At Christmas, I like to present friends and family with this mix and pure maple syrup. The pancakes are fluffy and fruity.

Number Of Ingredients 10

3 cups all-purpose flour
3 tablespoons sugar
2 tablespoons baking powder
4-1/2 teaspoons ground cinnamon
1 teaspoon salt
ADDITIONAL INGREDIENTS (for each batch):
1 large egg, room temperature
3/4 cup milk
3 tablespoons canola oil
1/4 cup chopped dried apples or cranberries, optional

Steps:

  • Combine the first 5 ingredients. Transfer to a 1-qt. jar with a tight-fitting lid. Cover and store in a cool, dry place for up to 6 months. Yield: 2 batches (3 cups total)., To prepare pancakes: Place 1-1/2 cups mix in a large bowl. In another bowl, whisk egg, milk and oil. Stir in dried fruit if desired. Stir into pancake mix just until moistened. Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles on top begin to pop; cook until second side is golden brown.

One of the gifts I give to my kids, and friend for Christmas is a Breakfast in a Jar, or basket. My newlywed son, and my Daughters, both with children love these, since they are all ready for them to make a quick and good breakfast for the busy Christmas mornings, so they can have the time to enjoy the whole day.

1 cup(s) old fashioned oats
2 cup(s) all purpose flour
1 1/2 cup(s) whole wheat flour
1 cup(s) dry buttermilk powder
1/3 cup(s) sugar
3 tablespoon(s) baking powder
1 tablespoon(s) baking soda
1 teaspoon(s) dried orange peel
1 cup(s) raisins
1 cup(s) sliced almonds, toasted

Steps:

  • Process oats in a food processor util coarsely ground. Add flours, buttermilk powder, sugar, baking powder, a baking soda, and orange peel: process util blended. Transfer dry ingredients to a large bowl. Stir in raisins and almonds. Divide into 2 resealable plastic bags, or pint size canning jars. Give with serving instructions. Yields about 6 1/4 cups of pancake mix.
  • To Serve: Grease and preheat griddle. Combine 1 bag or jar of pancake mix, 1 2/3 cups water, 1 egg, and 3 tablespoons vegetable oil in a medium bowl. Stir just until moistened. For each pancake, pour about 1/4 cup batter onto griddle. Cook until toop of pancake has a few bubbles and bottom is golden brown. Turn with a spatula and cook until remaining side is golden brown. serve warm pancakes with syrup of choice. I like to give a bowl, dish towel, hot pad, and wooden spoon and spatula with the gift.

Number Of Ingredients 8

8 cups all-purpose flour
2 cups granulated sugar
2 cups dry buttermilk
1/2 cup baking powder
2 teaspoons kosher salt
1 teaspoon vanilla extract
2 tablespoons salted butter, plus more for serving
Pancake syrup, warmed, for topping

Steps:

  • For the pancake mix: Whisk together the flour, sugar, dry buttermilk, baking powder and salt in a large bowl. Divide the mix into 8 quart-sized wide mason jars, about 1 1/2 cups of dry pancake mix per jar. Seal and store until ready to use.
  • For finishing and serving: Add 3/4 cup water and 1 teaspoon vanilla extract to a mason jar of pancake mix and shake until completely incorporated.
  • Warm a griddle over medium heat and grease with the butter. Drop in the batter with a 1/4-cup measure and fry the pancakes until golden brown and cooked through, 2 to 3 minutes per side. Serve with softened butter and warm syrup.

1 cup prepared pancake batter (homemade or prepared from a mix)
2 tablespoons maple syrup
2 teaspoons sugar

Steps:

  • Using 2 wide-mouthed mason jars, add 1 tablespoon blueberries to each, followed by 1/4 cup of the batter to each. Top each with 1 tablespoon maple syrup, then another tablespoon blueberries and another 1/4 cup batter. Sprinkle the tops with 1 teaspoon sugar.
  • Microwave the jars one at a time until the mixture is fluffy and puffed over the edge of the jar, about 2 minutes 40 seconds.

  • In a large mixing bowl, combine the flour, milk, sugar, baking powder and soda with a whisk until mix is fully blended.
  • With a shifter, gently shift through the mix a few times to remove any lumps and make sure that it is a smooth and even consistency.

¾ cup milk

Steps:

  • In a quart jar, combine all ingredients in layers, placing flour on bottom, then cinnamon in middle and other ingredients on top. Place seal on jar. Store in a cool, dry place up to 6 months.
  • To make Batter for Cinnamon Pancakes: In a medium bowl, combine milk, egg, vegetable oil. Whisk in 1 1/3 cups prepared Dry Pancake Mix until moistened but still lumpy.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
