- In a small nonstick skillet over medium heat, cook onion and celery in butter until tender. , In a large bowl, combine the bread cubes, salt, poultry seasoning, sage and pepper. Stir in onion mixture. Combine broth and eggs; add to bread mixture and toss to coat. , Transfer to a 3-qt. slow cooker coated with cooking spray. Cover and cook on low for 3-4 hours or until a thermometer reads 160°.

CROCK-POT RANCHER'S ROAST BEEF
This Ranchers Roast Beef recipe might be the most perfect way to make roast beef in the crock pot. Ranch dressing mix, pepperoncini, and butter make the beef fall-apart tender and full of flavor.

- Heat canola oil over med-high heat. Season roast with salt and sear in hot oil until golden brown.
- Place roast in crock pot and sprinkle with dressing mix, pepperoncinis, pepperoncini juice, and dot with butter.
- Cook in crock pot on LOW for 6-8 hours or HIGH for 3 ½ -4 or until the roast is fork-tender. Remove meat from pot and drain off cooking juices into a sauce pan, skimming the top for excess fat. Add 2 cups of beef broth to the juices and bring to a boil.
- Mix 1 tbsp of corn starch with ¼ C of COLD water and slowly pour into the boiling broth mixture. Stir continuously until thickened and remove from heat. Stir in ½ cup of sour cream into the thickened broth and serve over the cooked meat.

- Heat butter over medium heat until melted. Stir in poultry seasoning, black pepper and salt to taste. Add celery & onions and cook until softened (do not brown). Cool completely.
- Place bread cubes in a large bowl. Add cooled celery and onion mixture, parsley and fresh herbs if using.
- Add chicken broth a little bit at a time just to moisten and gently stir. You may not need all of the broth (see note below). Stir in eggs.
- Cover and refrigerate overnight if making ahead of time.
- Grease a 5-6 qt slow cooker well. Place stuffing in the slow cooker and turn onto high for 30 minutes. Reduce temperature to low and cook an additional 3-4 hours or until hot and cooked through. If stuffing is done before your meal is ready it can remain on warm.

- Melt butter or margarine in a skillet over medium heat. Cook onion, celery, mushroom, and parsley in butter, stirring frequently.
- Spoon cooked vegetables over bread cubes in a very large mixing bowl. Season with poultry seasoning, sage, thyme, marjoram, and salt and pepper. Pour in enough broth to moisten, and mix in eggs. Transfer mixture to slow cooker, and cover.
- Cook on High for 45 minutes, then reduce heat to Low, and cook for 4 to 8 hours.

CROCKPOT CHICKEN & DRESSING
This recipe came from a church cookbook that I bought from a lady I know. This is one of her recipes and is now the one I use at holidays. It is the best dressing and my family loves it too!

- 1. Boil chicken and reserve broth. Crumble crackers, cornbread and white bread together in large bowl. Add onion, celery, sage, salt and pepper, mixing well. Add eggs and soup, mixing well, then pour in 2 cans warm reserved broth. Cut up chicken into bite size pieces. Mix into dressing mixture. Put in crockpot. Top with 2 tablespoons butter. Cover with lid. Cook on low 4 hours. During the four hours I also add some extra broth from time to time to keep it moist and keep it from sticking. Delicious and Easy!
