QUICK HERB AND CHEESE MONKEY BREAD



Quick Herb and Cheese Monkey Bread image

Prepared biscuit dough is the base for this pull-apart loaf, which is formed by rolling the dough in olive oil and herbs before piling in a bundt pan, which helps turn the loaf crispy and golden brown. Our tasters called them the Southern version of pizza-shop garlic knots.

Cooking spray
1 cup finely grated Parmesan
1 teaspoon dried oregano
1/4 teaspoon granulated garlic
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
2 packages prepared biscuits (about 16 biscuits), each biscuit cut in half
1/2 cup extra-virgin olive oil

Steps:

  • Position a rack in the lower third of the oven and preheat to 350 degrees F. Spray a bundt or tube pan lightly with cooking spray.
  • Toss the Parmesan, oregano, garlic, rosemary and thyme in a small bowl until well mixed. Roll each biscuit half into a ball. Put 8 of the balls in a medium bowl and drizzle with 2 tablespoons of the oil, tossing until well coated. Transfer each ball to the Parmesan mixture to coat, then place in the prepared pan. Working in batches of 8, repeat with the remaining dough balls, overlapping in the pan as necessary.
  • Bake until the dough is puffed and browned, about 50 minutes; check halfway through the baking time and tent with foil if the bread is browning too quickly.
  • Let the bread cool 10 minutes. Loosen the bread from the sides of the pan with a thin spatula. Invert the pan onto a baking sheet, then flip the bread (decorative-side up) onto a serving plate.

Number Of Ingredients 13

3 to 3-1/2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1 package (1/4 ounce) active dry yeast
1-1/4 cups fat-free milk
2 tablespoons canola oil
4 tablespoons butter, melted, divided
1 egg
2 tablespoons grated Parmesan cheese
1 tablespoon sesame seeds
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1/2 teaspoon each dried parsley flakes, thyme, and rosemary, crushed

Steps:

  • In a large bowl, combine 2 cups flour, sugar, salt and yeast. In a small saucepan, heat the milk, oil and 2 tablespoons butter to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a lightly floured surface and knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour. , In a small bowl, combine the cheese, sesame seeds, garlic salt, paprika and herbs. Punch dough down. Divide into 32 pieces; roll each into a ball. , Drizzle 2 teaspoons butter into a 10-in. tube pan coated with cooking spray; sprinkle with a third of the cheese mixture. Top with 16 balls. Repeat layers. Drizzle with remaining butter and sprinkle with remaining cheese mixture. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 350° for 30-35 minutes or until golden brown. Cool for 10 minutes before removing from pan to a wire rack.

This goes great with pasta or just a salad for dinner. Just a little twist on the favorite breakfast bread. I also like to add garlic powder to the dry ingredients, but that's just me! Overnight chill time isn't included in the cooking time.

5 -7 1/2 ounces refrigerated buttermilk biscuits
1 cup butter, melted
1/4 cup fresh parsley, chopped
2 tablespoons fresh green onions or 2 tablespoons chives, chopped
1 tablespoon dried dill

Steps:

  • Cut each biscuit in half.
  • Combine all other ingredients and mix well.
  • Dip each biscuit piece and coat well.
  • Layer biscuits in a 12-cup bundt pan.
  • Cover and refrigerate overnight.
  • Bake at 350°F for 25 minutes or until golden brown.

Number Of Ingredients 9

2 loaves (1 pound each) frozen white bread dough, thawed according to package directions (usually sold in a 3 pound package)
2 Tbsp butter
2 cloves garlic, minced
2 Tbsp chopped fresh parsley or 1 Tbsp dried parsley
1 tsp dried basil
1/2 tsp dried oregano
1/2 tsp dried thyme
2 Tbsp grated Parmesan cheese, divided
1 Tbsp sesame seeds, divided

Steps:

  • Grease or spray non stick spray in a 10 inch tube pan (bundt pan) with a removable bottom. Place thawed bread on lightly floured board. Divide each loaf into quarters and cut each into quarters again- making 16 pieces per loaf. Shape into balls and place 16 of them in bottom of prepared pan. Melt butter with garlic and brush half of it over the rolls. In a small bowl, combine parsley, basil, oregano and thyme. Sprinkle heaping tablespoon over rolls. Sprinkle with 1 Tbsp Parmesan cheese and 1/2 Tbsp sesame seeds. (Arrange remaining rolls over the first layer of dough balls there will be a space between the dough balls.) Stir remaining herbs into butter an brush over rolls. Top with remaining Parmesan cheese and sesame seeds. Cover with damp cloth, place in a warm, draft free place, and let rise 45 minutes or until double in bulk - almost to top of the pan. Place rack in borrow third of oven. Preheat oven to 375 degrees. Place bread pan on baking sheet to catch any drippings and bake for 30-40 minutes or until golden. Cool on rack for 10 minutes, remove sides of pan and lift bread out. Serve warm.
