2 cups chopped onions
2 garlic cloves, minced
2 (28 ounce) cans tomatoes, undrained, cut up
2 (15 ounce) cans tomato sauce
1 ½ cups Holland House® Red Cooking Wine
6 teaspoons chili powder
2 teaspoons cumin
1 green bell pepper, chopped
2 (15.5 ounce) cans kidney beans, drained

Steps:

  • In large saucepan, brown ground beef with onions; drain.
  • Add remaining ingredients except green pepper and kidney beans. Bring to a boil; reduce heat.
  • Simmer uncovered 1 hour, stirring occasionally. Stir in green pepper and kidney beans; simmer until thoroughly heated.

Number Of Ingredients 22

1 broiler/fryer chicken (3-1/2 pounds), skin removed and cut up
2 celery ribs, cut into chunks
1 small onion, quartered
1 teaspoon whole peppercorns
3/4 teaspoon salt
6 cups water
CHILI:
8 corn tortillas (6 inches), cut into 1/4-inch strips
4 teaspoons canola oil, divided
3 celery ribs, chopped
2 medium onions, chopped
2 garlic cloves, minced
1/4 cup all-purpose flour
1 tablespoon ground cumin
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 cans (15-1/2 ounces each) navy beans, rinsed and drained
2 medium tomatoes, chopped
1/2 cup reduced-fat sour cream
4 green onions, chopped
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Place the first six ingredients in a Dutch oven. Bring to a boil. Reduce heat; simmer, covered, 1 hour or until chicken is tender. Remove chicken; cool slightly. Strain broth, discarding vegetables and peppercorns; skim fat from broth. Set broth aside., Preheat oven to 400°. Remove meat from bones; cut into bite-size pieces and set aside. Discard bones., In a bowl, toss tortilla strips with 1 teaspoon oil. Arrange strips on a baking sheet coated with cooking spray. Bake 8-12 minutes or until crisp, stirring once., In a large saucepan, heat remaining oil over medium-high heat. Add celery, onions and garlic; cook and stir 6-8 minutes or until tender. Stir in flour and seasonings until blended. Gradually add 4 cups chicken broth (save remaining broth for another use)., Bring to a boil; cook and stir 1-2 minutes or until slightly thickened. Stir in beans, tomatoes and chicken. Reduce heat; simmer, covered, 15 minutes longer. Top servings with baked tortilla strips, sour cream, green onions and cheese.

1/4 cup chopped onion
1/4 cup chopped green pepper
1 tablespoon olive oil
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2/3 cup 2% milk
2 tablespoons canned chopped green chilies
1 garlic clove, minced
1/2 teaspoon ground cumin
1 cup diced cooked chicken breast
Shredded Monterey Jack cheese and sliced jalapeno peppers, optional

Steps:

  • In a large saucepan, saute onion and green pepper in oil until tender. Stir in the beans, soup, milk, chilies, garlic and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Stir in chicken; heat through. Garnish with cheese and jalapenos if desired.

1 lb boneless skinless chicken breast
1 tablespoon olive oil
1 small onion, chopped
2 garlic cloves, minced
2 (15 ounce) cans white beans
4 -8 ounces diced green chilies
1/2 teaspoon ground cumin
1 teaspoon chili powder
2 tablespoons lime juice
2 tablespoons cilantro, minced
1/2 teaspoon ground pepper
8 ounces frozen white corn, if desired (optional)
2 chicken bouillon cubes
2 cups water

Steps:

  • Boil chicken in water with bouillon until cooked through.
  • Remove chicken from water, cube chicken and spoon fats out of the liquid.
  • Saute onion and garlic in oil until just tender.
  • Add onion, garlic, beans, chiles and seasonings to the chicken liquid.
  • Bring to a boil and reduce heat.
  • Add diced chicken and simmer for 5 minutes.
  • Stir in lime juice and cilantro.
  • Can also be cooked in the crock pot but I suggest adding the lime and cilantro just before serving!

  • Stir in the shredded chicken and add the remaining 1 cup of corn. Season with salt and pepper, to taste. Cook in slow cooker for an additional half an hour to allow chili to thicken. Portion into bowls and top with a squeeze of fresh lime juice. Garnish with desired toppings and enjoy.
