Creamy polenta serves as an excellent canvas for hearty beef chili and garlicky sauteed spinach and mushrooms. If you make the chili in advance, the rest of the dish comes together quickly enough for a weeknight.

2 1/2 cups whole milk
Kosher salt and freshly ground pepper
2/3 cup quick-cooking polenta
4 tablespoons unsalted butter
1/3 cup extra-virgin olive oil
1 clove garlic, smashed and peeled
1 pound cremini mushrooms, quartered or halved
10 cups chopped fresh spinach (from 2 bunches, tough stems removed)
1 tablespoon sherry vinegar
2 cups Easy Beef Chili

Steps:

  • In a pot, bring milk and 2 1/2 cups water to a simmer; season lightly with salt. Whisking constantly, add polenta in a thin stream. Reduce heat to low; cook, whisking occasionally, until polenta is tender and creamy, about 5 minutes. Remove from heat; stir in butter. Season with salt and pepper; cover to keep warm.
  • In a large skillet over medium-high, heat oil and garlic until fragrant, 1 to 2 minutes. Remove and discard garlic; add mushrooms and cook, stirring, until browned, 10 to 12 minutes. Add spinach; season with salt and pepper, and cook until just wilted, 1 to 2 minutes. Add vinegar; cook 30 seconds. Season with salt and pepper.
  • Reheat chili. Serve with vegetables over polenta.

1 pound ground beef
2 celery ribs, finely chopped
1 medium onion, finely chopped
1 small sweet red pepper, finely chopped
2 garlic cloves, minced
1 can (29 ounces) tomato sauce
1 can (15 ounces) crushed tomatoes
1 can (15 ounces) solid-pack pumpkin
1 tablespoon plus 2 teaspoons sugar, divided
1 tablespoon chili powder
1-1/2 teaspoons pumpkin pie spice
1/2 teaspoon plus 3/4 teaspoon salt, divided
1/2 teaspoon pepper
1-1/2 cups 2% milk
1/2 cup heavy whipping cream
1/4 cup butter, cubed
3/4 cup yellow cornmeal
1 can (15 ounces) black beans, rinsed and drained

Steps:

  • In a Dutch oven, cook the first five ingredients over medium heat 8-10 minutes or until beef is no longer pink and vegetables are tender, breaking up beef into crumbles; drain., Stir in tomato sauce, tomatoes, pumpkin, 1 tablespoon sugar, chili powder, pie spice, 1/2 teaspoon salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, 45 minutes, stirring occasionally., Meanwhile, in a large heavy saucepan, bring milk, cream, butter, and remaining sugar and salt to a boil. Reduce heat to a gentle boil; slowly whisk in cornmeal. Cook and stir with a wooden spoon 2-3 minutes or until polenta is thickened and pulls away cleanly from sides of pan (mixture will be very thick)., Pour into a greased 9-in. square baking pan. Let stand until firm, about 30 minutes., Stir beans into chili; heat through. Cut polenta into six pieces. Serve with chili.

1 tablespoon extra virgin olive oil
1 small yellow onion (diced)
1 large sweet potato (cut into 1/2-inch chunks)
2 red bell peppers (diced)
1 green bell pepper (diced)
3 cloves minced garlic (about 1 tablespoon)
2 pounds ground turkey
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 tablespoon chili powder
1 1/2 teaspoons chipotle chili powder
2 teaspoons ground cumin
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 15-ounce can reduced sodium pinto beans (rinsed and drained)
1 15-ounce can pumpkin purée
1 15-ounce can tomato sauce
1 15-ounce can fire-roasted diced tomatoes in their juices
1 1/2 to 2 cups low-sodium chicken broth (or vegetable broth or water)
Sliced jalapeno (avocado, chopped cilantro, red onion, and/or non-dairy plain yogurt, for serving)

Steps:

  • Heat the oil in a Dutch oven or large soup pot over medium heat. Add the onion, sweet potato, red and green bell peppers, and garlic. Sauté for 5 to 7 minutes, until soft.
  • Add the turkey, salt, and pepper, and cook until browned, 5 to 7 minutes, stirring often to break up the chunks.
  • Once the meat is browned, add the chili powder, chipotle chili powder, cumin, cinnamon, and nutmeg. Stir and cook until very fragrant, about 30 seconds.
  • Add the beans, pumpkin, tomato sauce, diced tomatoes in their juices, and 1 cup chicken broth (or water). Bring to a gentle simmer.
  • Let simmer, uncovered, until the chili thickens further, about 30 minutes, stirring every so often so that the chili does not stick to the bottom. If the chili becomes too thick, add additional broth or water to reach your desired consistency.
  • Toward the end of the cooking time, taste, and adjust the seasonings as desired. Add more chipotle chili powder for an extra smoky/spicy kick (be careful; a little goes a long way) and more salt and pepper as needed. Serve hot with desired toppings.

Don't let the pumpkin scare you! You wouldn't know it was there if the cook didn't tell you! The flavors blend nicely and don't overpower one another. This slow cooker chili is heart-smart and tasty too - unless you're like me and top it with a bit of fat-free sour cream and sharp Cheddar cheese. I also squeeze a bit of lime juice into each bowl to add a little zing.

1 tablespoon olive oil
5 cloves garlic, minced
1 medium onion, diced
1 pound lean ground beef
2 (14.5 ounce) cans diced tomatoes
2 (14.5 ounce) cans tomato sauce
1 (15 ounce) can pumpkin puree
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 ½ cups canned corn
1 (4 ounce) can diced green chiles
2 red bell peppers, diced
1 green bell pepper, diced
1 jalapeno pepper, diced, or more to taste
3 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons onion powder
2 bay leaves
1 teaspoon ground coriander
1 teaspoon cayenne pepper
salt to taste
2 limes, cut into wedges

Steps:

  • Heat olive oil over medium-high heat in a skillet. Saute garlic and onion in the hot oil until softened, about 5 minutes. Add ground beef and cook and stir until brown and crumbly, 5 to 7 minutes. Drain and discard fat from the skillet.
  • Place meat mixture into a slow cooker and add diced tomatoes, tomato sauce, pumpkin, kidney beans, black beans, corn, chiles, red bell peppers, green bell pepper, jalapeno, chili powder, cumin, onion powder, bay leaves, coriander, cayenne, and salt. Mix well.
  • Cook chili on High for 2 hours, or on Low for 4 to 6 hours.
  • Serve in bowls and squeeze a lime wedge into each.
