1 ¼ cups all-purpose flour
⅓ cup white sugar
⅓ cup dry farina cereal (such as Cream of Wheat®)
¼ cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt

Steps:

  • Combine buttermilk, flour, sugar, farina, oil, egg, vanilla extract, baking powder, baking soda, and salt in a bowl. Beat using an electric mixer on low until just combined.
  • Heat a lightly oiled griddle over medium-low heat. Drop batter by large spoonfuls onto the griddle and cook until middle is set, about 4 minutes. Flip and cook until golden brown on the other side, 3 to 5 minutes. Repeat with remaining batter.

2 ¼ cups rolled oats
2 ½ cups buttermilk
1 ½ cups all-purpose flour
¾ cup whole wheat flour
⅓ cup white sugar
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
¾ teaspoon salt
¾ teaspoon ground cinnamon
3 eggs
¾ cup milk, or more as needed

Steps:

  • Mix the rolled oats and buttermilk together in a large bowl; allow to soak 15 minutes.
  • Whisk the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt together in a separate large bowl.
  • Beat the eggs and milk together in a separate small bowl; mix into the soaked oats. Stir the flour mixture into the oat mixture. If the batter seems dry, add milk about 1 tablespoon at a time until the desired consistency is achieved.
  • Grease a skillet or griddle and place over medium heat. Ladle about 1/2 cup of batter per pancake onto your preheated cooking surface. Cook until the pancake is lightly golden brown, about 2 minutes, flip, and continue cooking to brown other side, another 1-2 minutes.

One of the gifts I give to my kids, and friend for Christmas is a Breakfast in a Jar, or basket. My newlywed son, and my Daughters, both with children love these, since they are all ready for them to make a quick and good breakfast for the busy Christmas mornings, so they can have the time to enjoy the whole day.

1 cup(s) old fashioned oats
2 cup(s) all purpose flour
1 1/2 cup(s) whole wheat flour
1 cup(s) dry buttermilk powder
1/3 cup(s) sugar
3 tablespoon(s) baking powder
1 tablespoon(s) baking soda
1 teaspoon(s) dried orange peel
1 cup(s) raisins
1 cup(s) sliced almonds, toasted

Steps:

  • Process oats in a food processor util coarsely ground. Add flours, buttermilk powder, sugar, baking powder, a baking soda, and orange peel: process util blended. Transfer dry ingredients to a large bowl. Stir in raisins and almonds. Divide into 2 resealable plastic bags, or pint size canning jars. Give with serving instructions. Yields about 6 1/4 cups of pancake mix.
  • To Serve: Grease and preheat griddle. Combine 1 bag or jar of pancake mix, 1 2/3 cups water, 1 egg, and 3 tablespoons vegetable oil in a medium bowl. Stir just until moistened. For each pancake, pour about 1/4 cup batter onto griddle. Cook until toop of pancake has a few bubbles and bottom is golden brown. Turn with a spatula and cook until remaining side is golden brown. serve warm pancakes with syrup of choice. I like to give a bowl, dish towel, hot pad, and wooden spoon and spatula with the gift.

GLUTEN FREE PANCAKE MIX

A wholesome gluten-free pancake mix for everyday use. Customizable, simple, and so delicious you'd never guess they're gluten-free.

1 cup brown rice flour
3/4 cup white rice flour
1 cup GF oat flour
1 cup raw (LIGHT) buckwheat flour
1/4 cup yellow cornmeal
3/4 tsp xanthan gum
1 tsp salt
1 Tbsp baking powder
1/2 Tbsp baking soda
1/4 cup granulated sugar*
1 cup Gluten-Free Pancake Mix
1 large egg
1 Tbsp butter, melted
1 - 1 1/2 cups low-fat buttermilk* ((or non-dairy milk))

Steps:

  • Add all dry ingredients to a bowl and whisk until well combined. You could also sift the mixture if you have one on hand, but do so several times to ensure it's thoroughly mixed.
  • To make pancakes (according to the amounts as original recipe is written // adjust if altering batch size), whisk 1 large egg, 1 cup of buttermilk or milk, and 1 Tbsp melted butter or coconut oil. Then add in 1 cup of mix. If your batter appears too thick (it should stream out of a measuring cup, not glop), add more buttermilk.
  • Let batter rest for 5-10 minutes and preheat griddle to medium heat. Lightly grease surface and add 1/4 cup measurements of the batter. Cook for 3-4 minutes or until bubbles form on top and the edges appear dry, checking around the 2 minute mark to ensure they aren't too brown. Adjust heat as needed.
  • Cook for 1-3 minutes more or until the other side is brown and the pancake feels firm when lightly pressed with a spatula. One batch should yield about 10 pancakes.
  • Serve with butter and honey or syrup. Store leftovers in the freezer. To reheat, simply thaw for 30 seconds in the microwave and then toast in a toaster until warmed through.

1/2 cup whole wheat flour
1 tablespoon sugar

1 egg, lithly beaten
2 cups buttermilk (I used 1 1/4 cup skim milk and 3/4 cup 2% fat milk with 2 tablespoon vinegar and let it rest 5 minut)
2 tablespoons canola oil
1 teaspoon vanilla extract
assorted berries (optional)

Steps:

  • In a bowl, combine the first seven ingredients. In another bowl, combine the egg, buttermilk, oil and vanilla; mix well. Stir into the dry ingredients just until moistened.
  • Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles form on top; cook until the second side is golden brown. Serve with berries if desired.
