These Chocolate Cake Balls are made with crumbled cake and frosting, dipped chocolate. They're the perfect treat for the holidays, or any time of year!

1 18.25 oz package chocolate cake mix + ingredients to prepare cake
1 16 oz can prepared chocolate frosting
1 container microwave dipping chocolate or almond bark
sprinkles for topping

Steps:

  • Prepare cake and bake according to package directions in a 9x13 inch pan. Allow to cool completely.
  • After cake has cooled, use your hands to crumble the cake into a large mixing bowl. A fork can also be used to crumble large chunks. Make sure cake is completely broken into fine crumbs.
  • Add 1/2-3/4 of the container of frosting, mixing with a spoon until the cake crumbs are coated. I don't add the entire container because then the cake balls come out a little too mushy. Place the bowl in the refrigerator for about 20 minutes.
  • Remove the bowl from the refrigerator and roll the mixture into small balls. Place balls on a plate or cookie sheet topped with wax paper and freeze for 1 hour.
  • Melt dipping chocolate or almond bark according to package directions. Place a wooden skewer on the bottom of a cake ball and dip into the chocolate, swirling and then tapping off the excess. Place the skewer in a mug or glass (I used short skewers for this recipe) and immediately add sprinkles if using. Allow to dry completely. Repeat with remaining cake balls.

5 ounces semisweet or bittersweet baking chocolate, chopped
1/2 cup plus 2 tablespoons butter or margarine
3 eggs
3 egg yolks
1 1/2 cups powdered sugar
1/2 cup Gold Medal™ all-purpose flour
Additional powdered sugar, if desired
1 can (21 ounces) cherry pie filling, if desired

Steps:

  • Heat oven to 450°F. Grease bottom and side of six 6-ounce custard cups with shortening. In 2-quart saucepan, melt chocolate and butter over low heat, stirring frequently. Cool slightly.
  • Meanwhile, in large bowl, beat eggs and egg yolks with wire whisk or hand beater until well blended. Beat in 1 1/2 cups powdered sugar. Beat in melted chocolate mixture and flour. Divide batter evenly among custard cups.
  • Bake 11 to 13 minutes or until sides are set and cakes feel soft when touched in center. Run small knife or metal spatula along sides of cakes to loosen. Immediately turn upside down onto individual plates; remove cups. Sprinkle with additional powdered sugar. Top with pie filling. Serve warm.

1 package devil's food cake mix (regular size)
2 tablespoons hot water
1 teaspoon instant coffee granules
1 cup chocolate fudge frosting
1/3 cup baking cocoa
1/4 cup chocolate syrup
1-1/3 cups miniature semisweet chocolate chips
2 pounds white candy coating, chopped
Optional toppings: milk chocolate English toffee bits, toasted sweetened shredded coconut and crushed candy canes

Steps:

  • Prepare and bake cake according to package directions. Cool completely. Crumble cake into a large bowl., In a small bowl, combine hot water and coffee granules; stir until dissolved. Add the frosting, cocoa and chocolate syrup; stir until combined. Add to cake; beat on low speed until blended. Stir in chocolate chips. Shape into 1-in. balls., In a microwave, melt candy coating; stir until smooth. Dip balls in coating mixture; allow excess to drip off. Place on waxed paper; sprinkle with toppings of your choice. Let stand until set. Store in airtight containers.

1-1/4 cups strong brewed coffee
1/3 cup canola oil
3 eggs
FILLING:
3/4 cup butter, softened
1 cup confectioners' sugar
1/4 teaspoon vanilla extract
1 jar (7 ounces) marshmallow creme
FROSTING:
1/4 cup butter, softened
2 cups confectioners' sugar
1/4 cup baking cocoa
1/4 cup 2% milk
1/2 teaspoon vanilla extract
COATING:
2 pounds white candy coating, chopped
1 tablespoon shortening
Baking cocoa

Steps:

  • In a large bowl, combine cake mix, coffee, oil and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour batter into a greased and floured 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool cake completely., For filling, in a small bowl, beat butter until fluffy; beat in confectioners' sugar and vanilla until smooth. Add marshmallow creme; beat until light and fluffy. Refrigerate for at least 2 hours or until easy to handle. Shape into 1/2-in. balls; arrange on waxed paper-lined baking sheets., For frosting, in a large bowl, beat the butter, confectioners' sugar and cocoa until combined. Beat in milk and vanilla until smooth. Crumble cake into bowl; mix well., Shape 1 tablespoon cake mixture around a marshmallow ball. Return to baking sheets. Repeat with remaining cake mixture and marshmallow balls. Refrigerate for 30 minutes., In a microwave, melt candy coating and shortening; stir until smooth. Dip cake balls in coating; allow excess to drip off. Return to baking sheets; let stand until set. Dust tops with cocoa. Store in an airtight container in the refrigerator.

  • In a large bowl mix the cake crumbs and 3/4th cup of the chocolate ganache and mix well. Add the remaining ganache only if the mixture still seems dry. Depending on how moist the cake crumbs are you may or may not be required to use up all of the ganache. The mixture must be moist yet dryish enough to help you roll it into small balls. Place the rolled balls on a plate by lightly pressing down to form a base (not too flat though) - this will help you place them back on the plate to dry once they have been dipped in chocolate. You can help them harden faster by popping the plate in the fridge for 30 mins if you live in a warmer climate
  • To make the coating, place the chopped chocolate in a heatproof bowl and place the bowl on a saucepan with barely simmering water. Take care to see that the base of the bowl does not touch the water beneath. The sides of the bowl should be tall enough to prevent even the steam from getting into the chocolate or else the steam or water will cause the chocolate to seize and harden almost immediately. If you wish to use another colour of chocolate then melt the white chocolate accordingly and add the required amount of food colour to achieve the desired colour.
  • When the chocolate has melted and looks glossy (and reaches pouring consistency) gently dip the chocolate balls one by one using either a cake pop stick or just your fingers. If you have used a cake pop stick then make sure you can place the stick on a firm base to help the melted chocolate dry up. If you are using your fingers to hold the cake pops then the flat base will help you place it back on the plate or wire rack.
  • Decorate with cake sprinkles or any edible decoration of your choice and let the chocolate cool completely. Serve or store in an airtight container
