Ground turkey is a lower-fat alternative to beef chuck, and kidney beans-loaded with vitamin C and omega-3s-are an especially nutritious option. This one-pot dish has two other comfort-food essentials going for it: a warm temperature and a hearty makeup.

2 tablespoons extra-virgin olive oil
1 onion, finely diced
1 green bell pepper, seeded and diced
2 chipotle peppers in adobo, minced, plus 2 tsp. sauce
1 pound dark ground turkey meat
1 28-oz. can diced tomatoes
1 15-oz. can kidney beans, drained and rinsed
Coarse salt
1 avocado, peeled and sliced
1 lime, cut into wedges
1 small red onion, diced
1/2 cup grated sharp cheddar (1.5 oz.)
Fresh cilantro sprigs

Steps:

  • Heat oil in a medium pot over medium heat. Saute onion and bell pepper until tender, 6 to 8 minutes. Add chipotle and adobo sauce and cook for 1 minute. Add turkey, breaking it up with the back of a spoon, and cook until no longer pink, about 3 minutes. Add tomatoes with juices and beans.
  • Bring to a boil. Reduce heat and simmer, stirring occasionally, until slightly thickened, about 30 minutes (add water to adjust consistency). Season with salt and serve alongside garnish.

2 pounds lean ground turkey
1 large onion, chopped
2 celery ribs, chopped
4 garlic cloves, minced
2 cans (16 ounces each) kidney beans, rinsed and drained
6 cans (5-1/2 ounces each) reduced-sodium V8 juice
1 cup reduced-sodium beef broth
1 can (6 ounces) tomato paste
3 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes
2 bay leaves

Steps:

  • In a Dutch oven, cook the turkey, onion and celery over medium heat or until the meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the remaining ingredients. Bring to a boil., Reduce heat; simmer, uncovered, for 15 minutes to allow flavors to blend. Discard bay leaves.

8 garlic cloves, chopped finely
1/2 large onion, chopped (red or spanish)
3 -5 fresh jalapenos, seeded and chopped finely (keep seeds for extra hotness)
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1 bunch fresh cilantro, chopped
2 (1 lb) packages ground turkey, browned
3 (6 ounce) cans kidney beans (use whatever beans you like)
0.75 (6 ounce) can black olives
10 tomatoes, on the vine chopped roughly
8 plum tomatoes, chopped roughly
3 (28 ounce) cans crushed tomatoes
0.5 (6 ounce) can corn (optional) or 1/2 cup frozen corn (optional)
1 tablespoon chili powder (only to start, add more if needed)
1 tablespoon cumin (only to start, add more if needed)
salt and pepper
sour cream (optional)
cheddar cheese, grated (optional)

Steps:

  • In soup pot, heat olive oil over over low heat. Add the onion, garlic, and ½ of the cilantro and cook, stirring all the time, for about 6 minutes.
  • In the meantime brown the turkey on the stove. Set aside.
  • Add all the tomatoes, chili powder, and cumin. Bring to a boil.
  • Add turkey, peppers, olives, and corn and bring back to a boil.
  • Reduce heat to medium-low and add beans and remaining cilantro.
  • Continuing stirring occasionally for 1 hour. Add extra spices, salt, and pepper to taste.
  • * Top with some grated cheddar cheese and dollop of sour cream.

DH and I enjoyed this hearty chili from Norman Kolpas' "The Chili Cookbook." While the recipe calls for masa harina, I think I would omit it next time as the chili really did not need extra thickening and I think it detracted from the flavor just a bit. Also, DH and I ate this chili in a bowl, we did not serve it over rice. It lent itself well to this method. I used baby bellas for the mushrooms. Finally, we sprinked colby jack (I think that was what I had in the fridge) shredded cheese over the top, which I think is a must. Cheddar or a mexican blend of cheeses would also be good.

1 cup dry red wine
3 tablespoons tomato paste
1 tablespoon dried oregano leaves

1/2 teaspoon dried leaf thyme
2 bay leaves
2 teaspoons salt
1 teaspoon fresh ground black pepper

Steps:

  • In a large saucepan, heat oil over medium heat. Add onions, garlic, paprika, chile flakes, cumin and coriander and saute 2 to 3 minutes.
  • Add turkey and mushrooms, increase heat to high and saute until turkey is no longer pink, 7 to 10 minutes, stirring to break meat into rough chunks.
  • Stir in remaining ingredients except masa and steamed rice.
  • Bring to a boil, reduce heat slightly and simmer briskly, stirring occasionally, until mixture is fairly thick but still slightly liquid, about 1 1/4 hours.
  • Sprinkle in masa, stir and simmer until thick, about 15 minutes more.
  • Discard bay leaves.
  • Serve over rice or robust boiled beans.

1 1/2 lbs ground turkey
30 ounces tomato sauce
24 ounces V8 vegetable juice
1/2 cup onion, Chopped
1/2 cup celery, Chopped
1 cup green pepper, Chopped
1 cup mushroom, Chopped
1 tablespoon chili powder
1 small jalapeno, Chopped
14 ounces stewed tomatoes
1/2 cup wild rice, uncooked
2/3 cup brown sugar
14 ounces chili beans
1 ounce chili seasoning mix

Steps:

  • Brown the Ground turkey and drain well.
  • Place all the other ingredients in a slow cooker, then add ground turkey.
  • Cook on low for 6-8 hours or on medium to cook more quickly.
  • This can be frozen for up to 3 months.
