3 Minute Melty Festive Brie (Speed Baked Brie) image

This is one of my greatest secret weapons for gatherings. It looks fantastic, you don't need to use an expensive brie for this, it's adaptable to your taste, it takes minutes to make, and it's an absolute and total crowd pleaser! The flavour combination is a killer: creamy brie with the warm nuttiness of pecans, sweetness from maple syrup and juicy pops of pomegranate. Normally brie served like this is baked, but you can't tell the difference between baking and microwaving!

1 (250 g / 8 oz) whole brie ((Note 1))
1/4 cup roughly chopped pecans (, roasted (Note 2))
1/4 cup pomegranate seeds
1/4 cup maple syrup

Steps:

  • Unwrap brie and place on a small microwave-proof plate with a rim (so maple syrup doesn't go everywhere).
  • Microwave on high for 1 minute 15 seconds, or until the brie is very soft when you prod the centre. Watch the brie as you microwave it - if it starts to puff up too much (i.e. risk of bursting), turn microwave off and leave brie inside - residual heat will continue to melt it.
  • Top with pecans, pomegranate seeds and maple syrup. Serve immediately with crackers of choice (choose ones suitable for scooping). I serve this with a spoon and/or small pate knife.

Baked brie with sweet pepper jelly makes for the most melty, cheesy, peppery, sweet appetizer. Serve with your favorite crackers for the perfect appetizer!

1 brie wheel (8- or 9-oz)
1/2 to 2/3 cup pepper jelly

Steps:

  • Preheat oven to 350 degrees. Remove top rind of cheese; leave rind on sides and bottom. Place brie cut side up in brie baker; top with pepper jelly.
  • Place brie baker in center of hot oven for 15 minutes. DO NOT place lid on baker while in oven.
  • Remove from oven and place brie baker cover on top to keep brie warm and soft until ready to serve.

Heavenly Brie Basket
1 medium sized swiss peasant loaf of bread
1 1/2 pounds of brie cheese, rind removed, cut into chunks
2 large Vidalia or yellow onions, thinly sliced
3 tablespoons unsalted butter
2 tablespoons dark brown sugar
2 tablespoons white vinegar
2-3 large ripe d'anjou pears

Steps:

  • Preheat the oven to 400 degrees. Cut a large circle into the bread about 1 inch from the edge and several inches deep. Remove the bread filling and reserve, leaving a basket crust. Fill the basket with the brie, packing it in tightly. Replace bread cover and cover the basket completely with aluminum foil. Bake on middle rack until the cheese is melted through, about 1 hour. 10 minutes before the bread is removed, melt the butter in a chef pan or large skillet over medium high heat. Add the onions, brown sugar, and white vinegar and sauté until the liquid evaporates and the onions start to become crispy. Slice the pears thinly just before serving to prevent browning. Cut the basket into quarters or thirds and serve with pears and caramelized onions. Each bite should be layered with the crusty basket, cheese, pears and onions. Serve with a semi-sweet Riesling and a crisp green salad. Pure heaven!
