2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
½ cup butter, softened
½ cup packed brown sugar
½ cup real maple syrup
2 eggs
¾ cup milk
½ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line muffin pan with paper baking cups.
  • Sift the flour, baking powder, and salt together and set aside.
  • Cream the butter and sugar together until light and fluffy. Stir in the maple syrup and the eggs and beat until well blended. Add the flour mixture alternately with the milk and beat until well blended. Stir in the walnuts. Spoon the batter into the muffin tins filling each about 3/4 full.
  • Bake at 375 degrees F (190 degrees C) for 20 minutes or until toothpick inserted in center comes out clean. Remove to wire rack to cool completely.

1 & 1/2 cups all-purpose flour
1/2 cup packed light or dark brown sugar
1 & 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 large egg
1/2 cup maple syrup
1/2 cup milk
1/4 cup unsalted butter, melted and slightly cooled
1 cup chopped nuts
cinnamon sugar, for garnish*

Steps:

  • Preheat oven to 400°. Line 12 standard muffin cups with paper liners.
  • In a large mixing bowl, stir together flour, brown sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, lightly beat egg. Add maple syrup, milk, and melted butter, and stir to combine.
  • Add liquid ingredients to dry ingredients. Stir just until combined. Stir in nuts.
  • Divide dough evenly among muffin cups, using about 3 tablespoons of batter per cup (filling about 2/3 full). Sprinkle each muffin with cinnamon sugar.
  • Bake 20 to 24 minutes, or until a pick inserted into the center of a muffin comes out clean.
  • Cool in pans for 10 minutes before serving.

8 ounces plain yogurt
1 cup maple syrup
1/2 cup brown sugar, packed
1/2 cup vegetable oil
1 cup walnuts, chopped or 1 cup raisins
1 banana, chopped
1/3 cup maple syrup

Steps:

  • Stir together flours, rolled oats, baking powder, cinnamon, baking soda, and cloves.
  • Combine eggs, yogurt and syrup.
  • Beat in brown sugar and oil.
  • Add dry ingredients, nuts and banana. Stir just until mixed.
  • Spoon into greased or paper lined muffin tins, filling 2/3 way full.
  • Bake at 400°F for 15 minutes.
  • While warm, drizzle with remaining maple syrup.
  • Serve warm.

1 cup sour cream
1 cup maple syrup
1/3 cup canola oil
2-1/2 cups Oatmeal Crisp Almond cereal

  • In a large bowl, whisk the egg, sour cream, syrup and oil; stir in cereal. Let stand for 5 minutes. In another large bowl, combine the flour, brown sugar and baking soda. 3 large ripe bananas
5 tablespoons olive oil (butter works too!)
2 large eggs, room temperature
¼ cup EACH: milk, brown sugar, AND maple syrup
2 teaspoons vanilla extract
½ teaspoon EACH: kosher salt AND ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon EACH: baking soda AND baking powder
1 3/4 cups white whole wheat flour (or regular WW)
½ cup chopped walnuts
3 tablespoons rolled oats, for topping

Steps:

  • PREP: Place a rack in the center of the oven and preheat the oven to 425ºF. Spray a muffin pan with nonstick cooking spray or line it with paper liners.
  • MAKE: In a large bowl, mash the bananas. Then, add the oil, maple syrup, brown sugar, eggs, milk, and vanilla and continue to mix until everything is combined. Add the salt, cinnamon, nutmeg, baking soda, and baking powder. Then add in the flour and fold using a rubber spatula until *just combined.* Add the walnuts (or other add-ins) and fold.
  • BAKE: Divide the batter out into the prepared muffin cups, filling each muffin cup almost all the way full, right below the rim. Sprinkle with rolled oats on top and with additional chopped walnuts, if desired. Bake for 4 minutes then drop the oven temperature to 350ºF and continue to bake the muffins for 18-22 minutes or until a toothpick inserted in the middle comes out with just a few crumbs. Allow the muffin pan to cool on a wire rack for a few minutes before serving.

  • Preheat oven to 350°F
  • Grease muffin tins or line with paper.
  • Combine syrup, sour cream and eggs.
  • Combine flour and baking soda and mix into syrup mixture.
  • Stir in remaining ingredients.
  • Fill muffin cups 3/4 full and bake 15-20 minutes in center of oven.

245g plain flour (1 3/4 cup)
2 tsp baking powder
1 tsp baking soda
120g butter at room temperature (1/2 cup)
180ml pure maple syrup (3/4 cup)
120g sour cream (1 cup)
1 free range large egg
87g chopped toasted walnuts, plus more to garnish (3/4 cup)

Steps:

  • Preheat the oven to 200*C/400*F/ gas mark 6. Butter a medium size muffin tin and line with paper liners.
  • Sift together the flour, soda and baking powder into a bowl and set aside.
  • Cream the butter until light with an electric whisk. Continue with the electric whisk and add the in the maple syrup a bit at a time, whisking constantly. Whisk in the egg and sour cream. Fold in the flour and the walnuts, until just blended.
  • Spoon into the prepared tin (you will have to cook three more separately after the first batch) filling 2/3 full. Top each with a piece of walnut if desired.
  • Bake for 12 to 16 minutes. A toothpick inserted in the centre will come out clean. Leave in the tins for a few minutes, then move to a cooling rack to finish cooling.
