A hearty, flavorful breakfast loaf perfect for those rushed, on-the-go breakfast eaters.

1 cup warm water
3/4 tablespoon active dry yeast
1/4 cup honey
1/2 tablespoon vegetable or canola oil
1/2 teaspoon cinnamon
1/2 tablespoon salt
3/4 cups wheat flour
1 1/2 cups unbleached all-purpose flour
3/4 cup granola (or about 3 Nature Valley™ granola bars, crumbled)
1 handful raisins

Steps:

  • In the bowl of a stand mixer using whisk attachment, mix yeast with the water until yeast is dissolved. Replace whisk attachment with paddle attachment and add in honey, oil and cinnamon.
  • Replace paddle attachment with dough hook. Add flours, granola and raisins and mix until flour is fully incorporated and dough begins to pull from the sides. No kneading is necessary. Pour dough in a lightly-greased large bowl, cover and let rise about 2 hours or until doubled in size.
  • Cover bowl with risen dough lightly with plastic wrap and refrigerate overnight.
  • Take refrigerated dough and shape into an oval using your hands. Place oval-shaped dough in a lightly-greased 8 x 5-inch loaf pan. Cover and let rise about 2 hours or until doubled in size.
  • Preheat oven to 375°F. Once dough has risen, bake on middle rack about 30-40 minutes or until golden brown on top. Allow to cool completely on wire rack before slicing.

This is a super easy granola recipe. It isn't overly sweet and is a real crowd-pleaser. It also makes your house smell fabulous for hours after you bake it. I normally add about 2 Tbsp. wheat germ and a tsp. brewers yeast to my dry ingredients - for nutritional value.

4 cups rolled oats
1/2 teaspoon salt
1 cup almonds (or other nuts, chopped)
1 tablespoon ground cinnamon
2 tablespoons ground flax seeds (optional)
1/3 cup oil (coconut oil works really well)
2/3 cup honey
1 teaspoon vanilla extract

Steps:

  • Heat oven to 300 degrees.
  • Combine oats, nuts, salt, cinnamon and flax in a large bowl and set aside.
  • Combine oil, honey and vanilla in another, smaller bowl.
  • Mix wet ingredients into dry - you may need to use your hands.
  • Then spread the mixture onto two cookie sheets lined with foil or parchment.
  • Bake 10 minutes. Then remove from oven and stir.
  • Bake an additional 10 minutes or until slightly golden.
  • Remove from oven and allow to cool completely.
  • When cooled, transfer into an airtight container for storage.

Number Of Ingredients 10

5 to 5-1/2 cups all-purpose flour, divided
1 cup granola without raisins
2 packages (1/4 ounce each) active dry yeast
2 teaspoons salt
1-1/2 cups water
1 cup plain yogurt
1/2 cup honey
1/4 cup vegetable oil
2 eggs
2 cups whole wheat flour

Steps:

  • In a large bowl, combine 3 cups all-purpose flour, granola, yeast and salt; blend well. In a medium saucepan, combine water, yogurt, honey and oil; heat to 120° to 130°. Add to flour mixture along with eggs; mix on low speed. Stir in whole wheat flour and 1 cup all-purpose flour to form a soft dough. Turn onto a floured surface; knead about 8-10 minutes, adding enough remaining all-purpose flour until dough is smooth and elastic. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Shape into two loaves; place in a greased 9x5-in. loaf pans. Cover and let rise until doubled, about 45 minutes. Bake at 350° for 35-40 minutes. Remove from pans to cool on wore racks.

3 ½ cups all-purpose flour
2 (.25 ounce) packages active dry yeast
1 teaspoon salt
1 ¾ cups fat-free milk
10 tablespoons honey
⅓ cup butter or stick margarine
2 large eggs eggs
2 cups whole wheat flour
1 cup reduced-fat granola cereal without raisins
1 cup rye flour
½ cup cornmeal
½ cup quick-cooking oats
¼ cup slivered almonds, toasted and chopped

Steps:

  • In a large mixing bowl, combine 2 cups all-purpose flour, yeast and salt. In a saucepan, heat the milk, honey and butter to 120 degrees F-130 degrees F. Add to dry ingredients; beat just until moistened. Add eggs; beat until smooth. Stir in whole wheat flour and enough remaining all-purpose flour to form a soft dough (dough will be sticky). Stir in the granola, rye flour, cornmeal, oats and almonds.
  • Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
  • Punch dough down. Turn onto a floured surface. Divide in half; cover and let rest for 10 minutes. Shape each portion into a ball. Place on a greased baking sheet; flatten into 5-in. circles. Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 375 degrees F for 20 minutes; cover with oil. Bake 10 minutes longer or until bread sounds hollow when tapped. Remove to a wire racks.
