1 medium yellow onion, quartered lengthwise
1 medium stalk celery, quartered crosswise
1 medium carrots, quartered crosswise
2 cloves garlic, lightly crushed
3 (19 ounce) cans Progresso® cannellini beans, drained
1 dried bay leaf
½ cup white wine
1 (32 ounce) carton Progresso® reduced sodium chicken broth
2 tablespoons olive oil
1 tablespoon finely chopped garlic
¼ teaspoon crushed red pepper flakes, or to taste
¼ cup lightly packed fresh basil leaves, sliced
½ teaspoon gray sea salt
⅛ teaspoon freshly ground pepper

Steps:

  • In 4-quart saucepan or Dutch oven, cook bacon, onion, celery, carrot and 2 cloves garlic over medium-high heat 5 minutes, stirring occasionally. Reduce heat to medium. Add beans, bay leaf, wine and broth; cover and cook 20 to 25 minutes, stirring occasionally, until vegetables are tender. Remove from heat; cool about 15 minutes.
  • Meanwhile, in 8-inch skillet, heat olive oil over medium-high heat 1 minute. Add 1 tablespoon chopped garlic; cook 3 to 5 minutes, stirring frequently, until garlic begins to brown. Stir in red pepper flakes; cook a few seconds. Stir in basil; cook until basil wilts.
  • Remove bay leaf from bean mixture. Pour mixture into food processor; cover and puree. Return to saucepan; stir in salt and pepper. Simmer over medium heat 5 to 10 minutes, stirring frequently, until thoroughly heated.
  • Ladle soup into individual soup bowls. Top each with basil mixture.

2 tablespoons extra-virgin olive oil
1/4 pound pancetta, cut into 1/2-inch cubes (about 1 cup)
1/2 small red onion, diced
3 garlic cloves, thinly sliced
1 dried chile, crumbled
3/4 teaspoon fennel seed
1 pound dried cannellini beans, soaked overnight and drained
9 cups homemade or low-sodium store-bought chicken stock
1 large bunch cavolo nero (Tuscan kale), cleaned, stemmed, and roughly chopped (8 cups)
Coarse salt and freshly ground pepper
1 loaf Tuscan bread, cut into 1/2-inch slices, brushed with olive oil and toasted in a 300-degree oven
1 cup grape tomatoes, halved
1/2 small red onion, diced
Extra-virgin olive oil
Parmigiano-Reggiano cheese, grated
Crushed red pepper flakes

Steps:

  • In a medium Dutch oven or a large saucepan, heat oil over medium heat. Add pancetta and cook until golden brown, about 10 minutes. Remove with a slotted spoon and drain on paper towel. Add onion and cook until translucent, about 5 minutes. Add garlic, chile, and fennel seed, and cook for 2 minutes.
  • Add cannellini beans and chicken stock, and bring to a boil. Reduce heat and let simmer for 50 minutes, or until beans are tender.
  • Add Tuscan kale. Stir and season with salt and pepper. Cook for 5 minutes, until kale is tender.
  • Serve in a bowl over a slice of bread. Garnish with pancetta, tomatoes, onion, olive oil, Parmigiano-Reggiano, and crushed red pepper flakes.

Immerse yourself in a bit of heaven with this Italian White Bean Soup. Buttery and soft cannellini beans pair with tantalizing herbs to be slowly simmered to perfection. Serve with some bruschetta to finish off one beautiful dish.

3 cups white beans
1 leek or yellow onion (diced)
1 carrot (chopped)
1 celery stalk (chopped)
7 cloves garlic (chopped)
1 sprig rosemary
1 sprig sage
1 bay leaves
8 cups water or vegetable stock
1.5 tsp smoked applewood sea salt ((or liquid smoke))
1 -2 Tbsp Nutritional yeast (optional)
bread + garlic for bruschetta ((1 slice/ person))

Steps:

  • Rinse and pick the beans then cover them with water and soak for 6 hours or overnight. Drain.
  • In a large heavy bottom pot heat up a good lug of olive oil and saute the leek (or onion) with the carrot and celery until they begin to soften.
  • Quickly stir in the chopped garlic and cook for a few seconds just until fragrant then add the soaked beans.
  • Pour in the water and bring to a constant simmer. Add the bay, sage and rosemary, cover with a lid and cook for 45 minutes or until the beans are soft and tender to your liking.
  • Check the beans half way through cooking and see if you might need to add extra water if they are absorbing lots of liquid.
  • Once your beans are perfectly cooked remove from heat, stir in the nutritional yeast and season to taste with the smoked sea salt.
  • Meanwhile grill the bread on both sides until nice dark char marks form. Rub each slice on both sides with a garlic clove, lightly brush with some olive oil and finish with sea salt.
  • Ladle the soup into bowls and tear chunks of the garlic bruschetta over the top. Finish with a light drizzle of olive oil on top and enjoy.

4 tablespoon olive oil (divided)
8 ounces Ciabatta bread (or rustic Italian bread)
1 large sweet onion (peeled and chopped)
3-4 carrots (peeled and sliced)
3 celery stalks (chopped)
8-10 cloves garlic (minced)
64 ounces vegetable broth
28 ounce San Marzano Tomatoes (crushed or diced)
30 ounces cannellini beans (2 cans, drained)
½ cup shaved parmesan cheese + extra for serving
1 ½ teaspoon anchovy paste *optional for vegetarian
1 teaspoon dried oregano
1 bay leaf
½ teaspoon crushed red pepper
1 bunch Tuscan kale (roughly chopped)
Salt and pepper

Steps:

  • Chop all the produce.
  • Set a large 7-8 quart saucepot over medium heat. Add 2 tablespoons olive oil to the pot. Add in the onions, carrots, celery, and garlic. Generously season with salt and pepper. Sauté the veggies for 10 minutes, stirring regularly.
  • Meanwhile, preheat the oven to 400 degrees F. Set out a rimmed baking sheet. Tear the bread (sliced or unsliced) into chunks and place on the baking sheet. Drizzle with 2 tablespoon olive oil and toss well. Then spread the bread chunks out in an even layer. Toast in the oven for 8-10 minutes, flipping once. Set aside.
  • To the soup pot, add in the vegetable broth, tomatoes, cannellini beans, parmesan, anchovy paste, oregano, bay leaf, and crushed red pepper.
  • Partially cover the pot and simmer for 25-30 minutes, stirring every 5 minutes. Turn the heat down to medium-low if needed. (If the soup base starts to thicken too much, feel free to add in 1-3 cups of water.)
  • Add in the chopped kale and toasted bread pieces. Stir well and simmer another 5 minutes, until the bread disintegrates into the broth. The texture should be thick like a stew. Taste, then salt and pepper as needed. Serve warm.

As part of my pursuit of a healthier lifestyle, I am always looking for new ways to use beans. This recipe looks like it would hit the mark rather well but still taste lush. It was originally printed in the January 2008 copy of the BBC Good Food Magazine. The recipe says it can be frozen.

2 tablespoons olive oil, plus extra
olive oil, to serve
1 stick celery, chopped
1 onion, chopped
1 large carrot, chopped
1 1/4 pints vegetable stock
1 (15 ounce) can cannellini beans, drained
1 (15 ounce) can borlotti beans, drained
1 sprig fresh rosemary
1 sprig fresh thyme
1 bay leaf
5 ounces cooked ham, shredded
8 slices bacon, cooked crispy

Steps:

  • Heat the oil in a large pan, then add the chopped vegetables and some salt and pepper. Cook very gently for 10 minutes until softened but not colored.
  • Add the stock, beans, rosemary, thyme and bay leaf. Bring to the boil, then simmer for 10 minutes.
  • Lift out the herbs, then using a stick blender, whizz to a roughly chunky but creamy soup.
  • Stir in the ham and bring to a simmer.
  • Serve garnished with a few crisp slices of bacon and a swirl of olive oil.

2 large Shallots (- peeled & small dice (about 1 1/2 cup))
3 medium Carrot (- peeled & small dice (about 3/4 cup))
3 medium Celery (- small dice (about 3/4 cup))
4 small cloves Garlic (- peeled & minced (SEE NOTES))
¼ tsp crushed Red Pepper Flakes (- more or less, to taste)
¾ tsp Kosher Salt (, plus more to taste)
heaping 1/4 tsp Ground Black Pepper (, plus more to taste)
½ cup White Wine
4 Cups Reduced sodium Chicken Stock (- (can substitute vegetable stock))
2 (14.5 oz) cans Cannellini Beans or Great Northern Beans (- UNDRAINED (SEE NOTES) )
2 sprigs fresh Rosemary
1 Bay leaf
1 Parmesan Cheese Rind
¼ - ½ Cup Heavy Cream (- (you can substitute Half and Half))
1 TBS fresh Parsley leaves (- chopped, or more for serving)
½ Cup Parmigiano Reggiano (, plus more for serving)

Steps:

  • Cook bacon: Place a large stock pot over medium heat and add bacon. Cook until bacon is crisp and cooked through. Use a slotted spoon to remove bacon to a paper towel lined plate, leaving bacon drippings in pan. Set aside.
  • Remove bacon - leave fat: You want about 1 tablespoon of bacon drippings in the pot, if you do not have enough fat, add extra virgin olive oil to pan until you have about 1 tablespoon of liquid (just eyeball this).
  • Saute vegetables: Increase heat to medium high. Add shallots, carrot, and celery to pot. Cook, stirring frequently until softened, about 3 minutes. Add garlic and crushed red pepper flakes, salt and pepper; cook until aromatic, 30 seconds - 1 minute.
  • Deglaze the pan: Add white wine to deglaze pan, scraping up brown bits from the bottom of the pan. Cook until wine is reduced to 2 tablespoon, about 3-4 minutes.
  • Add liquid, beans + herbs: Add the chicken stock, beans with their liquid, rosemary sprigs, bay leaf and parmesan rind (if using).
  • Boil, then simmer: Increase heat to high and bring soup to a boil. Immediately reduce heat to a gentle simmer. Cover and simmer for 15-18 minutes.
  • Add bacon, cream, parsley + parmesan: Use tongs to remove the rosemary sprigs and bay leaf. (I leave in the parmesan rind, but you can remove and discard it.) Add in the bacon, 1/4 cup of cream, chopped parsley leaves and grated parmesan. Taste and adjust for seasoning. Taste the soup, add more cream for a richer taste and texture.
  • Optional To Thicken Soup: (You can serve the soup as is for a brothy consistency, or you can thicken the soup with one of the two methods below.) For an ultra creamy, bisque-like texture, puree the entire soup. 1. Use an Immersion blender to blend some of the soup until desired consistency is reached. Or, use a potato masher to mash some of the beans. Blend about 1-2 cups of the soup for a slightly creamy yet rustic texture.2. Stand Mixer: Remove 1-2 cups of the soup to a stand mixer. Puree the soup and then add the mixture back to the pot. , add back in removed beans.
  • To serve: Ladle soup into serving bowls. Garnish with more grated parmesan cheese and fresh herbs. Drizzle with a bit of good-quality extra virgin olive oil for a flavorful finish. Serve and enjoy!

1 large onion, chopped
3 garlic cloves, minced
1 potato, peeled and cubed
2 leeks, roughly chopped
1 (14 ounce) can cannellini beans
5 cups vegetable stock
1/2 head savoy cabbage, shredded
fresh flat leaf parsley
parmesan cheese, for sprinkling on top

Steps:

  • In a large soup pot heat oil and stir in Garlic, Onion, Leeks and potato. Cook for 4-5 Minutes.
  • Add in Vegetable Stock. Cover and simmer for 15 minutes.
  • Add in Savoy Cabbage and undrained can of Beans. Cook for 10 minutes.
  • Using a food processor or blender, puree about 1/3 of soup, then add it back to pot. Add parsley.
  • Cook for an additional 5 minutes to heat through. Serve with some freshly grated parmesan cheese on top.
