These cookies are a delicious and hearty alternative to doughnuts or pastries. Also great to pack in lunches and on trips. Try one with your morning coffee or tea. For a slightly richer treat, use buttermilk in place of the water. Substitute dates for the raisins, if you prefer.

½ cup butter, softened
1 cup peanut butter
1 ⅓ cups packed brown sugar
2 teaspoons vanilla extract
2 eggs
⅓ cup water
1 cup all-purpose flour
1 cup whole wheat flour
2 cups quick cooking oats
½ cup wheat germ
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons baking soda
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two baking sheets or line them with parchment paper.
  • In a large bowl, using an electric mixer, beat together butter, peanut butter, brown sugar, and vanilla until creamy. Beat in eggs and water.
  • Mix together flours, oats, wheat germ, salt, cinnamon, and baking soda. Mix into peanut butter mixture. Stir in raisins or dates (see Cook's Note). Drop by ice cream scoopfuls 2 1/2 inches apart on prepared baking sheets. Flatten slightly.
  • Bake in preheated oven for 18 to 20 minutes. Cool on baking sheet for 2 minutes, then transfer to cooling racks. Store in an airtight container.

1/2 cup whole-wheat flour (spooned and leveled)
1/2 cup all-purpose flour (spooned and leveled)
1 teaspoon baking powder
1/3 cup vegetable oil
2/3 cup packed dark-brown sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 cup rolled oats (not quick-cooking)
1/2 cup dried currants or raisins

Steps:

  • Preheat oven to 350 degrees. In a medium bowl, whisk together flours and baking powder; set aside.
  • In a large bowl, whisk together oil, sugar, egg, and vanilla. Add flour mixture, and stir to combine; mix in oats and currants.
  • Using two tablespoons of dough per cookie, roll into balls; place on two baking sheets lined with parchment paper, 1 1/2 inches apart. Bake until lightly browned, 15 to 17 minutes, rotating sheets halfway through.
  • Cool 5 minutes on sheets, then transfer cookies to a wire rack to cool completely.

1 cup semi-sweet chocolate chips
1 cup butterscotch chips
3/4 cup raisins
1/2 cup pecans, chopped

Steps:

  • In a large mixing bowl, beat butter and brown sugar until creamy. Beat in egg, milk and vanilla; mix until light and fluffy.
  • Stir in oats, flour, baking soda, salt and cinnamon until well blended.
  • Stir in chips, raisins and pecans.
  • Drop by rounded tablespoonfuls 2 inches apart unto ungreased cookie sheets. Bake at 350 for 12-15 minutes or until edges are lightly browned. Cool 2 minutes on cookie sheets. Remove from cookie sheets and cool completely on a wire rack.

1 tsp vanilla extract
1 cup instant oats
1/2 cup whole wheat flour ((or all-purpose flour))
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 cup chocolate chips ((optional))
1/4 cup raisins

Steps:

  • Preheat oven to 350F. Line a baking sheet with parchment paper, foil or silicone baking mat and set aside.
  • In a large bowl, whisk the honey, coconut oil, egg, and vanilla. In a medium bowl whisk, all the dry ingredients then stir them into the wet mixture.

Steps:

  • Cream butter, peanut butter and sugars until light and fluffy.
  • Beat in eggs and vanilla.
  • Combine flour, baking powder, baking soda and salt; blend into creamed mixture.
  • Stir in chocolate chips, cereal, bran, rolled oats and peanuts.
  • Preheat oven at 375 degrees.
  • Form small balls unto greased baking sheets (for chewy cookies leave in a ball, for crispier cookies flatten a bit).
  • Bake in oven for 8 to 10 minutes or until lightly browned.
  • Cool on racks.

  • Step 1: Sweeten the Mix Preheat oven to 350 degrees F. In a mixing bowl cream the butter with the granulated and brown sugars. Add the eggs and stir.   • Step 4: Give It Some Love Put a spoon of batter down on the cookie tray, put the cookie cutter around it and press the dough into the shape (you can flour the cutter to keep it from sticking.) No cookie cutter? No problem! These can be made as traditional round cookies, too. Bake 8 to 10 minutes.

Steps:

  • Preheat oven to 350F. Line a cookie sheet with parchment paper.
  • In a large mixing bowl, mash together your bananas, sunflower seed butter and vanilla.
  • Add your shredded apple, oatmeal, oat flour, hemp seeds, chia seeds and shredded coconut. Mix all the ingredient together.
  • Form 12 cookies and place them on the prepared cookie sheet. They don't spread, so don't worry about putting them close together.
