MAPLE WALNUT MUFFINS

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line muffin pan with paper baking cups.
- Sift the flour, baking powder, and salt together and set aside.
- Cream the butter and sugar together until light and fluffy. Stir in the maple syrup and the eggs and beat until well blended. Add the flour mixture alternately with the milk and beat until well blended. Stir in the walnuts. Spoon the batter into the muffin tins filling each about 3/4 full.
- Bake at 375 degrees F (190 degrees C) for 20 minutes or until toothpick inserted in center comes out clean. Remove to wire rack to cool completely.

MAPLE NUT MUFFINS
Maple Nut Muffins combine sweet, rich maple syrup with cinnamon and your favorite nuts for a wonderfully delicious morning treat!

- Preheat oven to 400°. Line 12 standard muffin cups with paper liners.
- In a large mixing bowl, stir together flour, brown sugar, baking powder, cinnamon, and salt.
- In a separate bowl, lightly beat egg. Add maple syrup, milk, and melted butter, and stir to combine.
- Add liquid ingredients to dry ingredients. Stir just until combined. Stir in nuts.
- Divide dough evenly among muffin cups, using about 3 tablespoons of batter per cup (filling about 2/3 full). Sprinkle each muffin with cinnamon sugar.
- Bake 20 to 24 minutes, or until a pick inserted into the center of a muffin comes out clean.
- Cool in pans for 10 minutes before serving.
MAPLE SPICE MUFFINS
These are really good muffins. This recipe makes 30, so be prepared! I store leftovers in an air tight container. They have not lasted long enough around our house to see how well they freeze.

- PREP: Place a rack in the center of the oven and preheat the oven to 425ºF. Spray a muffin pan with nonstick cooking spray or line it with paper liners.
- MAKE: In a large bowl, mash the bananas. Then, add the oil, maple syrup, brown sugar, eggs, milk, and vanilla and continue to mix until everything is combined. Add the salt, cinnamon, nutmeg, baking soda, and baking powder. Then add in the flour and fold using a rubber spatula until *just combined.* Add the walnuts (or other add-ins) and fold.
- BAKE: Divide the batter out into the prepared muffin cups, filling each muffin cup almost all the way full, right below the rim. Sprinkle with rolled oats on top and with additional chopped walnuts, if desired. Bake for 4 minutes then drop the oven temperature to 350ºF and continue to bake the muffins for 18-22 minutes or until a toothpick inserted in the middle comes out with just a few crumbs. - Preheat the oven to 200*C/400*F/ gas mark 6. Butter a medium size muffin tin and line with paper liners.
- Sift together the flour, soda and baking powder into a bowl and set aside.
- Cream the butter until light with an electric whisk. Continue with the electric whisk and add the in the maple syrup a bit at a time, whisking constantly. Whisk in the egg and sour cream. Fold in the flour and the walnuts, until just blended.
- Spoon into the prepared tin (you will have to cook three more separately after the first batch) filling 2/3 full. Top each with a piece of walnut if desired.
- Bake for 12 to 16 minutes. A toothpick inserted in the centre will come out clean. Leave in the tins for a few minutes, then move to a cooling rack to finish cooling.
