- In a stockpot, heat oil over medium-high heat; saute carrots, onions, celery and green pepper until crisp-tender. Add garlic; cook and stir 1 minute. Stir in remaining ingredients; bring to a boil. , Reduce heat; simmer, covered, until vegetables are tender, 1 to 1-1/2 hours. Remove bay leaf.

- In a half-pint glass container, layer the first 7 ingredients in the order listed; seal tightly. Place the pasta in a 1-pint resealable jar; seal. Yield: 1 batch (3 cups). , To prepare soup: Place water in a Dutch oven; stir in soup mix. Bring to a boil. Reduce heat; cover and simmer for 45 minutes. Add chicken, tomatoes and pasta. - 1. Basic Recipe: In a large soup pot combine 3/4 cup Hearty Dry Soup Mix (well rinsed), 6 cups water or vegetable stock, and 4 to 5 cups assorted chopped or shredded vegetables. (Saute vegetables in vegetable oil or butter first, if desired.) Season to taste with tamari or soy sauce, salt, pepper, garlic salt, herbs or your favorite seasonings. Bring to a boil. - Turn the slow cooker to low to allow it to warm whilst gathering your ingredients.
- Saute the onion in olive oil in a small fry pan until lightly browned.
- Add the garlic to the pan and cook for 1 minute.
- Place the browned onion and garlic into the slow cooker.
- Add the stock, carrot, celery, chopped tomatoes, soup mix, and oregano to the slow cooker.
- Season well with salt & pepper. Stir thoroughly
- Cook for 8 hours on low.
- Stir the chopped spinach or silverbeet, and the parsley, through the soup.
- Allow to stand for five minutes before serving.

- Heat a large sauté pan over medium heat and add the oil. When the oil is hot, add the butter. When the butter has melted, add the onion, parsnips, carrots, celery and green beans. Cook, covered, 7-8 minutes, stirring after 3½ minutes. Uncover and add the garlic. Cook an additional 30 seconds. The vegetables should be softened, but still have a slight bite.
- In a large stockpot or Dutch oven, add all remaining ingredients except the garnish ingredients (grated Parmesan and Gruyere cheeses).
- Stir well and bring the mixture to a boil, reduce heat and simmer until vegetables have softened and the mixture has thickened and reduced to your liking. Remove the remaining Parmesan rind and season to taste with salt and pepper.
- Garnish with grated Parmesan or Gruyere and serve with crusty baguette and salad.
- Enjoy!

- Combine all ingredients in a large airtight container.
- Stir to evenly distribute ingredients.
- Label as Hearty Soup Mix.
- Store in a cool, dry place and use within 6 months.
- Shake well before using.
- Makes about 12 1/2 cups of mix.
- Hearty Soup Stock: Put 6 cups of water and 1 1/3 cups of mix in a large kettle or Dutch oven.
- Add 1 1/2 T salt.
- Bring to a boil.
- Cover and simmer 1 to 1 1/2 hours.
- Add 2 carrots, sliced, 1 or 2 stalks celery, chopped, 1 1/2 cups cabbage, shredded, 2 (15 oz) cans of tomato sauce, 1 (24 oz) can vegetable juice cocktail, and if desired 1 lb lean cooked ground beef or leftover cooked beef.
- Simmer 20 more minutes, until vegetables are cooked.
HEARTY OLD-FASHIONED VEGETABLE BEEF SOUP
Steps:
- Gather the ingredients.
- In a large stockpot or Dutch oven , combine the beef shanks, beef stock, onion, pepper, bay leaf, and salt. Cover the pot and bring it to a boil over medium-high heat. Reduce the heat to low, and skim off and discard any foam. Simmer, partially covered, stirring occasionally, for 3 hours, or until the meat is mostly tender.
- Remove the beef shanks from the soup. Skim excess fat from the surface of the soup with a ladle or spoon. Remove the meat from the bones, cut it into small pieces, and add it back to the broth. Add the tomatoes, cabbage, green beans, potatoes, carrots, celery, Worcestershire sauce, and sugar, if using. Continue to simmer for about 45 minutes longer, or until the vegetables and meat are tender. Taste and adjust the seasonings.
- Remove the bay leaf and ladle the soup into bowls. Serve hot and enjoy.

- Note: Be sure to sort through all beans and discard unusable ones.
- DO NOT USE INSTANT RICE.
- **NOTE: For jar gifts: layer beans in the jar then put the plastic bags with the rice and spices on top of them.
- OR.
- **In a small plastic bag, mix red beans, lentils, split peas and navy beans, In another small plastic bag, mix bouillon granules, minced onion, basil leaves, pepper, cumin, garlic powder, ginger and bay leaf.
- In a third small plastic bag, place rice.
- Attach this to the Jar:.

- To prepare, wash beans and place in a 3-quart saucepan with 6 cups water.
- Bring to a boil for 5 minutes.
- Remove from heat.
- Let stand 30 minutes.
- Drain beans and return to pan.
- Ham can be added for those meat eaters.
- Add package of seasonings with 8 cups water.
- Bring to a boil.
- Cover, reduce heat and simmer 45 minutes.
- Add rice and continue simmering until beans and rice are tender: brown rice, 45 minutes; parboiled rice, 25 minutes; long-grain rice, 20 minutes.
