SPLIT PEA SOUP
This customizable recipe for classic split pea soup allows you to make it vegetarian or not with equally delicious results. Meat eaters can get that classic smoky flavor by adding bacon or ham hock, while vegetarians can reach for the smoked paprika. Half the split peas are added part way through cooking, which adds texture to each cozy, hearty spoonful.

Steps:
- If using bacon: In a large pot or Dutch oven over medium heat, cook the bacon until crisp, 12 to 13 minutes. Transfer the bacon to a plate lined with a paper towel. Once cool, crumble and set aside for garnish. If using ham hock: In a large pot or Dutch oven over medium-high heat, heat the olive oil, then brown the ham hock until golden, about 6 minutes. If making the soup vegetarian: In a large pot or Dutch oven over medium heat, heat the olive oil.
- Add the onion, leeks and garlic and season generously with salt and pepper. Cook over medium heat, stirring occasionally, until tender, about 5 to 8 minutes. (If the vegetables seem dry, add a little olive oil.) Stir in the carrots, paprika (if using), half the split peas, thyme and 8 cups stock or water. Bring to a boil, then reduce heat and simmer, partly covered, stirring occasionally, for about 45 minutes until peas are tender.
- Mash the soup coarsely with a potato masher or give it a few quick blitzes with an immersion blender (watch out for the thyme sprigs). If you'd prefer a smoother soup, blitz until nearly smooth. Add the remaining 1/2 pound split peas and simmer about 1 hour, or until the peas are soft. If at any point the soup looks too thick, add more stock or water; if it looks too thin, remove the lid during the second simmer until it thickens. If using ham hocks, remove any meat from the bone, cut it into small cubes and stir into the soup. Season soup to taste with salt and pepper. Serve with crumbled bacon, if using, and lemon wedges.

Steps:
- Melt 3 Tbsp of butter in a stock pot and then add the carrots, onion, and celery and cook for 3 minutes. Next, add the garlic, parsley, and black pepper and cook for 1 more minute. (This step adds a nice sweetness to the vegetables, but if you're making your soup in a slow cooker, just dump the ingredients into the cooker and skip sautéing the vegetables.)
- Add the ham bone, split peas, and water to the pot and stir to evenly combine the vegetables and split peas. Cook the soup at a simmer for 2-2½ hours. Stir the soup periodically and scrape the bottom of the pot to prevent burning. The soup can also be cooked in a slow cooker on high heat for 4-5 hours, or on low heat for 8-10 hours. Midway through your cooking time, add the potatoes to the pot so that they don't become too soft. The soup is done when the split peas are soft and breaking apart and the ham is falling off the bone.
- The last step is to remove the bone from the pot and any gristle that may have fallen off of it. Stir in 2 C of diced ham, bring back up to a simmer, and then remove the soup from the heat. Serve immediately. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
~ HEARTY SPLIT PEA, HAM & LEEK SOUP ~
It's soup weather, my favorite time of the year. I used what I had on hand to develop this tasty soup. I love peas and I love this soup...the mild flavor of the leeks will not overpower the other wonderful flavors. Soup will become thicker as it cools as with most soups that include beans or peas. Your house will smell divine as...

JUDY'S HEARTY SPLIT PEA AND HAM SOUP
This is my mom's recipe that she has been making since I was a kid. My husband never liked pea soup until he tried this one! My mom always makes it without the ham bone and just uses diced ham, but if you have bone in ham, you could put that in the soup while it's cooking. This hearty soup gets even tastier and thicker the next day when reheated. Goes great with crusty bread and butter!

- Set the crockpot on high and then layer the leeks, onion and potatoes into the bottom of the pot. Then add the ham bone, split peas, garlic, thyme and bay leaves. Pour the chicken broth and water on top of everything.
- Let this cook on high for 4-6 hours, or until the peas disintegrate into the broth and the potatoes are tender. Use a fork to remove and shred any remaining meat from the ham bone. Then remove the bone from the soup. Remove the bay leaves as well and then stir the soup.
- Season with salt and pepper to taste. At this point, you can adjust the heat to a lower setting. I switched from high to low after about 4 hours and then kept the soup simmering on low for another couple hours and allowed it to thicken a bit while I waited until dinnertime.

- In a large soup pot, saute the onions over medium heat in olive oil until translucent (about 4-5 minutes) add the chopped garlic and cook another minute (being careful to not let it get too dark). Add the peas, hocks, carrots, and celery.
- Tie the parsley and bay leaf together with kitchen string. Add the herb bundle, stock, paprika, and salt & pepper to taste. Bring to a boil over high heat. Lower the heat to a simmer; cover and cook (stirring often) 30 minutes. Please note: Split peas absorb lots of liquid as they cook, so check the soup often and add extra stock as needed.
- Stir in the potatoes and cook until soup is thick and peas have almost disintegrated, about 30 minutes more.

- Season with thyme, bay leaves, salt and pepper, then add in split peas, ham hock and 1.5 litres of stock. Bring to boil, then cover and reduce to a simmer for 1.5 hours, or until peas are soft. - Remove the ham hock from the pot and onto a chopping board. Shred the ham off the bone and into bite sized pieces with a fork. Add the meat back into the soup and discard the bones and skin.

- Since the split peas are quite hard it's best to soak them overnight. First, wash your split peas in a strainer, then add them to a pot or a large container with a lid. Add enough water so that it covers the split peas generously. Put the lid on and let the peas sit for around 12 hours.

- Slice the leek lengthwise then chop it up. Add the chopped leeks to a bowl of cold water and rinse in a few changes of water until all the grit is gone.
- Place a medium size heavy bottom soup pot on medium flame. Add a lug of olive oil and sauté the cleaned leeks with a pinch of sea salt for about 40 minutes until completely wilted and they start to caramelize.
- Add the vegetable stock to the pot and bring to a simmer. Add in the green peas and cook everything together for a few minutes until the peas are warmed through.
- Using an immersion blender puree the leek soup to your liking. I go for a rustic hearty texture but you do as you please.
