Steps:
- Preheat the oven to 350 degrees. Place muffin liners in a 12 cup muffin tin.
- To make the oat flour, place 1 1/2 cups rolled oats in a food processor and process until it is very fine. (Note: Do NOT try this with steel cut oats, as they are a very different texture from rolled oats!)
- In a medium bowl, whisk together the oat flour, oats, nutmeg, cinnamon, allspice, baking powder, and kosher salt.
- In another bowl, mix together the milk, egg, maple syrup, and vanilla, then gradually whisk in the oil.
- Mix the wet ingredients into the dry ingredients until smooth. Allow to sit for 10 minutes while the oats re-hydrate.
- Meanwhile, dice the apple. After 10 minutes, gently fold in the apples to the batter. Then use a 1/4 cup measure to spoon the batter into the prepared muffin tin.
- Bake for 20 to 25 minutes until puffed and golden.

Steps:
- Put ground beef, sausage or ground pork, and oats into a mixing bowl.
- Add egg, milk, 1/4 cup tomato sauce or ketchup, salt, pepper, and chopped vegetables to the blender. Pulse to chop vegetables into smaller pieces.
- Add liquid/vegetable mixture to the ground meat and oats. Mix up with your hands. Let sit for about 15 to 30 minutes so the oats can absorb some of the liquid.
- Shape the mixture into a round loaf or put into a bread pan.
- If you are making a free-standing round loaf, cover a baking sheet with foil. Make sure there is a rim on the sheet because your meatloaf may release liquids. You can also use a large cast iron skillet too.
- Bake in a 350-degree oven for 45 minutes. Carefully remove from oven.
- Put the remaining tomato sauce or ketchup on top and bake an additional 15 to 20 minutes.
- Remove from the oven and let stand for about 15 minutes before serving.

- In the bowl of an electric mixer, whisk together the whole wheat flour and yeast. Add the water, oats, dry milk, wheat germ, ground flaxseed, walnuts, oil, molasses, and salt. Mix on medium speed until a wet, shaggy dough forms.
- Turn the mixer off and add the rye flour and 2 cups of the all-purpose flour. Turn the mixer back to medium for 5 minutes. At this point, check the dough. If it is still sticking to the sides of the bowl, add more flour, 1 tablespoon at a time until the dough becomes a cohesive ball and cleans the side of the bowl.
- Grease a large bowl and place the dough in the bowl. Cover with plastic wrap and set in a warm place until doubled in size, about 1 hour.

- In the bowl of a stand mixer or a large mixing bowl combine the warm water, yeast and 1/2 cup of the bread flour to form a smooth batter. Cover the bowl and allow the mixture to rise for 30-60 minutes.
- Warm the milk in the microwave to about 100°F, a little warmer than body temp. Add the milk, honey and salt to the mixing bowl. Add the rolled oats. Add another cup of the bread flour and stir until the batter looks like thick pancake batter. If using a stand mixer, switch to the dough hook.
- With the mixer running, slowly add the remaining bread flour, 1/2 cup at a time, until the dough gathers on the hook and clears the sides of the bowl. Knead the dough for 4-5 minutes. If mixing by hand, add as much of the flour by hand as you can then finish kneading in the remaining flour. If the dough is very sticky, sprinkle in a few more tablespoons of flour as needed.
