HEAVENLY LEMON BREAD PUDDING



Heavenly Lemon Bread Pudding image

This bread pudding is similar to a souffle. It will, in fact, "fall" somewhat as it cools, but you won't be disappointed with its creamy tartness. This recipe is from Texas Cooking.

Number Of Ingredients 10

3 cups of day old French bread or 3 cups Italian bread, in 1/2 inch cubes
4 teaspoons grated lemons, zest of
1 cup whipping cream
1 cup whole milk
1 cup sugar
3 tablespoons butter, cut into small pieces
1/4 teaspoon salt
4 large eggs, separated
1/2 cup fresh lemon juice
confectioners' sugar

Steps:

  • Preheat oven to 325°F.
  • Butter the bottom only of a 2-quart casserole or soufflé dish.
  • Combine bread cubes and lemon zest in large bowl.
  • Set aside.
  • Combine whipping cream, milk, sugar, butter and salt in a heavy saucepan.
  • Over medium heat, cook until butter melts, stirring occasionally.
  • Pour over bread mixture, and toss.
  • Allow to cool.
  • Lightly beat the egg yolks, then beat in the lemon juice, and stir into the bread mixture.
  • Set aside.
  • Beat egg whites in large bowl of electric mixer until stiff peaks form.
  • Do not overbeat.
  • Gently fold egg whites into bread mixture.
  • Pour bread mixture into prepared dish, and bake for 1 hour, or until a knife inserted 1 inch from center comes out clean.
  • The top of the pudding should be golden brown.
  • Cool on a wire rack for 10 minutes.
  • Dust with confectioner's sugar, if desired.
  • Serve warm, at room temperature or chilled.
  • NOTE:*If your bread is less than a day old, you can"age" it by placing slices in a 300°F oven for 15 or 20 minutes, or until some of the moisture is baked out.

1 box(es) angel food cake
1 cup(s) semi-sweet mini chocloate chips
1 1/2 cup(s) glazed walnuts
1 can(s) sweetened condensed milk
1 1/2 cup(s) half and half
1 teaspoon(s) vanilla extract
2 - eggs
1 - egg yolk
1.5 oz - vanilla instant pudding

Steps:

  • Lightly spray a 9 inch deep dish, and preheat oven to 350.
  • Slice cake and lay on cookie sheet, place into oven for 15 minutes.
  • In a bowl beat the 2 eggs and egg yolk together.
  • In a medium bowl combine the milk and half and half, and the pudding ; stir well.
  • Add the eggs to the pudding mixture, add the vanilla.
  • In the prepared deep dish add a few slices of cake.(Cake can be cut to fit.)
  • Next sprinkle some nuts and chocolate chips, saving some of each for the topping. Repeat layers until cake is gone.
  • Top with nuts and chocolate chips. Pour pudding mixture over the top. Press cake down to soak every piece.
  • Bake at 350 for 40 minutes, or until set.

RAISIN BREAD PUDDING

Dessert for breakfast anyone? This delicious raisin bread pudding combines everything that is comforting and good - brown sugar, cinnamon, raisins, vanilla - in one tasty dish. If you love a good French toast casserole, you will love this raisin bread pudding!

1 cup dark brown sugar (Packed.)
3 slices bread
2 tablespoons butter
¾ cup raisins
3 large eggs
2 cups milk (Whole, 2% or 1%. You can substitute lactose free or nut milk.)
⅛ teaspoon salt
1 teaspoon vanilla extract
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350°F (176°C).
  • Butter the bottom of an 8-inch square ceramic or glass baking dish. Sprinkle brown sugar over the bottom of the baking dish.
  • Butter the slices of bread and dice. Sprinkle diced bread over the brown sugar.
  • Sprinkle raisins over the top of the diced bread.
  • Sprinkle cinnamon over the top of the raisins.
  • Add eggs, milk, salt and vanilla to a large bowl and beat with an electric mixer until frothy about a minute or two.
  • Pour mixture over the bread. Do not stir.
  • Heat water to simmering in a saucepan or teapot. Pour hot water into the bottom of a separate 10x8x3 inch baking dish or one large enough to accommodate the 8-inch square baking dish. Fill halfway with water.Place the 8-inch square baking dish inside the baking dish half filled with hot water.
  • Bake for 1 hour. Serve warm with whipped cream. Garnish with ground cinnamon and raisins.

5 slices whole wheat bread
1/2 cup Splenda granular
2 eggs
2 teaspoons baking powder
1 tablespoon vanilla
1 1/2 cups skim milk
2 ounces butter
1 tablespoon cinnamon

Steps:

  • Heat oven up to 350°F.
  • Cut slices of bread into cubes.
  • In a saucepan, heat the milk, and butter but do not allow to boil.
  • Add the vanilla and sugar, when a bit cooled.
  • Pour part of the milk mixture into the beaten eggs and whisk until all blended.
  • Pour this mixture back into the milk mixture in the saucepan.
  • Add the baking powder and blend until smooth.
  • Lay the cubes of bread onto a 8x8 baking dish and pour over it the liquid prepared above.
  • Wait 5 minutes for the bread to saturate with mixture.
  • Sprinkle cinnamon on the top.
  • Bake for approximately 30 minutes or until it browns.
  • Serve it with a scoop of ice-cream, otherwise, serving with custard sauce is receommended.

1- 16oz. loaf of King's Hawaiian Sweet Bread Raisins, Cinnamon, Nutmeg for sprinkling (I use pumpkin pie spice) 3 cups Milk 1 Cup Sugar 1½ Cups Butter/ margarine, melted 9 Eggs, Beaten 1½ teaspoons Vanilla Extract

Steps:

  • 1)Break bread into large pieces and place into greased/ buttered 9 x 13 inch pan. 2)Sprinkle raisins, cinnamon and nutmeg over bread pieces. 3)In a large saucepan, combine milk, sugar and butter; heat to boiling point; ensuring that you stir the mixture constantly as the mixture will rise when heated. 4)Remove from heat; add beaten eggs. (Be careful that the milk mixture is not so HOT that it could curdle the eggs.) 5)Add Vanilla Extract; mix and pour over bread, making sure that the bread is soaked thoroughly. 6)Sprinkle more cinnamon and nutmeg over the pudding, if desired. 7)Bake at 350 degrees for 30-40 minutes or until knife inserted in middle of pudding comes out clean. 8)Enjoy!

  • Spray a 7-inch springform pan, generously with cooking spray, and set aside. Make a Foil sling to go under the springform pan, by tearing off a long piece of long heavy duty aluminum foil, and folding it in half again and again, until you have a piece that's about 2 feet long, by about 2 - 3 inches wide. This will enable you to lift the pan out of the Instant Pot while it's still hot
  • In a large mixing bowl, break or cut the french bread into bite-size pieces, and set aside. Place the cream cheese, sugar, eggs, vanilla, cinnamon, and heavy cream in the blender, and blend until smooth and creamy. Scrape down the sides of the blender, and stir any ingredients not blended. Pour the cream cheese mixture over the bread pieces, and mix until all pieces are coated. Place a bottom layer of the bread pieces in the springform pan, and layer berries on top, then add another layer of bread pieces, and another layer of berries, until you've reached the top of the pan. You can pile the bread or berries on top of the pan; it doesn't have to be even with the top. Scrape the mixing bowl, and pour any remaining cream cheese mixture over the top of the bread pudding, in the pan. Place the sling in the Instant Pot, so you have the foil across the bottom of the Instant Pot stainless steel pot, and up the sides. Then, pour 1 cup of water in the bottom of the pot, and place the springform
  • After you've put the bread pudding in the instant pot to cook, make the crumble by combining the flour, oatmeal, brown sugar, sugar, cinnamon, salt, and the melted butter, in a bowl. Place the mixture on a parchment lined cookie sheet, and place in the oven for 15 minutes at 350 degrees, or until the crumble starts to turn golden brown. Remove from oven and set aside to cool.
  • Once the bread pudding and crumble have cooled, cut the bread pudding into 6 pieces in the springform pan. Remove the springform from the pan, and place pieces on a plate or in a bowl. Sprinkle crumble topping over the bread pudding, add a few extra berries, and top with syrup, powdered sugar, or whipped cream, or all three for a dynamic presentation. Enjoy!
