Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

1 pound dry great Northern beans
8 cups water
½ teaspoon salt
1 ham hock
1 cup chopped carrots
½ stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
½ teaspoon ground white pepper

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

Steps:

  • Mix all ingredients in 3- or 4-quart saucepan. Heat to boiling over medium heat.
  • Cook 15 to 20 minutes, stirring occasionally, until onion is tender and soup is slightly thickened.

1 pkg mixed beans (I use HamBeens®)
8 cups water
2 tsp salt
2 large ham hocks
1 large onion, diced
2 cloves garlic, minced or pressed
1 15 oz fire-roasted diced tomatoes
1 tsp chili powder
1/4 tsp crushed red pepper (optional)
2 lemon the juice

Steps:

  • Soak beans in water for a few hours or boil beans for 1 hour in water to soften them. Discard water.
  • Add the beans, fresh water, salt, ham hocks, onions and, garlic to a large pot.
  • Heat on medium-high heat until the soup starts to boil.
  • Reduce heat to low and simmer for 2 to 3 hours.
  • Remove the ham hocks from the soup and let cool. Shred when the hocks are easy enough to handle.
  • Add the tomatoes and chili to the soup and simmer for 30 minutes.
  • Return the shredded ham to the soup and add the lemon juice. Stir to incorporate.

1 tablespoon oil ((olive oil, vegetable oil, canola oil, etc.))
1 1/2 cups onions ((diced, about 1 medium onion))
4 large garlic cloves ((chopped))
2 cups celery ((diced, about 5 ribs of celery))
2 1/2 cups carrots ((diced, about 6 medium carrots))
5 15 oz. cans assorted beans
9 cups water
2 large bay leaves
2 teaspoons dried thyme
2 teaspoons garlic powder
2 teaspoons onion powder
1/2 teaspoon white pepper
1/2 teaspoon black pepper
1/4 teaspoon paprika
2 tablespoons chicken bouillon paste ((adjust to avoid over-salting if using powdered bouillon))
14 ounces ham ((roughly shredded or diced; or 2 large smoked ham hocks))
1/2 cup fresh parsley ((chopped))
1/4-1/2 teaspoon liquid smoke ((optional, to taste: not needed if using smoked ham hocks))

Steps:

  • Heat a Dutch oven (you can also use a thick-bottomed soup pot, but may need to stir more often to prevent burning) over medium heat for about 3 minutes or so, until it's nice and hot. Add the oil and the onions. Cook until the onions begin to turn translucent. Add the garlic and cook for 1-2 minutes.
  • Stir in the chopped celery and carrots, and cook for an additional 5-6 minutes. Add the beans, followed by the water. Increase the heat to high.
  • Add the bay leaves, dried thyme, garlic powder, onion powder, white pepper, black pepper, paprika, and chicken bouillon paste. (If you don't have chicken bouillon paste, simply use chicken stock in place of the water.) Bring to a boil.
  • Stir in the ham. I like to cut it into big shards/shreds for extra texture. (Sarah likes hers cubed and orderly though. I won't judge either way!) If you're using a ham hock instead of ham, you can add it in now.
  • Reduce the heat to medium-low so the soup is at a somewhat energetic simmer--it should always be at a low bubble. Cook for 4-5 hours, stirring periodically. If the soup isn't cooking down, you may want to increase the heat to medium. Every stove is different, so don't just set it and forget it. Periodically check liquid levels.
  • In the last hour of cooking, add the fresh parsley, and cook for another hour. It's done when the beans and carrots are tender, and the soup is thickened. If you used a ham hock, fish out any bones, and chop up any large pieces of meat and skin (keeping the skin is optional) that don't break down during the cooking process before serving.
  • This soup is quite forgiving. If it ends up too salty for your tastes, just add water, and lightly mash some of the beans to release their starchiness and re-thicken the soup. If you are reheating the soup and there is not enough liquid, just add 1-2 cups of water to bring it back to your desired consistency.

2 cups ham (diced cooked)
Optional: 1 ham bone (or ham hock)
1/2 cup onion (chopped)
1 carrot (chopped)
1 or 2 ribs celery (chopped or sliced thinly)
1 bay leaf
1/4 teaspoon black pepper (or to taste)
1 (8-ounce) can tomato sauce
1/2 teaspoon salt (or to taste)

Steps:

  • Gather the ingredients.
  • Bring the water and beans to a boil in a large saucepan or Dutch oven; boil for 2 minutes.
  • Remove the beans from heat, cover, and let stand for 1 hour.
  • Add the ham and ham bone or ham hock to the beans, along with onion, carrot, celery, bay leaf, and pepper. Bring to a boil.
  • Skim any foam from top.
  • Reduce heat, cover, and simmer until beans are tender-about 1 1/2 to 2 hours. If soup is too thick, add a little more water.
  • Take out ham bone or ham hocks from the soup, if using, and place on cutting board.
  • Dice or shred the meat and return it to the soup.
  • Add the tomato sauce and salt, to taste, and simmer for about 15 minutes longer.

1 pound bag pinto beans (rinsed and soaked)
1 meaty ham bone
8 cups water (approx)
3 medium red potatoes .. diced about quarter size (cooked seperate ... add to soup before serving)
4 - 5 medium carrots (cut 1 inch length)
1 med-lrg onion diced
2/3 cup celery diced
2 tbs lousiana hot sauce (optional)
1 heaping tbs sugar (optional)
1/2 teaspoon garlic powder
salt/pepper to taste

Steps:

  • 1. In large soup pot add water and ham bone ... cook until meat can be removed from bone ... when ham is removed from bone add ham back into broth ... add pinto beans and cook on med-high until beans are near tender ... add remaining ingredients (onions, celery, carrots , hot sauce, sugar, garlic powder ,salt/pepper)continue cooking until desired doneness. Add cooked potatoes to soup before serving.
  • 2. Note: you may need to add more water as you go along .. you be the judge of that.

1 (1 lb) bag pinto beans
10 baby carrots, chopped in half
2 stalks celery, chopped
3 garlic cloves, minced
4 tablespoons salt
1 tablespoon pepper
2 smoked ham hocks
1 (8 ounce) can chopped tomatoes
1/4 cup diced onion

Steps:

  • Soak beans overnight in water.
  • Drain and pick out all bad beans or particles.
  • Place beans in a stock pot with 4 cups of water.
  • Add ham hocks and bring to a boil.
  • Let beans and ham hocks boil for about 10 minutes and then turn down heat to medium.
  • Add carrots, garlic, tomatoes, onion and celery.
  • Cook for 4 hours on medium.
  • By this time the ham hocks should be tender enough to take the meat off of the bone.
  • Cut meat into little pieces the size of peas and return meat to soup.
  • Discard bones.
  • Add salt and pepper by measurement or to taste.
  • Cook an additional 30 minutes to an hour to ensure the softness of beans.
  • Enjoy!

The aroma filling the house as these cook will tantalize and smell so delicious that you will hardly be able to wait for the beans to become tender for a taste of these "simply delicious" pintos! My M-i-L was a simple Southern cook... everything was delicious & mostly "no recipe." Just came together because she willed it to be biscuits, cornbread, pintos, greens, corn casserole, oyster dressing, etc. Her pintos were my exposure to HOW GREAT pintos and cornbread could be! I'll admit that SHE did not use tomatoes in her beans... simple food being the key. The tomatoes I owe to the vendors in the Charleston Market with their 15-bean mixes and recipe variations for great pots of beans . A little more labor and time than some dishes, but inexpensive and WELL WORTH the time for a hearty delicious meal. (Prep Time does NOT include slow or quick soak time... only actual work time) Keeps a week plus in refrigerator & freezes well.

24 ounces dried pinto beans, sometimes I use 2 to 1 ratio of pintos to white beans
1 (15 ounce) can diced tomatoes (undrained)
1/2 teaspoon extra spicy Mrs. Dash seasoning mix
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon fresh ground black pepper
1 teaspoon salt (or less if salt is a concern... still delicious)
1 -2 tablespoon dried parsley flakes
1/2 yellow onion, coarsely chopped (or sliced)
1/2 red onion, coarsely chopped (or sliced)

Steps:

  • Sort dry beans removing broken beans and any foreign debris. Rinse the beans.
  • Soak overnight in a large bowl covered by 2-inches of water (slow soak) -or- put in a stock pot covered by 2-inches of water; bring to a boil for 2 minutes; remove from heat and leave covered for 1-hour (quick soak).
  • Drain and rinse the beans. Return to a stock pot covered by 1-inch of water.
  • Add all the remaining ingredients except for the ham bone; stir to mix well.
  • Nestle the ham bone into the bed of beans, cover and bring to a boil.
  • Reduce heat to a low simmer for about 3 hours,occasionally stirring gently in the beans under the hambone -or- until the beans are tender.
  • Carefully lift the ham bone (or hocks) from the soup and place on a board so the lean meat can be cleaned from the bones. Return the lean meat to the soup. Discard the bones.
  • Enjoy with hot cornbread!
  • Freezes well.

6 large carrots, sliced 1/2 inch thick
1 large onion, chopped
6 celery ribs, sliced

CSIPETKE:
1 cup all-purpose flour
1/2 teaspoon salt
1 large egg
1 tablespoon vegetable oil
1/2 cup sour cream, optional

2 teaspoons vinegar

Steps:

  • Wash and sort beans. Soak in cold water overnight; drain. In a large 8-qt. soup kettle, combine the beans, carrots, onions, celery, garlic, meat and paprika. Add enough water to cover ingredients by 2 in. simmer, partly covered, for 2-1/2 hours or until the beans are tender, adding more water as needed. When beans are tender; remove meat to side dish. , To make Csipetke, mix flour, salt, egg and oil into stiff dough; let rest for 30 minutes. Divide into four parts. Flatten each part and pinch off pieces about the size of a cherry pit; roll between fingers and drop into hot soup. Cook 30 minutes. Blend in sour cream if desired. Mix in parsley and vinegar; adjust seasoning. Cut reserved ham into bite-size pieces; stir into soup.

If the soup is too thin, simmer uncovered for a few minutes until it is the right consistency. Taste and add more salt and pepper, if needed. Add tomatoes and green onions. Simmer, uncovered, for 10 more minutes. Serve
