This can be a delicious meatless meal, or you can add some browned meat or sausage to the mix before it settles in the crockpot to cook while you are busy. Serve with warm tortillas.

2 cups red potatoes, diced
2 cups frozen green beans
30 ounces canned black beans, drained
29 ounces stewed tomatoes or 29 ounces Ro-Tel tomatoes
16 ounces corn, drained
15 ounces garbanzo beans, drained
24 ounces chicken broth or 24 ounces beef broth
1 cup salsa
salt and pepper
1 tablespoon chili powder

Steps:

  • Combine all ingredients in 5-6 quart crockpot.
  • Cover and cook on low to 8- 9 hours or on high for 4-5 hours.
  • For Vegetarian use the Vegetable broth option.

1-1/2 pounds beef stew meat (1-inch pieces)
1-1/2 cups shredded carrots
1/2 cup chopped onion
1 jalapeno pepper, seeded and minced, optional
1 teaspoon ground cumin
1 teaspoon chili powder
3/4 teaspoon seasoned salt
1/2 teaspoon Italian seasoning
2 cans (10 ounces each) diced tomatoes and green chiles, undrained
2 cups spicy hot V8 juice
1 carton (32 ounces) reduced-sodium beef broth
1 medium zucchini, halved and thinly sliced
2 cups finely shredded cabbage
2 celery ribs, thinly sliced
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 cup small pasta shells
1/4 cup chopped fresh cilantro

Steps:

  • Place first 11 ingredients in a 6- or 7-qt. slow cooker. Cook, covered, on low until meat is tender, 7-9 hours. Stir in zucchini, cabbage, celery, beans and pasta. Cook, covered, on high until vegetables and pasta are tender, 30-45 minutes, stirring occasionally. Stir in cilantro.

With its black beans and corn, this recipe could just as easily have been called Santa Fe Minestrone. But whatever you call it, it is a sensational soup and makes a filling meatless meal. Perfect for cool days and probably even warm ones. The flavor is wonderful and it's so easy to make! This recipe comes fro m BH&G's "Better Than Mom's Slow Cooker Recipes."

2 (15 ounce) cans black beans, rinsed and drained
2 (14 1/2 ounce) cans Mexican-style stewed tomatoes, undrained
1 (15 1/4 ounce) can whole kernel corn, rinsed and drained
1 (14 ounce) cam reduced-sodium chicken broth
2 cups coarsely chopped potatoes (2 medium)
1 cup purchased salsa
1 cup frozen cut green beans
sour cream (optional for garnish)

Steps:

  • Combine all the ingredients except the sour cream in a 3-1/2- or 4-quart slow cooker. Stir everything together.
  • Cover and cook on high-heat setting for 7-9 hours.
  • If desired, top individual servings with sour cream.

This is a recipe that a friend of mine gave me. It's a nice comfort food for a cold winter's night. I use Bush's Chili Magic chili beans for the extra flavor. If you can't find Bush's Chili Magic and instead use a can of regular chili beans, you might have to add some extra chili powder to season.

1 1/2 lbs lean ground beef
1 medium onion
3 (10 3/4 ounce) cans condensed minestrone soup
14 1/2 ounces stewed tomatoes
10 ounces Rotel tomatoes & chilies
16 ounces chili beans (I use Bush's Chili Magic)
1 tablespoon chili powder
1/2 teaspoon black pepper
1 tablespoon brown sugar (optional)

Steps:

  • Finely chop the onion.
  • Brown the ground beef and the onion together.
  • Drain the ground beef/onion mixture on a paper towel.
  • Chop the stewed tomatoes in a food processor.
  • option: you can add the Rotel to the stewed tomatoes in the processor if you would like for the Rotel to be a finer consistency.
  • In a large pot simmer everything together for at least 15 minutes.

1 pound kidney, pink or white beans
4 quarts water or beef stock
3 pounds chuck roast, cut into large pieces
3 (14 1/2 ounces each) cans stewed tomatoes
5 (8 ounces each) cans tomato sauce
4 bay leaves
1 tablespoon sweet basil
1 teaspoon oregano
1/2 teaspoon black pepper
3 teaspoons salt
5 teaspoons sugar
1 1/2 tablespoons garlic powder
1 onion, chopped
2 cups cabbage, chopped
3 cups bell peppers, chopped
2 cups carrots, diced
1 bunch parsley, finely chopped
1/2 pound small elbow macaroni or shells; or spaghetti or fettuccine, broken Into 1-inch lengths

Steps:

  • Rinse the beans in a large soup kettle or saucepan, discarding any beans, skins or stems that float to the top. Drain. Add the water or beef stock, meat, stewed tomatoes (break them up with fingers as you add them), tomato sauce, bay leaves, sweet basil, oregano, black pepper, salt, sugar and garlic powder. Bring to a boil. Cover and keep at a slow boil for 1 hour, or until beans are tender. Add vegetables. Simmer uncovered for 45 minutes or until vegetables are soft. Taste for flavor and adjust seasonings if necessary. Using a large soup spoon or ladle, remove meat from soup. Add the pasta and cook until tender. Cut the meat into bite size pieces then return to soup.

1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
1 can (2 1/4 oz) sliced ripe olives, drained
1 1/4 cups Old El Paso™ Thick 'n Chunky salsa
1 tablespoon chili powder
1/4 teaspoon salt
1 1/2 cups uncooked rotini pasta (4 1/2 oz)
1 bag (6 oz) fresh baby spinach leaves

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. In slow cooker, mix all ingredients except pasta and spinach.
  • Cover; cook on Low heat setting 7 to 9 hours (or on High heat setting 3 hours 30 minutes to 4 hours 30 minutes).

1/2 lb dried cannellini beans, rinsed and picked over (about 1 cup)
1 tablespoon extra virgin olive oil
3 ounces pancetta, cut into 1/4-inch pieces
2 medium celery ribs, cut into 1/4-inch pieces
1 medium carrot, peeled and cut into 1/2-inch pieces
2 small onions, peeled and cut into 1/2-inch pieces
1 medium zucchini, trimmed and cut into 1/2-inch pieces
2 medium garlic cloves, minced
1/2 small head green cabbage, halved, cored, and cut into 1/2-inch pieces
1/8 teaspoon red pepper flakes
8 cups water
2 cups low sodium chicken broth
1 piece parmesan cheese, rind (about 5-inchx2-inch)
1 bay leaf
1 1/2 cups v 8 juice
1/2 cup chopped fresh basil leaf
fresh ground black pepper
grated parmesan cheese, for serving

Steps:

  • Dissolve 1 1/2 tbsp salt in 2 qts. cold water in large bowl. Add beans and soak at room temperature for at least 8 hours and up to 24 hours. Drain and rinse well.
  • Heat oil and pancetta in large Dutch oven over medium-high heat. Cook, stirring occasionally, until pancetta is lightly browned and fat has rendered, 3-5 minutes. Add celery, carrots, onions, and zucchini; cook, stirring frequently, until vegetables are softened and lightly browned, 5-9 minutes. Stir in garlic, cabbage, 1/2 tsp salt and red pepper flakes; continue to cook until cabbage starts to wilt, 1-2 minutes longer. Transfer vegetables to rimmed baking sheet and set aside.
  • Add soaked beans, water, broth, Parmesan rind, and bay leaf to now-empty Dutch oven and bring to boil over high heat. Reduce heat and vigorously simmer, stirring occasionally, until beans are fully tender and liquid begins to thicken, 45-60 minutes.
  • Add reserved vegetables and V8 juice to pot; cook until vegetables are soft, about 15 minutes. Discard bay leaf and Parmesan rind, stir in chopped basil, and season with salt and pepper. Serve with olive oil and grated Parmesan.
