CHERRY ANGEL FOOD TRIFLE
From Quick Cooking 2001 recipe Light and refreshing dessert. Very pretty in a trifle bowl. Leave time for trifle to chill for at least 4 hours before serving. Note: Not sure of the size of a normal envelope of dry whipped topping mix - just the standard size is needed. You can use a store bought angel food cake or make one at home.

Steps:
- In a mixing bowl, combine the 1 3/4 cups of milk and pudding mix. Beat on low speed for 2 minutes or until thickened.
- In another bowl, beat whipped topping mix, vanilla and the 1/2 cup remaining milk until stiff peaks form.
- Cut cake into 1/2 inch cubes and place half in a 3 quart glass trifle bowl.
- Sprinkle with 1 tbls cherry juice.
- Top with half of the pie filling, half of the prepared pudding and 1/4 cup of the chocolate syrup.
- Repeat layers.
- Top with whipping topping and remaining syrup.
- Sprinkle with coconut and almonds.
- Cover and refrigerate for at least 4 hours before serving.

- Cut angel food cake into 1-inch pieces. Reserve a couple slices of the peaches, and dice the rest. Combine the diced peaches, cool whip and yogurt in medium bowl. In a trifle bowl (or bowl that has a flat bottom), put one layer of the angel food cake down, then layer about 1/3 of the yogurt/cool whip/peach mixture, slightly pressing down on the angel food cake, . Repeat: layer of angel food cake and yogurt mixture. Then put a layer of fruit - sliced strawberries and/or kiwis. Then layer with angel food cake followed by the remaining yogurt mixture. Decorate the top with sliced fruit, including the sliced peaches you saved. Refrigerate for a couple hours - it is best when it's had time to set. This can be divided into two smaller bowls if you want. It's also really great the next day - the flavors soak in. beautiful to serve and healthy if not overdone.

- If you are using fresh fruit, you can either mash up a cup to generate some juices and spread that or some jam on your cake strips. Frozen fruit will generate lots of juice as they melt.
