STUFFED ITALIAN MEATLOAF
A personal favorite of mine. I never liked a meatloaf much. so I decided to come up with my own recipe. I hope your family enjoys it as much as mine does.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Thoroughly mix beef, pasta sauce, bread crumbs, onion, ketchup, egg, garlic, oregano, salt, and ground black pepper together using your hands in a large bowl.
- Spread 1/2 the meat mixture into the bottom of a loaf pan. Spread mozzarella cheese over the center of the meat. Spread remaining meat mixture over the cheese, pressing edges of meat together on the sides to seal in the cheese.
- Bake in the preheated oven until meat is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

HEARTY SAUSAGE-STUFFED LOAF

- In a small skillet, cook sausage over medium heat until no longer pink; drain. Unroll dough and pat into a 14x12-in. rectangle. Sprinkle the sausage, cheddar cheese and spinach lengthwise down the center of the dough. Bring edges of dough to the center over filling; pinch seam to seal., Place seam side down on a greased baking sheet. Brush top with butter; sprinkle with Parmesan cheese. Bake at 350° for 20-25 minutes or until golden brown. Serve warm with pizza sauce if desired.

Steps:
- Preheat oven to 400 degrees.
- Process or crumble the bread and combine with the minced vegetables in a large bowl.
- Mix the meat, eggs and seasonings together in a bowl. Knead until thoroughly combined. Add meat mixture to the crumbs/veggie mixture. Combine, but don't over mix.
- Set a wire rack over an 11 x 17 baking pan. Cut a 5 x 11 piece of parchment paper and place it on the rack.
- Form the meat mixture into and elongated loaf on the parchment paper.
- Mix the next 2 ingredients together and baste the loaf--set aside.
- Heat the oil and sauté the onion rings. When soft and golden in places, add water and cook until most of the water evaporates. Garnish the loaf with the onion rings.
- Bake 30 minutes, then sprinkle rosemary needles on top. Continue baking for another 25 minutes. Cool on rack for 15 minutes before serving.
MEAT STUFFED FRENCH LOAVES
These fun sandwiches are great to make ahead and keep in the freezer for a fast meal, or to make hors d'oeuvres for an impromptu get together.

Steps:
- Preheat oven to 400 degrees F.
- Cut off the ends of the bread, and carefully hollow out the center portion.
- In a food processor, make soft crumbs out of the bread that was removed from the middle of the loaf.
- Brown the sausage and ground meat in a skillet over medium heat.
- Add onion, and continue to cook until soft.
- In a bowl, combine the cooked meat and onion, the bread crumbs, grated cheese, the egg, mustard, parsley, fennel, basil, salt and pepper and pepper to taste.
- With a long handled wooden spoon, stuff the hollowed out French bread with the stuffing mixture.
- Place the ends of the bread back in place and secure with small skewers.
- Melt the butter and stir in the garlic, let cook over low heat for about 1 minute.
- Brush the loaf with the butter/garlic mixture and wrap in a piece of aluminium foil, leaving it open at the top, slightly so the top browns.
- Bake until heated through, 15 to 20 minutes.
- Cut into 1 inch slices for hors d'oeuvres, or into 4 larger pieces for main course servings.

- In a bowl, combine ground beef, sausage, stuffing, egg, 3 tablespoons ketchup and 2 tablespoons steak sauce. Mix well., Pat half of the meat mixture into a 9x5-in. loaf pan. Sprinkle with cheddar cheese. Layer with tomato, onion, green pepper, mushrooms, ham if desired and Swiss cheese. Cover with remaining meat mixture; press down firmly to seal. KATE'S HEARTY MEATLOAF
I have made many different meatloaf recipes, but this is the one I will make from now on. This recipe is from Kate Gosselin from " John and Kate plus Eight" . This is a clever way to sneak vegetables onto picky eaters plates. It seems like alot of vegetables, but if you use the food processor on pulse to shred the vegetables finely without pureeing them, they cook down to nothing. What you have is a moist, flavorful meatloaf. I have one of the world's most pickiest eaters and even he ate it and said it was very good.

- Use a food processor on pulse to finely chop the celery, onion,green pepper, and carrots until finey chopped or shredded. Mix all ingredients in a large mixing bowl and divide equally into two separate meat loaves. Add a squirt of ketchup to the top of each in a zig- zaggy design. Cover with foil and bake at 350 degrees for about an hour (depending on oven) or until bubbly and center is no longer pink. During the last 15 minutes of cooking, remove the foil covering and finish baking uncovered.
