the rice mixture. Fold together gently.
- Top with maraschino cherries and additional marshmallows if desired.
- Refrigerate until serving and serve cold.

This recipe is one my Grandmother came up when she was first married . She named it heavenly rice, & it has been served every xmas & thanksgiving : )

- Do this the night before: boil 1 cup of minute rice .When its done drain of excess water & put into a large bowl. drain pineapple & add that to the bowl of rice, along with the cherries. Set in fridge over night .The next day beat the whipped cream & sugar in a metal bowl untill it is thick Then mix it in with the rice pineapples and cherries.

- Drain pineapple and reserve 3/4 juice. Bring to a boil; stir in rice. Simmer 2 minutes, remove from heat, cover and let steam 5 minutes. Prepare pudding mix according to package directions. Fold marshmallows into hot pudding, pecans and rice. Chill. Garnish with whipped cream. Six 1 cup servings.

- In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Cool completely.
- In a large bowl, combine rice, pineapple, marshmallows, cherries and about 1 tablespoon cherry juice. In a chilled bowl, whip the cream until peaks form. Fold in confectioners sugar. Fold whipped cream into rice mixture. Refrigerate for 2 hours.

I make this for those special occassions and folks love it. I must say it goes quickly. I remember it at potlucks as a child and wishing my mother would make it. well my mother wasn't too adventurous with recipes at the time. This is my version of it. hope you make it and enjoy

- 4. sometimes I add a can of drained mandarin oranges if I have it. but is just as good without it. *NOTE use whatever type coolwhip you wish, they all work out well.
